Limited quantity of sake cans with original label commemorating the 150th anniversary of the Kobe-Osaka railroad 🍶Took some home on a business trip to Osaka: ☺️ It is said to have a rich aroma like ripe yellow peaches, but maybe my nose is not in good condition and it is a little fruity 😄. It has a clean and refreshing taste that cuts through with a hint of sourness 😋 It has an "alcohol-like" flavor, but is better with dishes with strong flavors, and tonight I had it with sukiyaki!

The standard Kochi sake 🍶. The aroma is moderate, and Kochi has a strong image of dry sake, and this sake is rather mellow and dry, but it has a rounded umami and a soft acidity, so it has a mild taste overall without any chili sensation. It is easy to match with food, and tonight we had it with toriten (chicken tempura) 😄.

The name of the sake comes from the "Kintai Bridge", a five-linked warped bridge. The moe yellow arched design in the background of the label is probably an image of this bridge😌. The sake has a light, soft-water quality 🍶 with a good balance of fine umami and soft acidity, and a slightly dry finish that makes it easy to drink 😋.

The rice used is Sakonishiki and Gohyakumangoku from Okuizumo, 14% low al Shimane sake. It is one of the sake that I have wanted to try for a long time 😁. The aroma is subdued, the mouthfeel is light and smooth, and it goes down smoothly, with a refreshing acidity, the umami of the rice, and an astringent taste that allows you to enjoy the gradation of flavors 😋. We served it cold, but the change in temperature range will give it a more drinkable feel. ‼️We served it with cheese and pork kimchi. ☺️

It is a limited edition of Kamo Kanehide version of Yamatoya Shuho's original label. I have a weakness for gorgeous labels and "limited editions" (^_^.) It is made from 100% Hachitan-Nishiki sake rice produced in Hiroshima Prefecture, and is a once-fired product. The top aroma is slightly cool and refreshing, and the overall flavor is based on a soft acidity, making it light and refreshing to drink during this still-hot season. The aftertaste is light with a light acidity and a touch of astringency, but it wears off quickly, so it can be drunk on its own or with a meal! Delicious 😋.

Okayama's local sake🍶 that was highly rated on "Fukkuri Biyori" where two YouTubers co-hosted to talk about sake. Unfortunately they broke up, but I remember that it was rated very tasty and I wanted to try it someday ☺️ I was careful to open the bottle, but all I heard was a whiff 😝. The fruity aroma is gorgeous and fruity, more like mango? When you put it in your mouth, a moderate sweetness and umami spreads in your mouth with a gaseous feeling, followed by a juicy aftertaste and a beautiful acidity. It has a nice sharp aftertaste and is easy to drink on its own.

Made with 100% Tokushima rice, this sake features the iconic Naruto sea bream of the Honke Matsuura Sake Brewery on a wine bottle 🍶. It has a subtle sweet aroma, and the mouthfeel has a delicious acidity taste, especially the sharpness of the acidity, combined with a clean aftertaste and a white wine-like structure 😋.

Purchased at a local supermarket during a trip to Kurahashi Town in Kure City. It is a brand not often seen in Hiroshima City (the fourth photo is a spectacular view from a volcano (hiyama) on Kurahashi Island). It is made by one master brewer (Toji Hirata) in almost the same way as 200 years ago, in one and a half months, and only 5,000 bottles are made per bottle, which is very precious. At a glance, the bottle looks like a beer bottle😄. The aroma is fresh and fruity, but when you taste it, it tastes lychee and is refreshingly dry. ☺️ The spiciness and acidity go well together, and it cuts through quickly!

Tottori Sake was available for a little over 1,000 yen at a major online special sale, even though it is a daiginjo. But the production date is 1.5 years ago 😥. After getting myself together, I poured it into a sake cup and was surprised to find a fruity ginjo aroma 😊. It has a refreshing sweetness and acidity on the palate, a low alcohol content and a fairly refreshing feeling, and it has a nice sharpness that went well with fried food as a side dish! The deterioration of the sake quality was not a cause for concern, it was delicious in its own way. ☺️

For my first saké, I chose Tamitsu's "Malic acid" (apple acid) 🍶. True to its name, it is a refreshing sake with a harmony of acidity and umami like an apple liquor 😊. The bottle design looks like a wine bottle. It is very juicy and low alcohol sake that you can easily drink on its own. It will sink into your summery body over the weekend 😁.

This Tottori sake is made from Tottori's original sake rice "Strong" (🌾), which was once cultivated in the Showa period (1926-1989), but was later revived thanks to the efforts of those involved. Rokumaru" refers to the 60% rice polishing ratio. It is characterized by a strong acidity, and has a full-bodied, robust aftertaste! Maybe it would be good to pair it with a strong-flavored entrée 😄.

Purchased at the Hokkaido Umaimono Kan. This one is named "Kita no Katsu" after the land of Hokkaido and the founder, Katsusaburo Usui🍶. It has almost no aroma, but when you drink it, it is a classic flavorful, mellow, strong, delicious, and well-balanced sake with a crisp, mid-palate finish 😊. It seems to go well with sashimi and other seafood!

They are the brewery that won the highest "Champion Sake" at the International Wine Challenge in London. The bottle label evokes a good impression of overall gorgeousness 🍶, and since it is 100% Aizan, expectations are high 😊. The aroma is fruity and white peach-like 🍑, the mouthfeel is soft, the sweetness and umami are well-balanced and gentle, and the moderate gasiness and the acidity unique to the sake's sake yeast aftertaste make it smooth and smooth on the palate! The heat has returned after the typhoon has moved away, and the sake is being drunk with a lot of enthusiasm (^_^...)

This "Senkohana" is an assemblage of "Modern Senkou Mukunin" and "Classic Senkou Mukunin" and is a limited brew for this season. As the soft drink-like bottle suggests, it has a lychee-like aroma and a juicy mouthfeel with a sweet and sour taste and a little bit of a squishy feeling in the mouth! Sake brewed in Japan's northernmost brewery 🍶. It has a light, mellow, refreshing taste with a pleasant aftertaste 😁. It can be enjoyed at a wide range of temperatures, but I think cold sake is the only way to go this time of year! Pairing with strong flavored food and seafood seems to be a good idea. ☺️

It is said to be a junmai ginjo-shu made from 100% "Shizuku Ehime," Ehime Prefecture's first rice suitable for sake brewing, which won the highest gold medal at the Wine Glass Delicious Sake Awards 2020. The aroma is slightly fruity, the mouthfeel is soft and gentle, the umami from the rice is predominant, and the spiciness and bitterness come out in the back of the mouth. My personal impression is that I would rather drink it leisurely as a companion to a meal than by itself 😊.

This "Sakurafukiyuki" is a brand created in the Meiji era, and is more cosy than "Kamo Kanehide" from the same Kinko's brewery 😀. The aroma is subtle, and the fruity sensation flows quickly in the mouth, with a mellow, umami aftertaste. It is a little more classic, and is very typical of Japanese sake 🍶. ☺️

Limited to one bottle per person. Rikuwada" is a rare sake rice cultivated by Mr. Takagi, the chairman of the brewer of "Jyushiyo" and is grown by only a few farmers and in small quantities. Currently, only "Hanayuup" has inherited the rice as a raw material for this junmai sake, and Mr. Takagi provided technical guidance to the brewery. It is a gorgeous sake with a slightly sweet aroma, a refined sake quality like Wasanbon, a good balance with a slight acidity, and a good sharpness 🍶. Tonight we had it with sukiyaki 😁.
