Junmai Ginjo ⭐️⭐️⭐️⭐️ Sekihara Shuzo Nagaoka City, Niigata Prefecture Polishing ratio 60%, ALC 15 2025/6/17-6/19, the last day of the "Gurutonami Chigasaki 2025" event. From the appearance of the restaurant, I thought it would be a Western-style sake dining bar, but the pamphlet said it was a "sake main" restaurant, so I chose it as one I would definitely like to visit. The ginjo aroma was not so strong, and on the palate, the sake had a mild taste with some acidity, making it a slightly dry sake. The master says that he tries not to serve the same sake as much as possible, and that he gets mainly junmai sake from the brewery, not from the liquor store. Junmai Daiginjo ⭐️⭐️⭐️⭐️ 100% Kami-no-ho from Mie Prefecture Polishing ratio 50%, ALC 15 degrees Yeast MK3 The aroma is subtle, and in the mouth it has a fruity flavor with a hint of acidity, making it a refreshing, slightly dry sake. Junmai-shu 14° ALC⭐️⭐️⭐️⭐️ The shopkeeper recommended this sake, saying, "This sake is interesting and delicious..." The shopkeeper explained that it was a prototype Junmai-shu made by Yano Shuzo. According to the store owner's explanation, it is a prototype Junmai-shu made by Yano Shuzo, and salt is added to the brewing water. The label was cute, so I bought it😅. The aroma is only faintly perceptible. It has a slight amber color. It has a sour taste in the mouth and a little bit of saltiness really. It is low in alcohol, so it tastes a bit like a dry white wine. I thought it was a sake that would go well with white fish dishes, pasta, cream cheese & crackers, etc. as a snack, chilled well and poured into a wine glass. Junmai-shu ALPHA1 ⭐️⭐️⭐️⭐️ Unfiltered, unpasteurized, unpasteurized sake 100% Akitsuho produced in Nara Prefecture Hard water (deep groundwater from the Katsuragi Mountains), rice polishing ratio 70%, ALC 13%. It has a faint koji aroma, and when you take it into your mouth, there is a carbonation sensation that tingles on your tongue from the raw sake, and when it subsides, it is a sharp, slightly dry sake with a slight sourness and bitterness that is well balanced. By the way...[Harazake] means that no water has been added after the moromi has been strained, but strictly speaking, even if water is added at the moromi stage before straining to adjust the alcohol content, it can still be described as [Harazake]. The master explained that since Kaze no Mori does not add water at the mash stage, it is not labeled as unfiltered unpasteurized sake, but rather as unfiltered unpasteurized sake. Junmai Ginjo-shu Princess Michiko ⭐️⭐️⭐️⭐️ 100% Shizukuhime produced in Ehime Prefecture Using flower yeast isolated from the Tokyo University of Agriculture's "Princess Michiko" rose variety. Polishing ratio 55%, ALC 16%. This sake has a fruity ginjo aroma, which is very Junmai Ginjo. It is a slightly dry and crisp sake with a hint of acidity.
