In the middle of drinking Yamada-Nishiki, I saw an announcement that Yamae-Nishiki is in stock 😳.
I bought it again!
Yamae Nishiki 55% polished, 15% alcohol!
The same Yamanishiki 55% polished was supposed to be Jungin before!
I wonder if the reason it's jun-dai this time is because it's made with yeast #7? I'm not sure 🙄.
Expectations are high because it is Yamae Nishiki!
The opening sound is mf and psh~pow ♫

The aroma is a little citrusy with a hint of lactic sweetness.

The mouthfeel is still a perfect balance of sweetness and fresh acidity with a hint of chili ✨.
Compared to the cotton candy-like sweetness and lactic acidity of Yamadanishiki on the 4th day, the acidity is more pronounced, but the sweetness is still there and tasty for just after opening the bottle.
The bitterness in the last part is also very nice.
Yamae Nishiki has been delicious from day one. 🙂↕️
