It has a carbonation characteristic of nama-shu, but since it is 15 degrees Celsius even for nama-shu, it has a mild mouthfeel and a slightly sweet taste with a hint of sourness after being in the mouth for a while. Utashiro - Gekka ⭐️⭐️⭐️⭐️ ALC 14.5 degrees (original sake) Rice polishing ratio: not stated on the label We have had 8 kinds of sake so far tonight. Since there were 2 types of Jyushiyo that we had already encountered, we decided to have the 9th type for our first encounter with a sake comparison 🤗. Junmai-shu Yamahai-brewed Nama-nazake ⭐️⭐️⭐️⭐️ 100% Yamadanishiki from Kushira Polishing ratio 66%, ALC 16 Because of the blue label, the master of the store read it as "Ao Kushira" 😄. It has a faint aroma of malted rice, and when you put it in your mouth, you will feel the unique bubbling sensation of unfiltered raw sake, and a moderate acidity and bitterness will spread. Heaven Nama Hashiwazo Unfiltered Nama ⭐️⭐️⭐️⭐️ ALC 14%. Light nigori sake, slightly fruity aroma, good balance of sourness and bitterness in the mouth, and the carbonation on the label was almost gone, probably due to the last sip. Junmai Ginjo-shu Princess Michiko ⭐️⭐️⭐️⭐️ 100% Shizukuhime produced in Ehime Prefecture Using flower yeast isolated from the Tokyo University of Agriculture's "Princess Michiko" rose variety. Polishing ratio 55%, ALC 16%. This sake has a fruity ginjo aroma, which is very Junmai Ginjo. It is a slightly dry and crisp sake with a hint of acidity. Today's sashimi platter consists of five pieces of kampachi, salmon, firefly squid, sea bream, and bigeye tuna. Maybe another 3 hour course tonight 😅. Chigasaki Chirori: 20250513

The sake bottle itself is a flashy pink 😅. It was sweet, refreshing, and easy to drink. Yamahai Nama Sake ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 15%. Yano Shuzo is the brewer of "Take-no-en" 🤗. From the label, we can only tell that it is a Yamahai and a Nama-zake, but the ori (ori) is settling at the bottom, so it must be a Junmai, Yamahai, light nigori (nigori) Nama-zake.... The owner of the sake store, Hoshido, said, "Be careful when you open the bottle. The cork may fly out. Also, the sake may fizz and overflow soon after opening..." The owner of Sake Shop Hoshidoh told us to be careful when opening the bottle. After opening the bottle, it still fizzes and a little bit of it overflowed from my mouth😅. The aroma is a little sweet and citrusy 😄. When you put it in your mouth, it has a fizzy feeling, a sourness that tingles on your tongue, and a slight bitterness. YASOHACHI SUGINISHIKI⭐️⭐️⭐️⭐️ Namaishige Junmai Polishing ratio: Koji rice 70%, Kake rice 90 Kake rice 90% ALC 13-14 degrees Sake meter degree +17, Acidity 2.1, Association 1101 The aroma is almost imperceptible. When poured into a white glass, it is an amber-colored sake🤗. In the mouth, it feels full of old sake-like wildness. It is a clear, yet full-flavored sake with a rich taste. I thought it would be super dry since it has a sake degree of +17, but it is not so much, and the feeling changes depending on the accompaniment😅. Chigasaki Toto: 20250402
