I visited Ichinoseki, Iwate Prefecture on business and bought some sake from a local brewery as a souvenir.
The sake rice is Ginotome produced in Iwate Prefecture, and the yeast is Yuko no Moui, an original Iwate Prefecture yeast.
It has a refreshing, crisp taste, with a low sweetness and an impressive acidity. It is not flashy, but it has a deeply nourishing flavor.
Now that I have made the connection, I will have more opportunities to drink Iwate sake.
