"An Experiment in Sake Evolution"
This is the fifth installment of the "Experiment to Evolve Sake!
A wild taste made with lots of ancient rice 🦁.
A strong nuance of polyphenols with a herbal ✖️ feel, such as Shaoxing wine🌿🍷.
Go to the Mixed Festival at Takanawa Gateway City 🏮.
Drinking outside this time of year is so exciting!
Otter Blue, mindlessly clearer than Muji 🫧 and very easy to drink!
The flavor is subdued, but the mouthfeel is light and easy to drink, just like water!
It has a crispness typical of sake that lingers on the tongue afterwards, somewhat reminiscent of the finest Yoshinogawa.
It would be great with oden or other gentle-flavored Japanese dishes! ❄️🍢
I went to a wine bar before that, but didn't drink a millimeter of wine...
The meat was delicious ^_^
Opened a bottle of the one I received!
It has a strong fizzy feeling with a lot of flavor, which I like a lot 🫧.
It has an unusual smoky top note that is impressive, like life sprouting out of the mist...it has such a fantastic atmosphere 🐉.
It was a sake full of life, perfect for the beginning of spring🌸.
A little bit rare sake!
I think this one was quite sweet... the kind you can enjoy on its own 👀.
The food was delicious, the sake was plentiful, and I'd love to go back!
I had this sake in Kagurazaka, which is rapidly gaining popularity these days.
I have a vague recollection of it, but I think it was fizzy and had a strong umami taste.
All the dishes were so good that I almost forgot about the taste of the alcohol (laughs), but I guess that's how good they tasted without interfering with the meal!
It's a restaurant that serves local cuisine of Sanriku, but it was too cozy... I want to go back!
At a standing bar in Shibuya!
I was curious about this place because of its delicious seafood, but it was really good... I'll be coming back...
The whale and flatfish were fresh and delicious, and the omakase nigiri included sea urchin for only 880 yen for 4 rolls... too good to be true!
The sake was refreshing and didn't interfere with the seafood flavor (I think)!
Hi K😃
Delicious looking nigiri 🍣880 yen per person! Looks like a good place to have a quick drink with a good snack 🤗Tokyo is so nice to have so many good restaurants!
Simple Drunken Whale
It has a fresh melon-like melon aroma with a gorgeous 🍈 sweetness!
I was very drunk at the first restaurant that day, but it was nice to chat with the owner at the second restaurant here!
The bubbly sensation is rampant!
The flavor is milky with some amazake-like nuances. Delicious.
O-roku, I've had it before, but I didn't know it was a Shimane sake until I saw the word Izumo: ✏️
The limited edition Sentori is sold exclusively at Torichataro in Shibuya!
I had an image of Sentori being a bit spicy, but it was very easy to drink with a fresh sweetness with a hint of pear.
I guess modern Sentori is too popular these days, so they write "Classic Sentori" on the bottle........
Last night we went to our second usual restaurant 🏮.
I chose a sake called "Kijoshu"!
Sweetness overflowing! It was fizzy and refreshing 🫧.
The taste was reminiscent of white grape juice!
For snacks, we had our usual oden 🍢.
By the way, the other day was the sake test 😳.
For those of you who took the test, how was your response?
I took the 3rd level, and I'm relieved to say that I managed to exceed the border in my self-scoring... 🪽.
I'm hoping to make it to Level 2 this year, and hopefully Level 1!
Last night we had Mutsu Hachisen!
First time trying the red label 🔥.
The top nose has a refreshing aroma of grapefruit and other citrus fruits.
On the palate, it has a bubbly, effervescent taste and a cool bitterness that reminds me of biting into a lemon peel 🍋🫧.
It has an umami taste, but it is not dull, and it shows its true value even more when paired with food!
It's also a great food wine 🥘✨.
Dessert was a gift of sake cake 🥮!
It is moist, fluffy, and very delicious!
Even after drinking it, I could still taste the sake flavor 🙂 🙂 ✨.
I hope everyone had a great three-day weekend!
I bought my favorite Haneya and enjoyed it carefully at home 🪶.
When I drank it at the store, I thought it was sweet because of its gorgeous aroma and full umami flavor, but when I settled down to savor it carefully, I was surprised to find that it was not that sweet and I felt a pleasant tingling sensation 🫚.
Nevertheless, there is no bitterness at all, and it is easy to drink to the end.
When drinking at home, it's fun to make new discoveries because you can taste it slowly 🕵️♂️✨
K-san, good evening 😆I think drinking at home is more relaxing, but if I were to say the ratio, I would say I drink more outside. But at home you don't have to go home 😁.
Good evening, Jay & Nobby ✨
We always love to see your great posts ☺️
It's nice to have a relaxing drink at home 壟.
I'd love to compare a variety of feathery drinks too 🥂.
I didn't know this was a Hokkaido sake,
Much sweeter and easier to drink! I'm sure you'll enjoy it 😋.
I don't have a picture of it, but I also had a bottle of Kokushi Musou afterwards.
I liked the taste of that one too. I really liked the taste 🫶.
Sake from a rice-producing region is delicious after all!
