The sixth cup of Jikin... wrong order...
It's delicious as it should be! But I still think it lacks impact when it's fire-aged... as a sake drinker 🍶.

One of the few dry sake in the lineup of the day.
Sake strength: +4, but dry...
It has a clean and crisp taste, a restrained aroma, and a light umami flavor, making it a great match for sashimi.

Second trip to Fukuoka!
After all, I enjoy Fukuoka's local sake 🍶.
I have the impression that there are many sweet sake in Fukuoka, but this is a slightly dry sake with a similar taste to Hakata Jiman!
The ginjo aroma is mild and refreshing!
I paired it with sashimi, but it can be served with anything.

Attack is mild, with a fresh fruity ginjo aroma: ⤴️
Slightly dry, with a slight richness
I paired it with fresh Okoze (freshly sliced and raw fish) and it was a real treat for the palate👍.

Very refreshing, clean taste, delicious!
I paired it with shabu shabu, but it was gentle and did not interfere 🍶.
The lamb shabu shabu was a bit overpowered by the aroma...
Rice polishing: 50%.

It has a full-bodied, umami-kuchi taste.
It has a firm, full-bodied taste.
After having had a relatively light and fruity lineup, it has a particularly strong umami taste and a heavy mouthfeel 🍶.
It is a good sake!

A brand that was completely new to me.
Sour yeast and lactic fermentation
Very strong acidity! It is like wine, and in terms of pure acidity, it is one of the best I have ever tasted!
If served without being told, would I be able to answer that it was sake?
