2025 Spring Evening - Tasting New Sake Tateyama Daiginjo Competition Entry Class Omachi Junmai Ginjo Sake Not for Sale Aizan Junmai Ginjo Not for Sale This year was the first time for Tateyama Sake Brewery to participate in the competition. I didn't realize that until I was told. This time, there were some not-for-sale items on display. For some reason, many people didn't get a chance to taste it, but those who did, were surprised to find out what it was. It's so delicious! They said, "What's this? I really want this kind of sake to be made commercially available.

2025 Spring Evening - Tasting New Sake Yoshinotomo Shiboritate The fourth bottle in the table set. It is simple, but also consistently delicious, as expected. Until last year, there were many other sakes chilled on both sides of the hall and you were free to take them, but then there were tables with 10 or more bottles lined up, and this year there was a 4 bottle rule that you had to either empty the table or bring an exchange item 😭 The third one, "Hou," another brand of Yoshinotomo, was pulled out because everyone knew it was an expensive sake! The glass artist in attendance got it, but a few minutes later, another table member came to ask for an exchange. No no no, he asked us to wait until after all the people at this table had poured 🤣.

2025 Spring Evening - Tasting New Sake Gen no Taki Daiginjo Shiboritate This was the third of the first four bottles set on the round table. It is clear, crisp, and consistently delicious. The round table seats 11 people. After everyone has had a round of drinks, we will go to exchange them, but may I release them? Can I release it? said my friend who came from Tokyo to the event in Toyama. Mabotaki, it seems, was to his liking.

Narimasa Limited Junmai Ginjyo Nama Shu "Onaka" 720ml 2025 Spring Evening: A Taste of New Sake We participated in the "2025 Spring Evening: Tasting New Sake" event, where we enjoyed new Toyama sake and food. The toast was Narimasa's Awamama Nama-zake. The bottle was opened without difficulty by opening and closing the bottle twice. It's ok, it's nice and dry. I found out that it is a sake made with wild yeast "Onaka". The price is 2,640 yen. It is an aggressive sake in many ways. I have the impression that Narimasa is rather good at making fresh bubbly sake.

Hokuan Okuni Junmai Unfiltered Nama-shu 720ml Rice: Hitogokochi Rice polishing ratio 59 Alcohol level 16 At first sip, it tastes sweet, but strangely enough, it quickly cools down despite its sweetness. My wife said, "Sake can taste so many different flavors. I compared it with Taisetsu-kei, and it seemed to have more umami than yesterday's sake. I guess the combination also changes the taste. Also, this brewery has last year's snow-aged sake and unlabeled junmai unfiltered sake coming up. I'm looking forward to opening the bottle.

Nama-Alps 720ml [Gold medal at the Wine Glass Delicious Sake Awards 2025]. Rice polishing ratio: Kake 65%, Koji 59 Alcohol 15%. Yesterday, I went to Ueda for a one-day trip. On the way back, I bought this at Fujimori Sake Shop near Hakuba Station. There was also a Hokian Okuni newspaper sake, but I went for this one with 12 bottles of junmai sake and junmai genshu. It costs 1,210 yen including tax, and it is a regular sake. The bottle was opened following the last of the Yamama, so it was quite refreshing. It is refreshing, clean, and has a great cosmetic value😃. Lunch was at Shinshu Soba WAKYU in Chikuma. By the way, 2025 Inakura Tanada Hitogokochi Unfiltered Nama Shuzukuri set was still available even though it was the second day of sales😅. If you find it, you have to buy it. ✌️ On my way home, I bought 4 bottles of miso and 4 bottles of sake, 2 in Chikuma, 1 in Nagano, and 2 in Hakuba. At the end, I found a nice sake shop in Kotani Village, but I couldn't resist going in. Maybe next time I'll take a walk around Omachi area to see the breweries 😄.

