I wonder why they chose the brand name "Honinbo"😅.
Still, I am happy to have found a delicious sake to finish off the meal.

The aroma is weak and the palate is immediately filled with a dry, crisp flavor. It is a delicious 🥰 sake!

It has a koji aroma rather than a fruity ginjo aroma.
It is a slightly dry sake, but I gave it 3 stars because it seems a little off from my personal impression and taste of Junmai Daiginjos😅.

We started with a sweet sake as usual. Tonight was the after-party of the annual kingfish fishing tournament with my fishing friends.
Tonight's main dish was a raw fish with liver and bone crackers, which we brought in and had cooked for us.
I was supposed to bring a kingfish, but... the catch was not good, so I brought two over 30cm long horse mackerels that I caught on the outside and had them cooked for us. We also ordered fried mehikari, tempura of albacore and maitake mushrooms, assorted sashimi (yellowtail, kanpachi, salmon, and sakura shrimp), and seared shime saba (mackerel).
Amber is a slightly sweet sake with a hint of ginjo aroma. The alcohol content is low, so it is just right as an aperitif 😋.

I decided to register a new one because the [shi-bi-en] I had encountered in June 2022 was marked with a blue star and not [Autumn].

The label says "Awakened from a summer's sleep...", which means it is a hiyaoroshi sake... 😅.
The kanji label of "Asama-yama" used to be a bit dowdy, but now the label has a stylish design.
In the mouth, it is a delicious sake with a light flavor, sharpness and umami, and a refreshing acidity.

I had encountered [Akatombo] in October 2022 that was not hiyaoroshi, but this was my first hiyaoroshi.
...but it turned out that Akatombo was originally a hiyaoroshi, an autumn-only product of Senkou. I didn't study enough🙇 (Update added on 2025.11.8)
I had it in a sealed bottle.
I thought it was a mellow, mellow, slightly sweet but refreshing sake.

Tonight's objective is to have a sake brewed by the Hakurakusei brewery under the [Osaka Expo Official License] label 🥳🥰.
It is a unique and delicious sake with a subtle ginjo aroma, a mellow atmosphere on the palate, and then a pungent stimulation on the tongue, followed by a stimulating acidity and bitterness, and then the umami of the rice.

Aragano" means "our" in Japanese.
It does not have much aroma, but in the mouth you can taste the mild and full flavor of Yamadanishiki and the deliciousness of rice, and it is a slightly dry sake.

This is a sake brewed and shipped from 7 different breweries, each brewed by a master brewer who wears glasses. I have never come across this one before, and I wonder when I will be able to get the complete set 😱.
There is almost no aroma, and when you put it in your mouth, you feel a slightly peculiar sourness and bitterness.
I tried it with snacks as a food wine, but personally it was a 3 star 😅.

The Fukkai we met in 2024.12 was a nigori sake, and the sun on the label on the mountain was a red sun. The sun on the label this time was green....

The sake has been submerged at the bottom of the sea since 2023 to mature....
It is slightly amber in color and does not have much of a ginjo aroma.
When you put it in your mouth, you feel the aroma and mildness peculiar to matured sake, but soon the peculiar astringency and bitterness spread. The single rating is 3 stars😅.
It is better to drink it as a food sake when you have leftover food such as today's appetizers, bamboo shoots stew and mozuku vinegar in your mouth, than to drink it alone.
