Mikotsuru Junmai Dry Ori-Garami Unfiltered Nama-Shu 720ml Alcohol content 16%. Koji rice・Miyamanishiki Kake rice・General rice Polishing ratio: Koji rice - 60%, Kake rice - 70%. Mikotsuru's new sake! I found it on Saturday and opened the bottle! Soft and fruity! Already in the realm of perfection. A light bitterness lingers at the end. I expected it to be more bouncy, but it was different in a good way. Miko-chan, it looks like there is a rush of new sake one after another from now on. I am looking forward to seeing how it is finished 😊.

Hello @Mizuhashi-san 😀 I was wondering how dry the dry orikagarami by Mikotsuru was, but I was relieved to hear your comment that even my family who likes sweet sake can enjoy it 🤣. We are planning to drink it with Tsuru and Kame at New Year's!

Shinanotsuru Junmai Ginjo Unfiltered Nama-shu Hatsu Shibori Rice: Miyamanishiki Rice polishing ratio: 60 Alcohol content: 16%. Shinanotsuru Hatsushiborisu was served on Saturday! The first mouthfeel is soft and fruity. The first mouthfeel is soft and fruity, followed by chiri-chiri-chiri-chiri-chiri-chiri! It is wildly energetic 😃. Saturday is a day trip to Bessho Onsen hot spring from 10:00am ♨️ for a whopping 500 yen. Lunch was at Kusabue, and we didn't have to wait in line because of the cold weather 😄.

Toyokaki Dry Special Junmai Shu Shiboritate Unfiltered Nama Shu Rice: Hitogokochi from Nagano Prefecture Rice polishing ratio 59 Alcohol content: 15%. We were recommended this sake at Ikusakaya on Saturday. He said, "This year's sake is very sharp and delicious. It is true that there are fewer bottles on the shelves, and the cost is good. I immediately opened the bottle on Sunday. A light sip. Fruity aroma 😃The first sip is definitely not sweet. And it goes down smoothly. Like yesterday's Tsukiyoshino red, the dry type of wine is very good to drink! My refrigerator is completely over capacity💦. I decided to store it in the hallway, but it overflowed as if it had been unplugged 😭.

Good morning, Jay & Nobby 😃. I was not sure about Toyoga's new sake, but I followed the store's advice and it was the right choice 👍I highly recommend it, it has a nice aroma and a nice sharp taste 😅😅The two cooler boxes in the hallway are about to be filled with empty seats.

Our hallway is about the same temperature as outside so I think it will be ok since the temperature will be low at the end of the year and the beginning of the new year 😉 I will put in a cooler on days with high temperatures 💦 I have a lot to drink this time of year and it's really annoying 🤣.

Tsukiyoshino Red Unfiltered Nama Sake 100% Hitogochiki produced in Ueda City, Nagano Prefecture Rice polishing ratio: 65 Alcohol content: 17%. Here we are in Ueda! This time we visited the brewery store of Wakabayashi Brewery ✌️ The new Hana sake was sold out, but I bought a bottle of the new Aka sake and opened it as soon as I got home. It's not as dry as it sounds, but it's good. I can see why it is popular at izakaya (Japanese style pubs). I also brought along a bottle of Hi-iri Red and Sakura Nama Sake, so I am looking forward to it 😊.

Yamashiroya WABI R5BY 720ml Rice used: Gohyakumangoku 50% polished rice, Ipponshime 60% polished rice Alcohol percentage: 15% (original) Active light nigori. It was made under the concept of watching fireworks in summer. I drink summer sake in winter😅I went along with it because of the free shipping. It is still shuwashi and dry. Today's Tateyama mountain range, all at once white. It's getting colder: ❄️

Honkin Yamahai Junmai Miyamanishiki 720ml Ingredient rice: Miyamanishiki (100% Miyamanishiki produced in Suwa, Shinshu, Japan) Alcohol content: 14%. Rice polishing ratio: 59 This is the sake we had when we visited the brewery on 11/24. Love to natural lactic acid. ❤️ is cool. Crisp, sweet and sour, delicious 😋.

Shinomine Super Active Sake Doburoku Nama Sake 12% alc. The first day's supernatant was clear and crisp like a green apple, but on the second day it started to thicken around the middle, and at the end it was as thick as porridge, and I was full. I think I had it last year, but was it like this? By the way, the fourth picture is from last month when I went to the brewery for Iraka white. We have two more chances this month. We also visited Farm Ichimaru, but it was closed on Saturday. Not sure if they have it in stock now. Thinking about going back this weekend😅. ↑Irakaishiro, when I looked at the reservation form on line, it was sold out (...;). I'm glad I didn't go on Saturday 💦.

