Delicious sake! Soft, subtle, complex, very daigingo character. Hints of tropical fruit, cotton candy, apple. Enjoyed with home-cooked Korean BBQ ribs, sirloin steak with a light horseradish sauce, and linguine with butter-fried scallops and garlic.

It is a junmai-shu made from rice, which is the main ingredient. We are particular about the "soil" in which the rice is grown, and use only 100% specially cultivated "Yamada-Nishiki" rice for this sake. This rice and Kyoto's famous "Fushimizu" water are slowly brewed using traditional techniques cultivated over many years. This junmai sake is highly aromatic, and the umami of the rice can be fully appreciated. The 720ml bottle is packaged in a carton.
Medium-bodied. Fire-quenched. It is delicious cold or at room temperature as it is. It tastes great and you will never get tired of drinking it.
Purchased at a liquor store in Kyoto.

Tasted slightly chilled. Nose is soft and round, with melon, licorice/fennel, and lychee. Flavor is mild and soft as well, apple and straw, with a mild and slightly spicy finish. Texture is thin all around but pleasant.
A wonderful drink by itself but I worry it will be overpowered by food other than nigiri or other similar items.

The taste has the flavor of rice. Slight sense of maturity.
The taste is clear and refreshing. It does not have the viscous and heavy feeling when it is matured.
The ginjo aroma also has a sense of maturity.
It seems to be from Fushimi, but does not have the softness of Fushimi's water. Sake with a unique flavor 🍶.

I had it at Yellow Cherry Blossom Store in Fushimi for a drinking contest.
The rice aroma and foretaste are not bad, but there is no aftertaste and no lingering aftertaste at all, so I felt halfway through and would not drink it again. Sorry for being too harsh.

I had this at "Today's Okazu" (that's the name of the restaurant, lol) near Karasuma when I was sightseeing in Kyoto.
It was a refreshing sake, perfect as a food sake in accordance with its fresh aroma and ease of drinking due to its being a draft sake.
I thought it was a very Kyoto-like soft sake and highly recommended for women.
I think it is a must buy next time I visit Kyoto.

This is the only fresh pressed one available now. The liquor store owner said it was the best fresh-squeezed one they had received this year. The taste is a calm type of flavor with no schwash. It had a strong rice flavor.
