Shichikanma Junmai Ginjo-shu⭐️⭐️⭐️⭐️ 100% Yamadanishiki, Polishing ratio 50%, ALC 15%. It was sealed 🤗. A subtle ginjo aroma, well-balanced acidity and bitterness in the mouth, sharp and dry 😋The origin of Shichikanma is... named after Symbol Rudolf (7 G1 winners) and the connection between Symbol Farm and the brewery😃. This is the first time I learned about the origin of the Seven Crown Horses brand 🧐. Looking at the label again, it looked like the U shape of the horse's hoof in the shape of a seven-square 🥰. 〜〜〜〜 (The proprietress of a tavern gave a similar explanation in the program "Kazuhiko Ota's 100 Izakayas" aired on tvk on 20250904🤗) It used to be named [Yugami Masamune], but was renamed [Shichikanma] in 1991. The brewery's president's sister married the owner of Symbol Rudolf (1986), and they decided to create a sake called "Shichikanba" (Seven Crown Horse)... and so the name was changed from "Yiage Masamune" to "Shichikanba" (in 1996) and put on sale. Junmai Daiginjo Hakutsuru Nishiki⭐️⭐️⭐️⭐️ 100% Hakutsuru-Nishiki, Polishing ratio 50%, ALC 15 The ginjo aroma is not so strong, and in the mouth it is mild and slightly dry with a sharp taste 😋. Today, we had our first grilled Akitogi fish. This year's Akinoto fish has more fat than it has had in a long time👌. This sake will enhance the flavor of the Akinoto fish 🤭. Adams ⭐️⭐️⭐️⭐️ Nama-hashiwazukuri, unfiltered, raw sake Polishing ratio 77%, Ingredients: Koji rice 20% Yamadanishiki, Kake rice 80% Asahi rice ALC 14% (original sake) Yeast Association No. 701 The master told us that the lid flew off like a sparkling wine when the bottle was opened. Today, the lid did not fly off because it has been a little while since the bottle was opened😅. Tonight's sashimi platter is seared swordfish with lemon salt, kampachi, kanpachi, kinmedai, salmon, and red clam fins 😋. The aroma is faintly reminiscent of pear or lychee. Kai no Kaiun Hokuroku Polishing ratio 60 ALC 15-16 degrees Sake degree 2 Acidity 1.3 Yeast / Sake Brewer: 310 yeast / Rapid brewing When poured into a glass, it has a slightly amber color. The aroma is mildly fruity? Or is it a koji aroma? 😅. I think it's a slightly dry sake with slight sourness and bitterness in the mouth, followed by a mellow taste, but also slight stimulation on the tongue. 20250828: Gift from my daughter and her husband (purchased at a roadside station in Doshi)

Junmai⭐️⭐️⭐️ Polishing ratio 68%, ALC 14 degrees It's going to be a local sake festival in Shimane Prefecture today 😃. However, the first glass of [Shinigami] was too strong and left a lingering taste in my mouth, so I'm not sure what will happen next 😅. This one is a little amber in color. The aroma is not strong, and in the mouth it is a dry sake with a slightly acidic and bitter taste. This one also has a slight tangy stimulation on the tongue. Sake Breed: Undisclosed ⭐️⭐️ Rice Polishing Ratio: Undisclosed ALC 15 degrees Dark amber in color with an old sake-like aroma, it is dry with a strong acidity in the mouth... It was a very strong sake with a unique and peculiar taste, with a bitter taste that left a lingering sensation in the mouth after drinking. It is not my favorite sake, so I gave it 2 stars😅. Special Junmai Sake ⭐️⭐️⭐️ 100% Bizen Omachi, 60% polished rice ratio ALC 15.5 degrees It was sealed 🤗. The aroma is slightly fruity. When you put it in your mouth, you will feel a mild lactic acid taste. I personally don't like lactic acid taste, so I gave it 3 stars 😅. Chigasaki Nari: 20250812

Bunraku Reborn Raindrop Special Junmai sake Unfiltered Nama-shu ⭐️⭐️⭐️⭐️ The brewer, Kitanishi Shuzo, Ageo City, Saitama Prefecture, was the brewer of "Sairai". Polishing ratio 55%, ALC 16 degrees I drank a little less than I should have 😅. It is a light cloudy sake. The aroma is fruity and the taste is crisp with a pleasant acidity in the mouth. Is it slightly sweet or slightly dry...it is a delicious sake. Chigasaki Nari: 20250812

Junmai Daiginjo-shu ⭐️⭐️⭐️⭐️ Nakadori Kamimoroshiro 80% Sake Mirai produced in Yamagata Prefecture Polishing ratio 45%, ALC 15 I had encountered junmai ginjos made with Sake Mirai in 2020, but this was my first encounter with a junmai daiginjo made with Sake Mirai 🤗. The aroma is fruity like pineapple🍍, and on the palate, there is just a slight stimulation on the tongue, followed by a delicious, mellow umami flavor. Chigasaki Chirori: 20250812
