They have a modern taste theme. The label also looks like an application icon. I chilled it. The aroma is clean and sweet, and the mouthfeel is lychee-like, but the sweetness is light. The acidity is firm and the astringent aftertaste makes for a light finish. It might be better with seafood or pickles.

Junmai Ginjo of Niida Nature Sake. Chilled. Slightly light sweet aroma of rice. Still delicious, with a gentle sweetness and rich umami that permeates the taste buds. It is more beautiful than junmai genjo-shu, with a moderate sense of maturity and sweetness. At room temperature, the full-bodied sweetness and a slight sense of maturity come out. I prefer it chilled, but it will be different when it is cold.

All Gunma sake, this is Takamusume Shuzo. The brand name is "Kaze no Uta," named after the wind. The aroma is juicy, like melon soda. It has a light mouthfeel due to its firm carbonation and moderate sweetness, with a slight acidity in the background that asserts itself from the mid-palate and disappears quickly with a slightly bitter aftertaste. This is the type of beer that should be served with a meal. Delicious with grilled yellowtail. This "Poem of the Wind" is refreshing, but you should be prepared for the wind giants in Gunma in winter.

It has a magnificent drinking experience, which is typical of a 19% sake, so it is the type to be savored slowly. The owner of the liquor store says that it should be matured in the refrigerator. Let's give it a try.

Nigori sake brewed with red yeast, Jun Daigin. Amazing color. Slightly round and sweet aroma. The juicy sweet and sourness matched with the shwashiness makes it very easy to drink. The lingering aroma is a bit like rice, reminding us again that this is sake. I can't help but feel that by drinking this, I have experienced hanami (flower viewing).

Sake made from Omachi, Okayama, "An". It was unregistered with Sakewa, but is it a new brand? The aroma is not very distinctive. There is no insistence on acidity, and complex umami flavors appear instead, creating an aftertaste. It seems to go well with well-seasoned dishes.

Shitaizumi, I liked the name and wanted to drink it, but it was another series. But it was a different series. It was sold refrigerated, so I chilled it and drank it. It is good when tasted alternately with food. It has a high alcohol content.

The sweetness is rather subdued with a koji flavor, and complex acidity and umami come in around the time of the carbonic acidity. It leaves a slightly astringent taste and has a refreshing aftertaste. It is certainly more like a sword than a junmai sake. Come to think of it, this is the first time I've tasted Shizugen... I'd like to compare them.

The carbonation is strong for an active sake, and a light sweetness with a lactic acid beverage flavor spreads. The acidity is not strong, but it has a nice sharp taste. After drinking it, I think I understand the meaning of the label (my imagination).

Terada Honke's so-called natural sake. Made from rice grown without pesticides or chemical fertilizers. At room temperature. Sweet and sour aroma with rice flavor. Mild sweetness spreads quietly, and the flavor of rice is juicy. The acidity, which is not assertive, complements each of the flavors. The aftertaste is clean and not heavy. It goes well with both well-seasoned and lightly seasoned dishes. Today we had stir-fried beef and salad chicken.

Sake made with CEL24 yeast from Kochi. I drank the fire-aged version before, but this is a draft sake. The aroma is fluffy and tropical. The mouthfeel is sweet, and the juicy acidity that spreads on the tongue is just like a fresh pineapple. The aftertaste is clean, so you can drink it in large gulps. I prefer the taste of nama-shu. Tachiharka rice is said to be delicious as rice rice.

A subtle astringency brings out the complexity of the flavor and the next sip. Compared to this, the Konruri (blue label) tastes more like a white grape. Kameguchidori is apparently made by bottling the sake as it naturally drips from the mash. This is an extravagant method.

Sake made with locally grown sake rice Yumeko and a yeast that produces more malic acid. The aroma is light and gorgeous. It starts with a light sweetness and a mild acidity that fits well on the tongue, followed by an umami taste that is well-balanced and does not betray the image of the mouthfeel. It is appropriate to call it a wine made from rice. It can be enjoyed by cat lovers and non-cat lovers alike.
