Since we had been purchasing items from our trip to Yamagata, we decided to have a local sake from Kanagawa Prefecture to change things up a bit😅.
The sake is dry on the palate with a good balance of acidity and bitterness, with a nice sharpness and rice flavor 😋.
The label design is "Fugaku Sanjurokkei Kanagawaoki Namiura" by Katsushika Hokusai, which is the same as the design on the new 1,000 yen bill 🤗.

It has a subtle ginjo-like aroma.

I went to my usual liquor store looking for a hiyaoroshi that I had never encountered before and chose this Nanbu Bijin🤗.
As soon as I opened the bottle, I felt the fruity ginjo aroma.
In the mouth, soft sweetness and crisp freshness... I thought it was a sake I would never get tired of drinking 😋.

The aroma of koji (malted rice) is subtle, and in the mouth, there is not much of the carbonation (shuwashu) characteristic of nama-shu, but rather a full flavor and the deliciousness of the rice.
Actually, I went to the store for [Sagaminada Tokubetsu Junmai Shu Dry Oorigarami], but it was sold out😭.
So, I checked again and decided to go for this sake, which was my first encounter with this brand.
I was expecting to find more of the same brand, but I was not disappointed... 🤗

Although it is a nama-shu, I think it is a crisp, slightly dry sake with a good balance of acidity and bitterness, with little stimulation that tingles on the tongue.

SHUWACCHI! I thought to myself, "Is this an Ultraman sake...?
Ori is settling at the bottom, so I opened the bottle first, took the pressure off, corked it again, and gently stirred the ori before pouring it into a glass 🥰.
The ori is bigger and more solid than I expected 😅.
On the palate, I think it's a sweet sake with a slight tingling carbonation characteristic of nama-shu, followed by a mild sweetness 😋.
After purchasing it, I had divided it into 2 four-pack bottles and 2 two-pack bottles and kept them in the fridge, so I had the top clear in different bottles, leaving the ori at the bottom 😃In the mouth, the mellowness of the ori faded and the taste became more tingling, which is characteristic of nama sake 😋.
The tingling sensation gradually disappeared as I poured it into a glass and let it sit for a while 😱.
I recommend tasting the top clear and the top clear twice as soon as possible 🥰.

Although it is pure rice, the aroma is somewhat fruity...but it is different from the fruity ginjo aroma, and there is a slight aroma that I have not experienced before😅.
When you take a sip, you can feel the umami of rice, and the well-balanced acidity and bitterness (astringency) spreads, and it is a slightly dry, crisp and delicious sake!

We first enjoyed it at room temperature. It was a slightly dry sake with a slight bitterness and umami from the rice in the mouth.
When served warmed (top-heated or hot), the slight bitterness disappeared and it became a refreshing, slightly dry sake.
The next day, I had some frozen puffer fish fins left over, so I served them with fin sake. After defrosting the frozen fins and searing them a little, I put them in a glass and poured in the sake, which I stopped just before boiling 🤗.
The taste and flavor of the broth from the fins was transferred to the sake, and the alcohol was slightly reduced, resulting in a well-balanced and delicious fin sake 😋.
