It has a strong aroma of koji and a strong sweetness of rice. The head brewer described it as a traditional sake, but it is a gorgeous and delicious sake.

If opened without being well chilled, it spurts up. It has a doburoku flavor, but it is not too sweet and easy to drink. The aftertaste is refreshing and delicious. A hidden gem of a sake.

Rice 100% Koimomiji produced in Hiroshima Prefecture This is a raw nigori sake from Hana-hato, the originator of kijo-zake. It has a very strong sweetness like amazake, but it also has a salty taste, so you can drink it without getting tired of it. The tangy carbonation typical of nama-zake is also pleasant.

We were lucky enough to obtain this sake when we visited Nishio Shuzo, a sake brewery located in the village of Okuwa in Kiso. It is dry, but has a good umami flavor and is very tasty.
