While looking at the sake on the shelves and in the fridge in the store, looking for a sake to purchase, the unique label of Yano Shuzo caught my eye.
I had to buy this one 😅.
On the palate, I found it to be a refreshing, crisp, slightly sweet sake. I can drink it soooo easily 🥰.
I'll have to be careful with this one😅.

I visited my favorite liquor store and found a sake with a deer🫎 label.
I asked about it and was told that it was from Kankoubai. I had thought that the four seasons' animal label series of Kankoubai would be owl in autumn and polar bear in winter... but deer🫎 appeared between autumn and winter.
I bought it without hesitation.
It has a subtle ginjo aroma, a slight carbonation on the palate, and a pleasantly stimulating dry and crisp taste on the tongue.

The aroma is subtle, and the mouthfeel is slightly stimulating, with a pleasant acidity and umami of rice, making it a slightly dry sake.
We had encountered Moeibuki Junmai before (May 2024), but it was not a "nao kumi" at that time, so we decided to register it as new.

Noto Sake Brewery (Sakurada Sake Brewery) reconstruction support Joint brewing with the brewer's chief brewer ALC 16%.
It has a light aroma of koji malt.
In the mouth, it is a dry sake with a mild taste, a pleasant stimulation on the tongue, acidity, a little bitterness, and the delicious taste of rice.

This is the third stage of Kitajima Shuzo's [Oiriri Hipporidako Series]....
Since the label was a model change from "Tamaei 100% Junmai Ginjo-shu Turquoise Blue," which was purchased in September 2021, we treated it as a new registration.
It has a subtle ginjo aroma and feels light on the palate, but it has a sharp, dry summer taste.

Pleasant, light ginjo aroma. In the mouth, it is a refreshing sake with a mild flavor, soft acidity and bitterness, and a slight stimulation on the tongue.
Evening coolness...for snacks, eggplant nanbanzuke (pickled eggplant) that has soaked up the flavor and cooled down perfectly 😋🥰.

There was a sipping sound when the bottle was opened😃.
Gorgeous and moderately fruity aroma, with a slight piquancy on the tongue when you take a sip.
After that, the acidity and bitterness spread in good balance 😋.

Shunyo is said to be low glycerin rice.

It is an easy-to-drink sake with a good taste of rice, moderate sweetness, and a slight carbonation.

The ginjo aroma is only faintly perceptible, and the fruity aroma is not noticeable despite the use of Yamadanishiki.
However, when you take a sip, you will notice a pineapple-like aroma along with a mild mouthfeel. After that, the acidity spreads, followed by a slight bitterness, and then the umami of the rice... I guess this is a food sake that can be enjoyed while changing its expression.

The aroma is slightly fruity. When you put it in your mouth, you will be surprised at how sweet it is. Is it sweet? It has a softness that makes you think for a moment that it is sweet. The carbonation characteristic of nama-shu is almost imperceptible.
After that, the mild taste of nama-shu spreads while the dryness is felt a little.

It is a summer sake that can be drunk easily because of its low alcohol content 😅.

Compared to the same Kamikigen Junmai Ginjo-shu 4season Spring, the aroma is softer and more subtle, the mouthfeel is less stimulating, and the taste is mellow and fruity like pineapple with a slight acidity, making it a slightly sweet sake 😋.
I heard from the store that they also have [Junmai Ginjo-shu 4season Autumn and Winter], so I mustn't miss it 😅.