Ding Bangai Junmai Ginjyo Oorigarami Rice polishing ratio 55 Alcohol 16%. I opened the bottle of Ding stored in the refrigerator at home. Fresh, juicy, and soft, Ding is a definite 😄. Or rather, I am sure it is Ueda 😊.

2024BY New Sake] Takeba Shiboritate Nama-nazake - 720ml Rice polishing ratio 67 Alcohol content 18 After a Chinese lunch at Shoryu in Nanao on Sunday, we found Takeba's new sake at Super Dontaku! I went home and opened the bottle. It was milder than usual and more like Shinshu Kamerei. I found out that it was brewed with deep seawater from Noto Town because the pump was damaged in the torrential rain disaster in September. Earthquakes and torrential rains, I wonder if there is no God. The sake was so good that I drank too much even though it was Sunday night💦.

Masuda Shuzoten, Manjusen No.1 Shibori Alcohol content 19%. The last bottles in the hanpukai were Katsuma and this one. We opened the bottle immediately. I served it with Kabako crab and yellowtail shabu-shabu. The nigorosity is said to be different for each bottle. Sake from a brewery close to the sea goes well with seafood from Toyama Bay.

FUMIKIKIKU SAKE Brewery "HANEYA" Paid Tasting (7) FUMIKIKIKU SAKE Brewery, Reconstruction 2024 Bottle, 15-year aged sake The last one was a bottle of Fukko 2024 created by Kaede Ito, a painter from Takaoka City, Toyama Prefecture, and produced by the Toyama Sake Brewers Association. It looks like a beautifully aged old sake. The taste is clear and refreshing. I was surprised at the gap. When I entered the store, the first two customers had just finished and I was able to start tasting slowly. So I gave up my place to someone who came later and went home carrying four four-goupe bottles (two from Hanpukai and two from Haneya) in my backpack. The snow in the Tateyama mountain range is gradually getting lower 🥶.

FUMIKIKIKU SAKE Brewery "HANEYA" Paid Tasting (6) Haneya Junmai Ginjyo Nama Genjyo Aizan Next was Aizan. I had the September lot at home, but my impression was not so good. The November batch was quite tasty, with a moderate sweetness and umami! I was surprised. I attended the tasting while picking up the last of the hanpukai and ended up with Prism and Aizan in my backpack😅.

FUMIKIKIKU SAKE Brewery "HANEYA" Paid Tasting (2) Haneya Moonlight Beauty, Omachi No. 10 yeast brewed Nama-shu We will taste them in order. Next was Omachi. I felt this sake was weak, perhaps due to the lingering aftertaste of the sparkling sake. If I had drunk it by itself, I am sure I would have felt its delicacy. Before entering the restaurant, we had miso ramen for lunch at Tsukushi. Last week in Sapporo, we had to give up Sumire because of the long line.

FUMIKIKIKU SAKE Brewery "HANEYA" Paid Tasting 1) Haneya Junmai Daiginjo Sparkling Nama-shu I went to the tasting by Mizuhata. Just after opening the bottle with a bottle opener. It's dangerous at home unless it's in a bowl because it overflows with shwash. ⚠️ Good for Christmas🎄. It is gas-filled, so once the bubbles are gone, it's solid sake.

Sawanohana Beau Michelle Snow Fantasy Rice:Hitogochiki Rice polishing ratio: 60 Alcohol content: 9%. It was brought by Mr. Hara last month and kept in the refrigerator. When we put it on the side, it spilled a little (...) We forgot to ferment it in the bottle. I opened and closed it a couple of times and pukupu bubbles bubbles bubbles bubbles ^ ^. It's good! My wife says this is sake. It was great as an aperitif😃.

Banshu Ichiken Shippo Junmai Nama-zake 720ml Rice used: "Hyogo-Kitanishiki" produced in Hyogo Prefecture Rice polishing ratio 65 Alcohol content: 14%. We brought this together with Tasake's Tokusyu Junsei. There was only one bottle of Oorigara-mi, so we decided to go with Sumi-zake. The first day, it was mildly sweet but had a slight seme smell, which became stronger on the second day but was acceptable enough.

Taisetsukei Shiboritate Shibobatame Special Junmai Unfiltered Nama-shu 720ml Rice:Hitogochiki(Nagano pref.) Rice polishing ratio: 59 Alcohol content: 17 Last week, we went looking for Shinshu Kamerei, but it was not in the store. I brought Daisetsukei's new sake and Yamasan's last sake with me. I don't think I saw it at the brewery's store. I opened the bottle with a light splash. It is fresh, crisp, and chirichiri 😉 It is a beautiful sake.
