Sake Breed: Undisclosed ⭐️⭐️ Rice Polishing Ratio: Undisclosed ALC 15 degrees Dark amber in color with an old sake-like aroma, it is dry with a strong acidity in the mouth... It was a very strong sake with a unique and peculiar taste, with a bitter taste that left a lingering sensation in the mouth after drinking. It is not my favorite sake, so I gave it 2 stars😅. Special Junmai Sake ⭐️⭐️⭐️ 100% Bizen Omachi, 60% polished rice ratio ALC 15.5 degrees It was sealed 🤗. The aroma is slightly fruity. When you put it in your mouth, you will feel a mild lactic acid taste. I personally don't like lactic acid taste, so I gave it 3 stars 😅. Chigasaki Nari: 20250812

Junmai Daiginjo-shu⭐️⭐️⭐️⭐️ Nama-shu, Polishing ratio 50%, ALC 14 degrees Naeba Shuzo was the brewer of "Naebayama" 🤗. The aroma was moderately fruity, and in the mouth it had the characteristic shwashiness of nama-shu, with moderate acidity and a lactic acid taste. Chigasaki Nari: 20250812

Bunraku Reborn Raindrop Special Junmai sake Unfiltered Nama-shu ⭐️⭐️⭐️⭐️ The brewer, Kitanishi Shuzo, Ageo City, Saitama Prefecture, was the brewer of "Sairai". Polishing ratio 55%, ALC 16 degrees I drank a little less than I should have 😅. It is a light cloudy sake. The aroma is fruity and the taste is crisp with a pleasant acidity in the mouth. Junmai Daiginjo-shu ⭐️⭐️⭐️⭐️ Nakadori Kamimoroshiro 80% Sake Mirai produced in Yamagata Prefecture Polishing ratio 45%, ALC 15 I had encountered junmai ginjos made with Sake Mirai in 2020, but this was my first encounter with a junmai daiginjo made with Sake Mirai 🤗. The aroma is fruity like pineapple🍍, and on the palate, there is just a slight stimulation on the tongue, followed by a delicious, mellow umami flavor. Chigasaki Chirori: 20250812

Junmai-shu⭐️⭐️⭐️⭐️ Rice polishing ratio 65%, ALC 15%. There is almost no aroma, but when you put it in your mouth, you can feel a slight tingling and shuffling sensation on your tongue. It is a slightly dry sake with a soft umami flavor and a refreshing taste. Today, we ordered Senpo-shi oysters, which happened to be in stock. I think this sake smoothly envelops the rich oyster flavor, and after spreading the mellow oyster aroma in the mouth, it erases it. Chigasaki Chirori: 20250812

Junmai Daiginjo ⭐️⭐️⭐️⭐️ 100% Kami no Ho, Polishing ratio 50%. ALC 15 degrees The brewer was Ota Sake Brewery in Iga City, Mie Prefecture, which makes Hanzo, a local sake in Mie Prefecture. I heard from the master of Chirori that a former Chirori worker had gone independent... and since the store is close by, I decided to haggle and drop by 😅🤗. We had it in a sealed bottle. The aroma is not so strong and fruity, and on the palate, it has a slightly mellow taste with soft acidity and a little bitterness, which gives it a unique habit, but I think it is a delicious sake. Junmai Daiginjo human ⭐️⭐️⭐️⭐️ 100% Yamadanishiki. Polishing ratio 45%, ALC 15 degrees When I put my nose to the glass with the image of a 100% Yamadanishiki Junmai Daiginjo-shu from brewer Kuheiji, I noticed that it was different from the previous Kuheiji 🤔. The aroma was subtle, the taste was sharp and dry, with a little bit of a quirky flavor 😅.
