It's a new sake from Koryu Sake Brewery, Tarekuchi light nigori. I thought it would be better with a strong flavor than sashimi, so I paired it with chicken nanban with lots of tartar.

It's a different brand from the brewery that makes Okuharima, and they mix a lot of different sakes together to make it. 30BY, so it's been left to sit for a while. It's the kind of sake you want to drink lukewarm and linger over.
It's a regular sake, but it's delicious with a soft umami flavor when heated, and the sweetness stands out when paired with Hine Chicken Ponzu, and the acidity stands out when paired with Crab Cream Croquettes, both of which were delicious.
I decided to buy this because of the freshly squeezed sake and the light nigori, I like the nigori of new sake. The aroma is subdued, the taste is dry and crisp with a touch of alcohol at first sip, and then when paired with oysters, the acidity and bitterness at the end stand out and are juicy and delicious! Grapefruit juice? This is a combination that can go on forever.
