This sake is made from junmai ginjo sake made with No. 7 yeast, bottle-fired, and aged in an earthen cellar until autumn.
It is a relatively soft sake with a rounded and well-balanced taste that is typical of autumn sake, and the acidity and bitterness in the aftertaste make it an enjoyable sake.
It's best to enjoy it with Japanese food with gentle flavors, such as grilled fish or tofu 😁.
