Mizuhata Spring Salmon Festival (2) Tatomo Junmai Ginjo Awanoshizuku Nama-no-Shizuku Rice: Koshitanrei Rice polishing ratio 55 Alcohol content 16%. Next up was Tatomo. It is a slightly cloudy, medium fruity sake with a hint of spice. It is very drinkable. It is popular at Sake-no-wa. Next time, I would like to drink it carefully at home.

Mizuhata Spring Sake Festival ①. Haneya Kasumizake Junmai Ginjo Namaishu Rice: 100% Gohyakumangoku grown in Toyama Prefecture Rice polishing ratio: 60 Alcohol content: 14%. Tasting event, I went! This is the first one! It is silky and smooth. If it were any more refreshing, it would become a summer sake, so it is just right for a spring limited edition 😊.

Kawanakajima Genmai Special Junmai Hitogochi Shiboritate Unfiltered Nama-shu 720ml Sake rice Hitogochiki Rice polishing ratio 59 Alcohol content: 16%. We opened the bottle that we brought from Ueda at the end of last year. Now let's see how it tastes. Compared to the Oshinshu of the previous day, it is a bit lighter. But I can't say which is better or worse. Stored in the vegetable compartment of the refrigerator at home. The thermometer is 5.7 degrees Celsius right now. The temperature in the refrigerated room above is 1.7 degrees Celsius. The winter sake stored in the vegetable room should be consumed soon and replaced with fire-aged sake.

Hi @Mizuhashi 😀 My favorite 🐢sama and Jikin-sama will only be hi-iru from April 😀. However, we have a lot of nama-sake at home, so we have to keep it in the freezing point cellar somehow 🤣.

Daishinshu Tank-batamzume Junmai Daiginjo Tank Shiboribori Nama 720m Rice used: 100% 2024 contract-grown Hitogochi rice Rice polishing ratio: 49 Alcohol content: 16%. We took this bottle with us last year when we dropped by Hatoya for Iraka Kuro. After that, I was able to fully enjoy the freshness of this bottle at Daigo Kanazawa store, so I put my home stock on standby until now. I cured and opened the bottle, but didn't say a word. It might have been better to open it right after I brought it to the store. But the piquancy has settled down, but the fresh & fruity is still there. Too good 😆. It's an apple-like fruity sensation.

Tateyama Nigori Sake Special Junmai Sake Active Nama Shu 1800ml Rice: Gohyakumangoku, Yamadanishiki Rice polishing ratio 59 Alcohol content 18-19%. A gift from a neighbor. This person said that nigori is not his favorite. Hmm? Bitter? Gone? It hasn't been in the fridge for a long time, and I don't know if the room is unheated or not. I shouldn't give a fresh sake as a gift. I thought I might use it for simmering, but I can't waste a drop of sake, sad nature to drink it 😢. I'll have it hot today 🍶. PS: I had a 720ml of this sake in February. At that time the nigori was swimming like a cloud.

Hi @Mizuhashi 😀 If you don't know how to manage your sake, it's not a good idea to give your raw sake sake to others 🥲. Maybe you just don't know 😅. Worst case scenario, you could use it as a cooking sake, but that would be a waste too 😅...

Shungiku Aizan 50 -Red Diamond- Junmai Daiginjyo Unfiltered Nama-shu 720ml Raw material rice ASK Aizan Polishing ratio 50%. Alcohol content 15 The new year has started. I opened the bottle quietly on the first day, but on the second day, I opened it cheerfully. I really want to have a bottle of this wine, but I have a problem with the refrigerator, so I had to settle for a Yongo bottle 😆. The gorgeous aroma and elegant sweetness are indescribable ☺️ By the way, Kukai will be on sale today and tomorrow. By the way, I wonder if it will fit in my fridge 😓.

Sansen Sakura Junmai Ginjyo "Kitashizuku" 55 straight kumi, unfiltered, raw sake 720ml 100% pure rice Rice polishing ratio 55 Alcohol level: 16%. This was purchased at Daimaru in Sapporo in December. The last bottle was opened. It is modern and fruity. More like a pineapple fruity. It is still delicious 😋. I bought a little too much this winter, even though I have spring sake coming up. And it's no good because when I have a little space available, I go to the liquor store 😓.

Kunoshijin Kuheiji Light Nigori Nama Sake 720ml 100% Yamadanishiki produced in Kurodano-sho Alcohol content 15%. I couldn't go to the liquor store to pick up the bottle because my refrigerator was full 😭I got a call on my cell phone the other week, saying that I was on standby at my Corona Positive home and that I had to keep it until the end of March. I finally went to pick it up on the 30th and opened the bottle that day. Yesterday was the second day and it was shpon and more energetic. It is good that you can always buy it if you make a reservation👍. Sunday lunch at Marutakaya Toyota 🍜.

SENKYU MODERN ZERO SHIKEI NAMAZAKE 1,800ml Rice used: Domaine Sakura, reduced pesticide Yamadanishiki Alcohol content 13%. This is the February issue of the hanpukai. It has been a long time since I have tasted this SENKYO. It has a strong flavor and you may not even notice the low alcohol content unless you are told. The temperature difference between warm and cold this week has been so extreme that I am not sure if it is pollen or a cold. I hope next week will be warmer and more stable 🤣.

