Mutou SENSHU JUNMAI GINJO NAMAHARA SAKE Next is Mutou! The sharpest or solidest of the bunch. This combination is good 🙆. Yakitori: I shared a set of 10 with my senpai. The sake is delicious, and the sauce is strictly forbidden to be marinated twice. The restaurant has about 8 seats at the counter only? This time we visited without a reservation, but they said they would call me on my cell phone when a seat became available. We waited in the waiting room of the station right in front of the restaurant, but it was not a bother at all.

Good evening, Matsuchiyo-san 🌆. Actually, this is my first time to stay in Ueda, and I always stay in Tateshina or Tateshina on the way to the hotel, so I don't have much information about the nightlife in Ueda 😭. I learned about Yakitori Banchou from President Okazaki's X information 😉.

Matsuchiyo, continued. This time, I stayed at a rustic inn in front of the station. I felt that this is a town that is metabolizing, with many small, clean stores open at night. I recommend President Okazaki's X information 🥰.

Shinshu Kamerei Kinmonishiki Junmai Ginjo Yes, the next one is Ueda's superstar, Shinshu Kamerei🍶. Consistently delicious 😋! The couple next door, the husband chose Shinshu Kamerei. Of course, we stopped by the brewery's store to make love. I was looking forward to the new sake 😊. On Saturday, we visited Tamamura Honten "Shiga Kogen Beer, New Engi" in Shibu Onsen, Hokushinryu in Obuse, Takazawa Sake Shop in Toyoga in Suzaka, Okazaki Sake Brewery brewery store, and finally Tsukiyoshi brewery store, which was closed, but we had a lot of fun. Before entering the inn, we went to Shikyoyu Onsen, a hidden hot spring, soaked in the soft water, and enjoyed the Ueda Rokuzo set at Yakitori Bancho 😃, the best 😍.

Takizawa Junmai Daiginjo Shiboritate Naokumi It is a sake of Shinshu Meisho. It is from the same brewery as the Ting. It has more body than the Ting. The set was empty, and I had to refill it. On the way to the inn in Ueda, we passed by the brewery, but as I recall, they do not have a storefront. Next time I would like to take Takizawa with me to the liquor store to find it carefully 🫡. I didn't know it was this good😅.

Tsukiyoshino no Midori Unfiltered Nama Sake We came to Yakitori Bancho, Ueda Ekinaka Branch. We had to wait for 30 minutes because the restaurant was full. A set of 6 local sake breweries in Ueda to compare ^ ^. It's so exciting, isn't it? We also visited the brewery store, but it was closed that day 😭. Yakitori goes well with Ueda's sake 🍶😋.

Junmai Sparkling (test brew) Alcohol content 12%. This was also served at Miyajima-san last month. It was opened and closed three times until the bottle was opened. Fine bubbles 🫧, slightly sweet and sour. Of course it is delicious 😋. Well, I'm off to Ueda for one night and Oku-Nikko for one night from today ^ ^. I'm off on a trip to a brewery, a liquor store, and a hot spring ♨️ 🫡.

Matsuo Junmai Ginjo Ikarao Genshu style5835 720ml Rice:100% Yamae-Nishiki produced at the foot of "Ikarao" in Shinano-cho, Kamisui-gun Content: 720ml Rice Polishing Ratio:35% for mother rice, 58% for koji rice and kake rice Alcohol percentage: 15.5 This one was served at Miyajima-san last month. It is mild, yet refreshingly delicious 😋. It's not flashy, but it's a good sake that you'll grow to love 🍶.

Kangiku OCEAN99 Junmai Ginjyo Ochoukai -Arrival- 1800ml Rice polishing ratio : 55 Alcohol content : 15 The weather has turned cooler and autumn has come. This Monday, I walked to the liquor store on my way home from work with a backpack on my back. And the next day I couldn't resist and opened the bottle😅. A light shpon, well, it's in good spirits🙆. This year's is in good shape! Orange Sea, it was so good that I drank too much for two days in a row. I wonder if they still have it in stock 🤔I'm worried, but I guess I'll go straight home today.

Sairai Sara Junmai Ginjo Namaizume 720m Rice polishing ratio: 50 Alcohol content: 16%. We took this bottle to Matsuzaki Shinjuku store in Kawagoe the week before last. When we asked about the stock of Igarashi, he told us that the brewer would be coming next week for a tasting, but that they were out of it now. Igarashi is very popular 😭. The store is stylish and I walked past it without noticing. They have a good selection of popular sake, don't they? Well, it's been a while since I've had a Sairai😍. I opened the bottle with a quick pop and my wife seemed to like it too. I paired it with cheese for the second half. It's delicious 😋.

Hokuan Okuni Autumn Sake Junmai Ginjo-shu 720ml Rice variety/production area Hitogokochi/Nagano Rice polishing ratio 55 Alcohol content 15 It has become cooler at once. We bought some autumn fish, which means it's time for autumn sake. It has matured quite well. The color is a little amber, and the savory taste is also very autumnal. By the way, I suddenly decided to go to Oku-Nikko this weekend. It is a bit far, so I think I will stay overnight in Ueda. I am wondering whether I should stop by at the Kitayasu Okuni brewery in Omachi or at the Tamamura Honten store in Shibu Onsen (hot spring).

