It is a five-stage brewing process! ...I was expecting it to be sweet, but it is a crisp, dry sake with a clean and crisp taste. It is like a refreshing sake, but it also has umami and a rather strong flavor that is very drinkable! Easy to drink, goes well with a wide range of dishes 👌

Fukamari Shatoro Junmai Ginjo Unfiltered Nama-shu Sake rice: 100% Yamadanishiki Rice polishing: 60 Alcohol: 16.5 A brand new to me A surprisingly rare local sake from Okayama 🍑. It has a relatively high alcohol content, a heavy mouthfeel, and a mild taste. The rice flavor is strong, but it has a nice loose texture.

Rice polishing: 70%. Alcohol: 16% abv. Long time no see trip to Okinawa: ✈️ It's been two years and one of the main attractions of this trip was to drink Okinawan sake! I asked at a sushi restaurant on the first day, but they didn't have any Okinawan sake... The next day, after visiting a total of 4 liquor stores and supermarkets, there was nothing in stock... So I was told that there might be no shipment this year, and that if there was any in Okinawa, it would be here! The next day we went to 4 liquor stores and 4 supermarkets.... I took my family and drove an hour to the store...! 👍 I'm so happy with the result...! Classic mellow sake 🍶. Not too peculiar, slight sweetness from the rice, and a lingering bitterness. A sake that I never get tired of drinking. I thought it might be a fresh sake or a fragrant sake since it is somewhat warm in this area, but I was wrong in a good way! Okinawa's 🍶, I see what you mean 🧐.

Strong oaky aroma at the top and quite sweet on the palate. Since I was drinking it without a meal, it was a bit sweet on its own, and to be honest, it didn't go down well with me... It is a sake with a meal (western food) 🍶.

Junmai Genshu Rice polishing: 60 Alcohol: 17%. It's been a while (4-5 days?) since I had a It's been a long time (4-5 days?) since I had an evening drink at home! I chose Kunigon from the brands I had stocked up on as summer sake! The aroma is modest, with a refreshing acidity and bitterness. It's hard to believe that it's 17%, and it's so easy to drink!

Unfiltered unpasteurized sake Sake rice: Nipponharu At a local sake bar, this is only the second sake I've had, but it was close to closing time, so I had to leave! The top, probably not so common in Tokyo, but this one seems to be a very popular aroma. The top is fresh and sweet, like rumney or green apple! It lingers a bit through the middle and has a clean aftertaste! Nice!

Unfiltered unpasteurized sake Sake rice: Hitanishiki This is an Ibaraki sake bar located next to the Mito Station ticket gates! This bar is a must-visit for sake freaks, offering inexpensive tastings of sake from 35 breweries in Ibaraki Prefecture! There were many brands I didn't know about, so I was excited ⤴️⤴️ I wanted to start with Morishima, but they didn't have it, so I went with Morishima Shuzo's Fuji Daigan. Although it is called "Souzake," it tastes like a refreshing sake, and it is delicious and refreshing.

Junmai Daiginjo Rice polishing: 50%. Alcohol: 16% abv. I'm going to drink local sake on a business trip to Ibaraki! 🍶. A Junmai Daiginjo from Mito's Yoshikubo Shuzo near Mito station, said to be a model for overseas export! It's a brand you don't see very often, but it was delicious!

Junmai Ginjo Rice polishing: 55 Alcohol: 15%. Yeast: Tokyo University of Agriculture isolate, Hana Yeast Research Group A rare business trip to Ibaraki and a stay in Mito. A friend of mine introduced us to a local izakaya (Japanese-style bar), where we enjoyed some local sake. The yeast is from Tokyo University of Agriculture and is very fruity and tasty like a flower yeast 😋. The top note is 🍎 like, light and simple taste for a summer sake, but it has a little sweetness and goes down easy! Good sake! Good sake 🍶.

Sake rice: Yuyamanishiki Alcohol: 14% abv. Strong effervescence! It has been a long time since I have had such a strong effervescence. The color is cloudy with a hint of tailing. The top note is very fruity with a gorgeous apple and muscat aroma! Goes well with western food...women seem to like it...delicious!
