Mitsuo Yamakawa 2023 fuyu⭐️⭐️⭐️⭐️ Producer: Otokoyama Shuzo (Otokoyama brewery) Polishing ratio 50%, ALC 15%. This is the 8th kind of sake we purchased on our trip to Yamagata 🤗. I finally found Yamakawa Mitsuo brewed by Otokoyama Shuzo and was able to have 4 different breweries of Yamakawa Mitsuo, it took me 6 years since I first met him in 2018 😅. Yamagata's [Pechorazuke], which Mitsuo Yamakawa says makes sake go down... I must have missed it at the souvenir store, I didn't notice it at all😅I'll look for it next time I'm in Yamagata😋. Honjozo Autumn Agari ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 16%, Alcoholic Since we had been purchasing items from our trip to Yamagata, we decided to have a local sake from Kanagawa Prefecture to change things up a bit😅. The sake is dry on the palate with a good balance of acidity and bitterness, with a nice sharpness and rice flavor 😋. The label design is "Fugaku Sanjurokkei Kanagawaoki Namiura" by Katsushika Hokusai, which is the same as the design on the new 1,000 yen bill 🤗. Chigasaki Hoshido: 20241109 purchased 1116 opened

Junmai ⭐️⭐️⭐️⭐️ Uesugi Yonezawa Naoe Yamashiro Kanetsugu [Love Polishing ratio 60%, ALC 15%. This is the 7th kind of sake we purchased on our trip to Yamagata 🤗. The label is named after Naoe Kanetsugu's helmet seal [Ai]... I couldn't help but buy it 😅. I thought it was a crisp, dry, refreshing sake that I would never get tired of drinking on the palate. When pouring it into the sake cup, I put a little more than usual so that the saucer would be filled with [love]... I was drinking it by myself laughing with the memories of my trip 🤗. Mitsuo Yamakawa 2023 Aki ⭐️⭐️⭐️⭐️ Manufacturer: Kojima So Honten (Toko Brewery) Polishing ratio 50%, ALC 13%. Mitsuo met a kappa in a cucumber field. They hit it off and decided to drink sake with freshly picked cucumbers. This is the sixth type of sake we purchased on our trip to Yamagata. ⭐️⭐️⭐️⭐️ At 13 degrees ALC, I think autumn sake is a little richer than summer sake, with a mellow sweetness and slight bitterness. A bottle was sent to my home via home delivery, then divided into two four-packs and two two-packs and chilled in the fridge. Every time I open the cork, I hear a [popping] sound. Mitsuo Yamakawa 2023 Natsu⭐️⭐️⭐️⭐️ Manufacturer : TATENOKAWA SHUZOH Polishing ratio 50%, ALC 13%. Yamagata Masamune, Tatenokawa, Toko, Otokoyama This is the fifth kind of sake we purchased on our trip to Yamagata 🤗. This is the 2023 version of [Yamakawa Mitsuo], which I had not encountered at all last year. I was surprised to find it in a bottle at a liquor store I was told about in Toko, so I bought it and sent it home by courier 🥰. The sake shop is called [Kojima Unosuke Shoten]. Toko's brewery name is Kojima Sohonten... I guess they are relatives 😅. I think this summer sake with 13 degrees ALC has a light mouthfeel with a hint of sourness and some bitterness. Junmai-shu ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 15%. This is the fourth type of sake we purchased on our trip to Yamagata 🤗. In Yonezawa, we did not have enough time to visit Kosaka Sake Brewery due to a visit to Toko's sake brewery. The next day, after eating Yamagata Ramen, we stopped by Beni no Kura in Yamagata City and purchased this 🤗. It's a refreshingly dry sake with a great taste of rice. Akakaruboshi ⭐️⭐️⭐️⭐️ Junmai Daiginjo-shu 100% Miyamanishiki Polishing ratio 45%, ALC 15%. This is the third kind of sake I purchased on my trip to Yamagata 🤗. Today I had an event for my grandson and some members of the group to drink, so I opened two four-packs of Yamagata Prefecture's local sake 😋😅. It is a slightly dry sake with a subtle ginjo aroma, sweetness in the mouth for a moment, followed by a sour taste. Toko Sake by weight: ⭐️⭐️⭐️⭐️ Junmai Daiginjo-shu Dewa Kirari Unfiltered, raw sake 100% Dewa Kirari, 50% rice polishing ratio, 17% ALC I went on a trip to Yamagata Prefecture for two days and one night from 10/28 to 10/29. We got off the bullet train at Yonezawa and enjoyed Yonezawa beef for lunch at a restaurant run by a butcher shop. We walked around Yonezawa castle ruins and enjoyed a few tastings at Toko's Sake Brewery Memorial Museum😃. Then we took the Ou Line to Kaminoyama Onsen and stayed overnight after enjoying Nakajoya's Tempura Manju soft serve ice cream with grains of bean paste topping 😁. The next day we headed to Yamagata, where we toured Kasumijo Park, enjoyed Dondo-yaki, Yamagata Ramen, and sake tasting at Beni no Kura 🥰. At Toko's Sake Brewery Museum, we tasted the sake that was available for tasting & the Junmai Daiginjo-shu unfiltered raw sake that was sold by weight, and decided to purchase this sake and sent it home via cool courier service 🤗. I returned to Tokyo after buying some local sake from Yamagata Prefecture, so the review of Yamagata sake will continue 😄. It has a subtle ginjo aroma, a mild yet slightly dry taste on the palate, and a clean and tasty rice flavor 😋. It's easy to drink and never gets old...well worth the purchase 👍😁😁. Junmai Ginjo Hiyashiroshi ⭐️⭐️⭐️⭐️ Polishing ratio: Koji rice 50%, Kake rice 55 ALC 16 degrees Hiyadoroshi has started to appear 🥰. I went to my usual liquor store looking for a hiyaoroshi that I had never encountered before and chose this Nanbu Bijin🤗. As soon as I opened the bottle, I felt the fruity ginjo aroma. Ten-Taka Kokoro ⭐️⭐️⭐️⭐️ Junmai Daiginjo-shu 100% Yamadanishiki Polishing ratio 50%, ALC 15%. There is almost no fruity aroma, but rather a faint aroma of malted rice. I thought it was a dry sake with a tangy taste on the tongue and in the mouth after the umami of the rice spread out afterwards 😁. Kinran Kurobe Super dry ⭐️⭐️⭐️ Polishing ratio 70%, ALC 15 degrees This was the sixth type of Kinran Kurobe. It is not so much dry as super dry, but a clear and crisp dry sake. It was not good for my taste 😅. Chigasaki Chirori: 20240910 The 7th kind is a reunion since December 2018 [Nabeshima Junmai Ginjo, 100% Yamadanishiki, Polishing 50%, ALC 16 degrees]. The 8th type was also a reunion since July 2018 [Sawaya Matsumoto Moribashii Junmai Sake, 100% Gohyakumangoku, 15% ALC], so I have updated the existing data.

Hakurakusei Tokubetsu Junmai Hiyoroshi ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 15 A slightly dry, crisp sake with a subtle koji aroma and a good balance of acidity and bitterness on the palate. After the appetizers are gone, we decide to order our usual sashimi platter and choose the fourth type of sake to turn back to.