Mikotsuru Junmai Ginjo Yamae Nishiki Unfiltered Nama-shu 720ml Raw material rice Yamae-Nishiki produced in Suwa City Polishing ratio 50%. Alcohol content: 16%. It was purchased at the brewery's store last November. It was bottled in 2024.08, but shipped from the brewery in 2024.11. It is aged at a low temperature at the brewery before shipping. The bottle was opened lightly. It is fresh, but it is also delicious with a nice sweetness spreading through it. We paired it with mozzarella cheese marinated in wasabi and soy sauce. The bottle was opened on Saturday, the day before our one-day trip to Ueda on Sunday. I was going to replenish Goko-chan again. I forgot about it. I will bring you again soon😅.

Yamama Tokubetsu Junmai Shu - Nakaharizumi Direct-filtered Unrefined Nama-shu 1,800ml Alcohol content: 17%. Rice polishing ratio: 60 This is the March hanpukai. Gassy and fresh! Hmmm...yes, indeed it is. It has a nice, mellow umami flavor 😊. It's getting a little warmer, so I started walking to work 🚶 again yesterday. Maybe that's why the sake tastes so good.

Hatsugoroku Junmai Ginjo Unfiltered Nama-zake 720ml Sake brewing rice Yamadanishiki Polishing ratio 50%. Alcohol content 16 I bought this sake from Gero at a liquor store in the old town of Takayama. I found out later that it was 10% more expensive than the others. I guess it's a tourist attraction, so it can't be helped. Another liquor store? Souvenir shop? There was also another liquor store or souvenir shop that sold sake from all over Japan, and they had Iichiko sake, which was featured in Dan Chu. I was a bit confused for a moment, but I held back because I have too much in stock at home😅. Well, the sake is modern and fruity! It is a delicious sake. Perfect with Hida Furukawa cheese in tamari soy sauce👌. The fourth one is Chitose's Chinese noodles in front of Takayama station 🍜.

Chiyomusubi Junmai Tsuyoroku 60 Unfiltered Unblended Nama-shu 1800ml Ingredient rice: Strong Alcohol content 17%. Rice polishing ratio 60 This is the March Hanpukai. This is the first Chiyomusubi in a long time. I was prepared for it to be dry again, but it was easy to drink. And because it is a strong sake, I thought it would be suitable for heating sake, but it is delicious cold. It's full-bodied and fruity. It changed my concept of Chiyomusubi. I will try heated sake as well 😉. The fourth picture is the Ten Tamama Udon Noodle Soba from Arai Kohei Noodle Factory in Takayama on Sunday 😋.

Hello, Hanapin 😃. Here you choose the number of balls, then you choose your combination from Udon, Kishimen, or Soba, choose raw, half-boiled, or boiled egg, and choose whether you want the sauce on top or separate. Two eggs for udon and soba, half-boiled, 670 yen I believe, and the soba is hidden in tempura.

Shinshu Kamerei Yamae Nishiki Junmai Ginjyo Unfiltered Nama-shu Rice polishing ratio 55 Alcohol 15%. After participating in the Mari-label festival, we came home and opened the bottle before it was too late 😅. I enjoyed its fresh and fruity taste. However, it is getting more and more difficult to obtain, and I wonder if it will become a past tense that you can buy it if you go to Yanagimachi 😭. By the way, on the way home, we stopped by Ikusakaya, Sake Kasuga, and Hatoya Sake Shop, where Yamazan and Honkin Bisei were very popular. And a new discovery was that Kasuga was selling Wakanami! I was talking to the proprietress about how delicious it was when I drank it in Fukuoka last month, and I wondered if that was why she came all the way here? No, no, it was just a coincidence! I was recommended this Honjozo by the owner and brought it to her. I am looking forward to opening the bottle 😊.

Seimasamune Honjozo Shiboritate Nama-nama-shu 720ml Rice polishing ratio: 70 Alcohol content: 19%. I bought this for a nightcap. It was a little round but had a thicker body, and I thought it was effective the next day, but it was 19%. The fourth one is Mendou Chikori's Chinese noodle soup (🍜). On Friday afternoon, I took a day off and went to Ueda to participate in the Marillavel Festival. On the way to Ueda, there was a snowstorm around Myoko, but I managed to get to the Shinshu Kamerei Brewery in time before it closed. There was no end to the number of customers at this time of the day, and there was a long queue at the cash register. I bought a Mari-label T-shirt and a key chain. However, I heard that 700 bottles were prepared in two days, but 550 bottles were sold on Friday. On Saturday, they sold out of the draft sake early, and the fire-brewed sake was so oversold that they had to stop selling it for the two days of the event. How many bottles did they sell?