Hokuan Okuni Junmai Unfiltered Nama Shu (Unrefined Nama Shu) 278 Rice polishing ratio 59 Alcohol content 16%. This was found in the refrigerator of a liquor store near Hakuba Station. There was no front label, just a three-digit Chinese numeral tag? When I asked the store staff about it, all they said was that it was a limited edition 😅. I opened the bottle while it was still in my memory of the last Beian Daikoku. It still starts with sweetness. However, it has a longer aftertaste than the last one. I searched a lot for this sake on the net, but no hits 😭.

Winter CARP Junmai Unfiltered Nama-shu ORIGARUMI 720ml Rice: Hitogochi from Shinanomachi (90%), Hime no mochi from Shinanomachi (10%) Rice polishing ratio 70%. Alcohol level: 16%. Seimasamune brought from Ueda. We had a feeling that it was going to be a big hit, so we put a pot stand on it and opened the bottle. Yes, the bottle was opened automatically. We had a vessel ready and poured it immediately, so we didn't waste the sake. But, it was very strongly carbonated with a lot of energy. Light sweet, schwishy, chili delicious 😋. Next up is spring carp 😉.

Kagamiyama Junmai Ochigarami Nama Shu Ingredient rice: Sake Musashi Rice polishing ratio 60 Alcohol content: 16%. Both sake and sake were given to me by Harry. While I was wondering when to open the bottle, it was almost the end of March, so I opened the bottle. The first sip was fruity but not light and medium bodied. It's delicious! This will definitely be delicious when it ages. Thank you Harry for the delicious sake 🙇. I will ask my favorite liquor store about Katsuma, seasonal fish, and recommended izakaya information 🫡.

Kaiun Unfiltered Junmai [Akaban Omachi] Nama-shu Rice : Akaban Omachi Rice polishing ratio : 55 Alcohol content : 17 Mizuhata Spring Salmon Festival With three people, a four-pack of sake is gone in no time. After the south was empty, we went back to the store and bought a bottle of Kaiun Yumachi. This one also has a softly delicious flavor of Yumachi! Delicious. Kaiun is consistently delicious. After this, we warmed up at an izakaya and went home in the light of day 🤣.

Minami Junmai Ginjo Unfiltered Nama Sake [Dewa Sanzan Rice used: 100% Dewasan Polishing ratio 50%. Alcohol 17%. At the "Mizuhata Spring Salmon Festival." It gained momentum at the tasting and was purchased at the store. It was a beautiful day, and the cherry blossom viewing without cherry blossoms? State 😆. Fruity but dry! Mizuhata Spring Salmon Festival! The second unveiling of the "Kunisake Exploration: Tateyama" series. Drink comparison set for 500 yen. The first installment, to be honest, I couldn't see the concept and couldn't figure out what they were aiming for. Apparently, they want to make a clear distinction from the current trend of sweet and sour. The second set was a Yamahai Junmai Ginjo. This one is clear and goes well with the coming warmer weather. The brewer was also there, so I told him that I really enjoyed the sake that was on display at the Spring Banquet! I told him that we have the sake and are thinking about how to sell it. I am looking forward to it. I have a feeling that things are about to change 😄.

Mizuhata Spring Salmon Festival Paid tasting of Kachikoma "Kachikoma" sake! Total of 7 kinds of sake from Tokugin to Honjikomi, Nama-zake, etc. Fee: 300 yen per cup Drink all: 2,000 yen Yes, I chose to drink all of them without hesitation. Shinanonishiki Dairokuten Junmai Unfiltered Nama-shu 720ml Rice used: Pesticide-free Koshihikari Rice polishing ratio 91 Alcohol content: 16%. This sake is not polished. However, the yield must be reduced because of the lack of pesticides. Open the bottle flatly without any previous knowledge. A light sweetness spreads first. Well, it is refreshing and delicious😋. I had no idea it was unpolished Koshihikari until I checked the specs. Shinshu sake is very deep 😆.

2025 Spring Evening - Tasting New Sake Three of my friends from Tokyo joined the Toyama Sake Fan Club event. They were very satisfied with the event and stayed until 26:00 on Toyama Night 😄. We asked President Masuda to take a commemorative photo of us since we had come all the way to Toyama, and he graciously agreed. Next time, let's take them to Saseki. By the way, a total of 407 people attended this year's event, many of them from outside the prefecture. My friends and I will be back next year! They said 😆.

2025 Spring Evening - Tasting New Sake Tateyama Daiginjo Competition Entry Class Omachi Junmai Ginjo Sake Not for Sale Aizan Junmai Ginjo Not for Sale This year was the first time for Tateyama Sake Brewery to participate in the competition. I didn't realize that until I was told. This time, there were some not-for-sale items on display. For some reason, many people didn't get a chance to taste it, but those who did, were surprised to find out what it was. It's so delicious! They said, "What's this? I really want this kind of sake to be made commercially available.
