It is snowing intermittently outside, and on a weekend like this, drinking at home in a warm room is the best 😁. The brewery is the originator of Kumamoto yeast, and this is a new brand from the Kumamoto Sake Brewing Research Institute "Koroh". I've never seen Koroh itself 😌. It is a delicious modern low-alcohol sake with a subtle fruity aroma on the top, a gassy feeling with the flavor and freshness of rice, and a refreshing fruity sweet and sour taste that cuts through quickly! It's easy to drink, and even on its own, you can't help but drink more 😋.

I thought "Daisen" was named after the famous mountain Daisen in the Chugoku region, but the correct name is "Oyama" and it is a Yamagata sake 😀 The name comes from the "Daisen" district in the castle town of Tsuruoka City. The aroma is almost imperceptible, and the mouthfeel is smooth and soft, with a clear acidity that cuts through, making it a slightly dry classic. It has a well-balanced taste suitable for a mid-meal drink. ☺️

Maruishi Brewery's zodiac bottle with the impressive concept of "only two hares can catch two rabbits". The print design based on the theme of "snake charmers" from Indian and Arabian street art is also very special 😊. The aroma is modern with a muscat-like fruity sweetness, and a nice, tight gasiness, which is cut off by a fresh acidity along with a sweet flavor 😁. Tonight it was served with ehomaki rolls with grilled conger eel and omelet as the main ingredients 😋.

Purchased at the Straits Observation Museum on Shimanami Kaido when returning home at the end of the year🚗. The rice used is 100% Matsuyama Mitsui from Ehime🌾. The top aroma is of a high quality, with a 🍍-like ginjo aroma, and when you drink it, it is gorgeous and fruity🍍, with a slightly light and refreshing finish that fades out with the mild rice flavor and acidity😋. The finish is a quick snap with the acidity, especially good paired with seafood 😊.

They have kept the alcohol content to 13 degrees even though it is an original sake. It was selected as one of the top ten best sake of the year by Kai of SakeLabo😊. The top aroma is fresh and fruity, and when you drink it, you can feel the tight gas, the juicy and gentle sweetness of muscat, and the rounded acidity afterward makes a clean cut, and the light mouthfeel makes it easy to drink 👍This is a sure repeat 👍.

This is one of the 🍶 brewed in small batches each time by the female toji of a small brewery with a mere 60 koku, and it is delicious warmed up 🍶. I'm a cold sake drinker, but this time I tried it lukewarm 😆. It has a gentle aroma with a hint of sourness, and the taste is based on umami acidity. Overall, the rice acidity is very mild 😁. It went very well with a hot pot using dashi doraku soup stock 😋.

Hiba Bijin Sake Brewery's classic 🍶, located in the northern part of Hiroshima Prefecture. The brewery is the result of a merger of nine breweries. The bottle color gives the impression of a modern fruity sake, but when you sip it, it has a clean, refreshing mouthfeel with a slight sweetness at first, followed by a light spiciness on the palate, making it a little more modern and classic 😁.

Tokusujun ☺️ is brewed using the "Tomizujikomi" brewing method (a method that uses less water than modern brewing methods to make the brew thicker), which was practiced in the Edo period (1603-1868). Hanazake Shuzo has a history of over 120 years in the town of Shobara, in the northern part of the prefecture. I once tasted "Dobu," an active junmai sake with a "beware of spewing" freshness (of course I spewed), and I remember that it had a great rice flavor 😊. Since it was the New Year, we chose a local 🍶 with gold leaf in the shape of cherry petals for good luck 😊. With a view of the illuminated Kurushima Kaikyo Bridge: ☺️ This junmai daiginjo is made with Ehime Sakurahime yeast Type-4 and brewed using the "mizumoto" method from the Muromachi period (1336-1573). The top aroma is slightly fruity, very soft to drink, with gentle acidity, mild sweetness, and a beautiful sharpness without much alcohydrates 😋. We enjoyed it with Matsuyama chicken 🍶 We hope to enjoy a variety of 🍶 next year! Happy New Year, everyone 😊.

The sake we will enjoy at the end of the year is a standard sake brewed by Bajo Sake Brewery, a small sake brewery in Kumano, Aki-gun, Hiroshima Prefecture. It has a light, slightly acidic aroma and goes down the throat smoothly. The sharp rice flavor and the lingering aftertaste of mild acidity characteristic of the sake's original brewing process balance out the overall flavor and make it suitable as a mid-meal drink 😄.

A Junmai Dry Sake representative of Kochi, named after the "Eight Plans for the Boat" written by Ryoma Sakamoto on board a ship. Merry Xmas 🎅❗️I chose a light one after recovering from a weekend cold☺️ This sake is brewed with yeast extracted from cherry blossoms. The aroma is a little floral, the mouthfeel is light, a little sweet and sour, and it's designed to be easy to drink with low alcohol content 😆.