Machida Shuzo 55 Special Junmai Miyamanishiki Nigori 720ml Rice:Miyamanishiki Rice polishing ratio: 55 Alcohol content: 16%. This was served with Kangiku last month. It is a February lot, so it is still in good health. It is still healthy since it is a February lot. I imagined it would be sweeter, but it is well-balanced with just the right amount of sourness and is deliciously shwashy 😋. Maybe I could have had a bottle 😄.

Aizu Miyazumi Junmai Nigori Hatsu Shibori Nama 720ml Rice:Yumen no Kou Rice polishing ratio: 60 Alcohol content: 16 I brought this bottle with me in December, carrying my backpack on the way home from work. Last year, when I opened the bottle, the cork blew out like a cracker🎉, so I opened the bottle with trepidation. What was that? A light puff. Clouds ☁️ did not come up and the activity was over. I let it sit at home for almost 3 months and it failed. This is smooth and tasty, but the popping activity is gone. Come to think of it, I once had a bottle of Nanada's active nigori that was delicious in the winter, but when I drank it again in the summer, it had grown old. Let's drink it early next season 🤣.

Shangiku Denshokiku Junmai Daiginjo Yamadanishiki 50 Orikagarumi Nama-shu 1800ml Rice : Yamadanishiki Rice polishing ratio : 50 Alcohol content: 15%. This is an autumn sake. However, I had decided to have 4 bottles of this, Hirotogawa, Kame no Kai, and Urasato as ogaraumi during the year-end and New Year holidays. In the end, the last bottle was Denshogiku! The bottle was opened with a light puff of white gas. Let's get up and enjoy it 😄. When poured into a bowl, it was like a swirl. Sweet and juicy is an expression that is reserved for Kangiku, isn't it 😉.

Yamazan Junmai Daiginjo Yamae Nishiki Rice: 100% Yamae-Nishiki produced in Yaebaru, Tomi City, Nagano Prefecture Rice polishing ratio: 45 Alcohol content: 15%. This is the last of the 2023 rice produced in September 2024. The last two bottles were sold at the liquor store last November. We opened the bottle because we had accumulated a lot of new Yamazan shinshu. The shape of the bottle made me wonder if it would blow out, but it was fine. Silky and slightly effervescent, what a luxurious sake. But why the lid? Yes, I finished it 😅.

Toyoga Junmai Green Label - Bottle warmed and fired - 720ml Shirakaba-Nishiki produced in Nagano Rice polishing ratio 70%. Alcohol content 15 It was produced in October 24.10, stored at home in ice temperature, and opened. It is a very well-balanced sake, not too floral and moderately sharp. Delicious 😋. Toyoka-san, I ran out of stock at home. I guess it's time to go on an expedition and replenish 😅.

Haneya Aizan Junmai Ginjyo Nama Nama Sake 720ml Alcohol content: 16 Rice:Aiyama Rice polishing ratio: 60 We went to a tasting last December and brought this home because it had a great flavor. After that, we had it at home for 2 months. We think it has gone from being full of umami to a little calmer and smoother. It is definitely better than the last September lot 😋.

Urasato Junmai Light Nigori Nama-shu 1800m Rice:Gohyakumangoku produced in Ibaraki Rice polishing ratio: 65 Alcohol content: 15 We stocked this at the end of the year because Urasato 2nd was so good last year😄. The moment the outer stopper was removed, the bottle automatically opened and flew around the kitchen. I was surprised that there was no warning ⚠️ to open the bottle. I poured it into a bowl right away, so it didn't overflow. I haven't seen such a pop since Miyazumi. The sake is also delicious, with a nice tangy taste. I'll have to keep the 2nd bottle for myself again 😁.
