Rice: 100% Yamadanishiki It has a sweet rice aroma, and in the mouth it has a nice matte texture and a strong sweetness of rice that is typical of Genmai. The high alcohol content leaves an alcoholic aftertaste.

Nagano Prefecture Special Junmai Nama-shu Bireisui Polishing ratio 59 Alcohol 17%. Rice: 100% Miyamanishiki It is a limited edition sake from the brewery. We were lucky enough to obtain this sake when we visited Nishio Shuzo, a sake brewery located in the village of Okuwa in Kiso. It is dry, but has a good umami flavor and is very tasty.

It has a strong apple taste and is sweet and sour. The aroma is also fruity. Fruity and delicious. The brewery releases a different flavor every year.

Yamanashi Prefecture Kamasa Junmai Polishing ratio 65 Alcohol 15%. I opened a bottle of sake purchased at the Sasaichi Sake Brewery in Yamanashi Prefecture on New Year's Day. It has a full and rich rice flavor. A cloying sensation on the tongue. It gives the impression of being richer than the usual junmai and is delicious.
