I met this on 7.5.2022, but could not find the original data from Sake-no-wa brand data, check-in data, etc. 😱, so I decided to repost it😳.
The aroma is almost imperceptible. When you put it in your mouth, for some reason, even though it's not a draft sake, there is a tingling sensation on your tongue.
Once the stimulation subsides, I think it is a dry sake with a clean aftertaste.

Where is the goldfish label?
When we looked at the label from the back, we could see the goldfish on the back of the label through the contents.
Furthermore, when I held my hand over the label from the front and made a shadow, I could see the goldfish on the surface of the label as well. This is a very fun label 🤗.
The aroma is only faintly perceptible, and the refreshing taste on the palate gives it a summery sake character.

We had it in the sealed bottle 🥰.
It has a light fruity aroma like lychee, and on the palate there is a pleasant and light stimulation on the tongue characteristic of nama-shu 😋.
Then the umami of rice spreads afterwards and it is a mild, full, slightly sweet sake 😃.

After lunchtime drinking, I got a call from my favorite store that Yamakawa Mitsuo is in stock.
I must get there before it runs out 😅.
And so, I drank alone in the cool of the evening 🥰.
According to the article on the label, it's the 10th anniversary of the Mitsuo Yamakawa project: ㊗️
I think it's a slightly sweet sake with a mild flavor, a little acidity and the deliciousness of rice 🥰.

Yamahai Junmai Miyamanishiki 13 Nama-zake

100% Miyamanishiki produced in Nagano Prefecture
It has a faintly fruity aroma, and in the mouth, there is a slight carbonation characteristic of nama sake, which gives a pleasant sensation on the tongue. After that, the taste of rice flavor spreads in the mouth...it is such a sake.
Because of its low alcohol content, I think it is perfect as a summer sake for a meal.

Polishing ratio 80%, ALC 16%.
Brewed using the same process as junmai-shu, this slightly dry sake has the carbonation characteristic of nama-nazake in the mouth, but with a hip flavor.
This sake is brewed with sake rice grown by Mr. Yamamoto, a motorcycle rider at Yamamoto Sake Brewery in Akita, himself.
I learned for the first time that a sake cannot claim to be "junmai-shu" unless the rice used has undergone a grade inspection.
I guess it is important to use quality-assured sake rice in order to protect the brand quality of "junmai-shu" sake. If inexpensive junmai sake made with poor quality rice becomes available in the market, it will accelerate the shift away from sake 😅.

We have had 8 kinds of sake so far tonight. Since there were 2 types of Jyushiyo that we had already encountered, we decided to have the 9th type for our first encounter with a sake comparison 🤗.
There is not much aroma, but for some reason it tingles and stimulates the tongue in the mouth, and it is a very sharp sake.

Because of the blue label, the master of the store read it as "Ao Kushira" 😄.
It has a faint aroma of malted rice, and when you put it in your mouth, you will feel the unique bubbling sensation of unfiltered raw sake, and a moderate acidity and bitterness will spread.
It is a tasty sake with the umami of sake rice that can be felt in the mouth for a while.
Chigasaki Chirori: 20250513 ましらのやまさんHeaven Nama Hashiwazo Unfiltered Nama ⭐️⭐️⭐️⭐️ ALC 14%.
Light nigori sake, slightly fruity aroma, good balance of sourness and bitterness in the mouth, and the carbonation on the label was almost gone, probably due to the last sip. There was also quite a bit of oli left in the bottle, so maybe that's why it tasted that way😅.

Tonight we had 9 different sakes for the first time, including a new Hououmida brand that we haven't had in a while 🤗.

Using flower yeast isolated from the Tokyo University of Agriculture's "Princess Michiko" rose variety.

This sake has a fruity ginjo aroma, which is very Junmai Ginjo. It is a slightly dry and crisp sake with a hint of acidity.
Today's sashimi platter consists of five pieces of kampachi, salmon, firefly squid, sea bream, and bigeye tuna.
Maybe another 3 hour course tonight 😅.

This is the second sake that uses Tokyo University of Agriculture's "Princess Michiko" flower yeast, after the "Toyo Bijin Junmai Daiginjo" that I met in 2020. ましらのやまさんKoji(Hana)oshiroi Junmai-shu ⭐️⭐️⭐️

Looks like a dobrok😅.
However, when poured into a glass, it is light and almost like makgeolli rather than dobrok.
In the mouth, it tastes like makgeolli, a sake like makgeolli, a light cloudy sake.
