[dried tofu and pak choi with Chinese dressing], a dish of dried tofu, pak choi and Chinese pickles with Chinese dressing, which could be mistaken for noodles for a moment. It is a must-have for those who love pak choi 🥰. Shinomine is sharp, clear, and refreshing...perfect for summer sake 😋and it went well with this snack and made my mouth feel refreshed. The label says it has a banana flavor...and I can kind of identify the aroma and taste. Junmai Ginjyo (pure rice ginjo) [fired sake Red label ⭐️⭐️⭐️⭐️ Rice: 80% Tamakae from Shiga Prefecture 20% Yamadanishiki from Hyogo Prefecture Polishing ratio: undisclosed ALC 17 Sake degree: +7.5, Acidity: 2.0 Not much of a ginjo aroma, and quite dry on the palate due to its raw yeast production. Junmai Ginjo Nami Label⭐️⭐️⭐️⭐️ Polishing ratio 55%, ALC 15 degrees Today, two of my drinking buddies and I had a lunchtime drinking party at "Sake Toto" from 3:00 p.m. Toto" from 3:00 p.m. when the restaurant opened. I asked my drinking buddy, "It's so hot, you want to start with beer? But they still wanted cold sake. So, we decided to have cool "Summer Vegetables in Soy Sauce" and "Octopus Nishikigi" with plenty of condiments, both with well-chilled sake. ALC 16 degrees On 20221210, we came across a Junmai Ginjo, fire-brewed, 100% Yamadanishiki, 50% polished rice, 16% ALC, but decided to register it as new since it is an unfiltered nama-shu 🤗. Although it is a nama-shu, I think it is a crisp, slightly dry sake with a good balance of acidity and bitterness, with little stimulation that tingles on the tongue. Junmai Ginjo-shu Nakadori Unfiltered, Selected, Nama-fume ⭐️⭐️⭐️⭐️ Polishing ratio 50%, ALC 14 No description of sake rice I have encountered several Junmai Ginjo-shu Nakadori Unrefined Nama-Zume from Jyushidai, but this is the first time I have not seen the sake rice brand listed, so I decided to register a new one 🤗. The aroma is subtle... there is a slight tingling sensation on the tongue when you put it in your mouth, and as you roll it around in your mouth, you can taste the mild flavor 😋. Hanada Yamahai Junmai ⭐️⭐️⭐️⭐️ 100% Hyakumangoku No Shiro Polishing ratio 60%, ALC 15 I didn't know how to read the kanji for "縹" (縹), so I asked the store owner 😅. Sensation Blue⭐️⭐️⭐️⭐️ Junmai Ginjo Koshiki Nama Moto Koji rice 100% Yamadanishiki produced in Shiga Prefecture Kake rice: Watabune No.2 from Shiga Prefecture Yeast: Kyokai No.6, in-house strain Polishing ratio 50%, ALC 15 I think this is the same sake with the blue label of Sensation Blue that I met in August 2023, but the label and description ("Kakemai" and "Koshiki Namaoto" were added) are different, so I decided to register it as a new sake 🤗. KaKoi Tokubetsu Junmai Namaeshu⭐️⭐️⭐️⭐️ Polishing ratio 60 ALC 17-18%, Sake degree +3 Acidity 1.3 Slightly fruity aroma. When you put it in your mouth, the bitterness (astringency?) spreads strongly in your mouth. But the aroma through the nose is fruity. It was a sake that gave me a very interesting sensation 🤗. Summer Jungin ⭐️⭐️⭐️⭐️ 100% Tosa Rei produced in Kochi Prefecture Polishing ratio 60%, ALC 15.5 Sake degree ±0 Acidity 1.9 It has been a year since Akiagari was first served in September 2023. 🥰 It has a subtly fruity aroma, with a well-balanced spread of acidity and bitterness in the mouth, making it feel sharp and slightly dry 😋. Mr. Apple born in a wooden vat: ⭐️⭐️⭐️⭐️ 100% Omachi rice, 60% milling ratio, ALC 15 degrees, Yeast 77 I got a call from a familiar izakaya manager informing me of a new arrival last weekend, and again today, so I had no choice but to drop by as soon as the store opened... I gave myself a weird reason to go in 😅. Tonight's sashimi platter consisted of salmon, sea bream, and fuefki snapper 🥰. A little aroma of wooden vats. Junmai Ginjo SHUWACCHI Polishing ratio 50%, ALC 16%. Active Nama-zake SHUWACCHI! I thought to myself, "Is this an Ultraman sake...? Ori is settling at the bottom, so I opened the bottle first, took the pressure off, corked it again, and gently stirred the ori before pouring it into a glass 🥰. The ori is bigger and more solid than I expected 😅. On the palate, I think it's a sweet sake with a slight tingling carbonation characteristic of nama-shu, followed by a mild sweetness 😋. After purchasing it, I had divided it into 2 four-pack bottles and 2 two-pack bottles and kept them in the fridge, so I had the top clear in different bottles, leaving the ori at the bottom 😃In the mouth, the mellowness of the ori faded and the taste became more tingling, which is characteristic of nama sake 😋. The tingling sensation gradually disappeared as I poured it into a glass and let it sit for a while 😱. I recommend tasting the top clear and the top clear twice as soon as possible 🥰. Kosen Dry Junmai ⭐️⭐️⭐️⭐️ Unfiltered Nama-shu Rice polishing ratio 70%, ALC 16%. Izumi Shuzo was the brewer of Senzuke. Tonight's third sake. The aroma is subdued, and when you put it in your mouth, it has a pleasant stimulation peculiar to nama-shu, followed by sourness and bitterness, making it a well-balanced sake. Tonight, we had three more sakes that we hadn't had in two years, and we updated our check-in information 🤗. Special Junmai Sakusake Sekesaku Saku Sake Sake Saku, Saku Sake Saku, Saku Sake Saku was stated on the label 🥳. ⭐️⭐️⭐️⭐️ [Wawa Wawa] brewery. Using Saku yeast (yeast isolated from cosmos in Saku City) Hitokochi 100%, Polishing ratio 59%, ALC 15%. Tonight's sashimi platter is a 4-piece set of Ukka Rasago, Bonito, Shirasu, and Seared Spanish Mackerel with Salt and Lemon. Actually, this is the second type of sake I ordered today, the first was called "Orikagarami Hiran" on the store's bulletin board, but I couldn't find any orikagarami at all😅I checked and it seems that if it is unfiltered raw sake, it is orikagarami, which is a type I had already encountered but with different alcohol content, so I just had to update the information 😃. The aroma is subdued, the acidity and bitterness are well balanced, and the sake is clean, crisp, and slightly dry 😋. Yeast isolated from cosmos... but I can't really tell the difference since I don't even remember the aroma of cosmos😅 Chigasaki Chirori: 20240718

Kutouryuu Cold Sake ⭐️⭐️⭐️⭐️ 100% Gohyakumangoku from Fukui Prefecture Polishing ratio 65%, ALC 18%. It is recommended to drink on the rocks. Straight Sake that is smooth, dry, and umami 😊It is a sake that you don't feel 18 degrees too much 😘. On the rocks We had it on the rocks with ice as recommended 😋. Gagakuyo - Narukami Rice polishing ratio: not stated ALC 14.5 degrees (undiluted) Today's 8th sake is Garakudai, which is a new brand for me. I didn't even know it was called "Utashiro" 😅.
