Kinran Kurobe Super dry ⭐️⭐️⭐️ Polishing ratio 70%, ALC 15 degrees This was the sixth type of Kinran Kurobe. It is not so much dry as super dry, but a clear and crisp dry sake. It was not good for my taste 😅. Chigasaki Chirori: 20240910 The 7th kind is a reunion since December 2018 [Nabeshima Junmai Ginjo, 100% Yamadanishiki, Polishing 50%, ALC 16 degrees]. The 8th type was also a reunion since July 2018 [Sawaya Matsumoto Moribashii Junmai Sake, 100% Gohyakumangoku, 15% ALC], so I have updated the existing data.

Hakurakusei Tokubetsu Junmai Hiyoroshi ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 15 A slightly dry, crisp sake with a subtle koji aroma and a good balance of acidity and bitterness on the palate. After the appetizers are gone, we decide to order our usual sashimi platter and choose the fourth type of sake to turn back to. Mitsuo Yamakawa 2024 Aki ⭐️⭐️⭐️⭐️ Manufacturer: Kojima So Honten (Toko Brewery) Polishing ratio 50%, ALC 13%. Slightly koji aroma, a little tongue-tingling on the palate, and a pleasant slightly sweet sake with a pleasant acidity 😋. I have yet to meet only Yamakawa Mitsuo brewed by Otokoyama Shuzo out of the four breweries since I first encountered it at the 2018 Natsu by Mizutobe Shuzo. I'd love to meet him 😅. TSUKIYAMA Tomonori Junmai Ginjo Nao Kumi Nakadori Unfiltered Nama-shu ⭐️⭐️⭐️⭐️ Polishing ratio 55%, ALC 16%. The aroma is faintly fruity, and in the mouth it has the characteristic shwashiness of nama-shu, but it is a calm sake with a mellow and gorgeous taste. Chigasaki Chirori: 20240902

Junmai Ginjyo Watafune No.2 ⭐️⭐️⭐️⭐️ 100% Watafune No.2 (short-stalked ship) Polishing ratio 60%, ALC 13% (undiluted) Tonight's snacks are the first ones of the year...grilled Akinoto fish and sashimi of Kinmedai and Meichi-tai for one person with a half portion each! Finally, the typhoon's influence is gone, and I no longer have to worry about encountering rain when I go out at night, so I went out to meet the new arrival of sake at a familiar store. Ginjo-shu 100% Yamadanishiki⭐️⭐️⭐️⭐️ Summer Moon Polishing ratio 50%, ALC 15%, with alcohol I wanted to finish off my daytime drinking (or was it evening drinking already?). I wanted to finish off my lunch (or evening?) with a bowl of aburi-don, so I stopped by Chirori-san for the second time 😋. To my surprise, they had Nabeshima in stock...I had to check it out 🥰. A blue-black label with a small moon and a forest and the inscription Summer moon... first time we met and sealed the deal... 😆🤣😁. I already had a lot of it tonight at the first [Sake. Toto], but I couldn't resist tasting the first Nabeshima I encountered 🤗🤗. It's a delicious slightly sweet sake with a rich aroma and a soft, mellow and delicious rice flavor on the palate! Junmai Ginjo-shu Nakadori Unfiltered, Selected, Nama-fume ⭐️⭐️⭐️⭐️ Polishing ratio 50%, ALC 14 No description of sake rice I have encountered several Junmai Ginjo-shu Nakadori Unrefined Nama-Zume from Jyushidai, but this is the first time I have not seen the sake rice brand listed, so I decided to register a new one 🤗. The aroma is subtle... there is a slight tingling sensation on the tongue when you put it in your mouth, and as you roll it around in your mouth, you can taste the mild flavor 😋. Hanada Yamahai Junmai ⭐️⭐️⭐️⭐️ 100% Hyakumangoku No Shiro Polishing ratio 60%, ALC 15 I didn't know how to read the kanji for "縹" (縹), so I asked the store owner 😅. It is a slightly dry sake with a subtle malted rice aroma, a sharp taste, a good balance of acidity and bitterness, and few peculiarities unique to Yamahai 😋. Chigasaki Chirori: 20240730

Sensation Blue⭐️⭐️⭐️⭐️ Junmai Ginjo Koshiki Nama Moto Koji rice 100% Yamadanishiki produced in Shiga Prefecture Kake rice: Watabune No.2 from Shiga Prefecture Yeast: Kyokai No.6, in-house strain Polishing ratio 50%, ALC 15 I think this is the same sake with the blue label of Sensation Blue that I met in August 2023, but the label and description ("Kakemai" and "Koshiki Namaoto" were added) are different, so I decided to register it as a new sake 🤗.