Oze no Yukidoke Junmai Daiginjo Hiyoroshi 1,800ml Rice polishing ratio: 50 Alcohol content: 15%. This year, too, we received this bottle from Saito Sake-ten. Is this the fourth year in a row? Speaking of hiyaoroshi, it is Ozeyuki😄. This year's was quite light and too refreshing on the first day, but on the second day, it opened up and became more umami, transforming itself like a different sake 😋. As for the rest of the fall sake, I'd like to try Akabu, Kangiku, Nabeshima, Kame no Kai, and the like 😍.

NEW ENGI Kinmonniki Junmai [7] Unfiltered Nama-shu 2024BY 720ml Homegrown Kinmonnishiki Rice polishing ratio : 75 Alcohol content : 17 I had seen the pop-up labeled "The Ultimate Weapon" at Ikusakaya for quite some time, but this was the first time I was taken to the brewery. I found out that 80% of their sake rice is homegrown. Farmer in the summer, toji in the winter. Nowadays, that's a good answer, isn't it? It is a sake that is not polished, but the natural farming method itself reduces the amount of rice produced. Well, the taste is so-so, sour, refreshing, yet full and delicious. I would like to try other sake rice varieties.

SENKOKU - URA-SENKOHANA - ORIGARAMI HIIRUSHII 720ml Rice : 80% Kame-no-o (Domaine Sakura Kame-no-o), 20% Yamadanishiki (Domaine Sakura Yamadanishiki), grown in Sakura City, Tochigi Prefecture, Japan Alcohol : 13%. There were more summer sake. This one is easy to drink 😋.

Takeba Tokubetsu Junmai Hiyoroshi 720ml 100% Noto Gohyakumangoku rice Rice polishing ratio 60 Alcohol content 16 Kanazawa jazz street, in the precincts of Oyama shrine 🎶⛩️ I bought this cold sake at a local sake brewery in Kanazawa station. I really wanted to pair it with sashimi, but since we were outdoors, I served it with crab and white shrimp 🦀🍤🍤🍤🍤🍤. It is said to be characterized by a light sweetness and acidity, but it also goes down well and I preferred the temperature range where it was returning to room temperature 🎵.

Garakudai Ruika Zuika - Hi-ire 720ml Rice used: Koshitanrei produced on Sado Island in Niigata Prefecture Polishing: Undisclosed Alcohol content 14%. SAKE COMPETITION 2025 Bronze Winner in the Junmai Daiginjo category The bottle was opened lightly. On the third day, it was opened with more light shupon. It is light, but the elegant flavor sinks in afterwards. It has a gaseous taste and is delicious 😋. Next month there will be a Kenshin Sake Festival in Joetsu Takata, but the guest brewery has not been announced yet❓❓ I'm sure they will be there 😄

Kanazawa Nakamuraya Junmai Ginjo Hiyoroshi 720ml Rice: Gohyakumangoku (produced in Ishikawa Prefecture) Rice polishing ratio: Koji rice 55%, Kake rice 60 Alcohol content: 16%. I received this bottle from a colleague at work. I always share vegetables from my vegetable garden, recently bitter gourd and pumpkin🎃, but it came back as hiyaoroshi😄. Kanazawa jazz street ♬♬ starts tomorrow Today was the eve of the festival in the rain. I had a small sip of it quietly 🍶. It's pretty rich, isn't it Nakamuraya?

@Mizuhashi Shinanotsuru Junmai Ginjo 60 Tasatsuki Unfiltered Nama-shu 720ml Rice used: Miyamanishiki Rice polishing ratio: 60 Alcohol content: 16%. 23BY 6.8 The next bottle was produced in August 2024. It has been aged for one year. Hmmm? The roughness of 7 years is gone, and it has become calm and mellow. It is totally delicious. However, I'm not sure if the taste of the 7 year old is different from the 6 year old, or if it has more punch 😅.

Shinanotsuru Junmai Ginjo 60 Tasatsuki Unfiltered Nama Shu 720ml Rice used: Miyamanishiki Rice polishing ratio: 60 Alcohol content: 16%. 24BY 7.7 We found two bottles, one from 2025 and the other from 2025, side by side in the refrigerator at the liquor store we visited last month. We took both bottles with us. We opened the bottles at the same time and compared them. The first one was from July 2025. It is rough and goes down the throat. I remembered Shinanotsuru as being more fruity, but it was a fairly healthy sake.

Ohmine 3grain /3grains Dewa Sanzu Hi-ire 720ml Rice: 100% Izu Tsannin Rice polishing ratio: 50 Alcohol content: 15 It is finally getting a little cooler. It is the season of hiyaoroshi (cold sake), but there are still some summer sake 😅. It is a light, sweet, fresh sake♪ Delicious, but more of an aperitif. I paired it with cheese from the second half 😋.

Shinshu Kamerei Green Label 720ml Alcohol content 15%. Yanagimachi, is changing little by little. You can park in the times and get a coupon for 90 minutes free if you make a purchase at the store. The street has a sign asking people not to enter, and it has become easier to walk. Yesterday I returned home via Warabi, Kawagoe, Ueda, and Chikuma. I bought a bottle of sake at the brewery last month and kept it in the refrigerator at home. Well, it soaks through! My fatigue is gone 😋. The green label is delicious enough 😁. Lunch was at Touya, a regular bowl of Zaru Soba. I shared one serving of Tenchirashi with my wife ♪
