I opened a mouthful of Kaze no Mori at home, which I purchased at a liquor store in Nara. It is a challenge edition sake made from Kinuhikari grapes grown in Nara Prefecture, with a focus on terroir. It has a beautiful berry-like sweetness and a bubbly, champagne-like taste. The low acidity makes it easy to drink and perfect as an aperitif. It is very tasty!

On a weekend trip to Osaka Nara, I discovered Kinjaku's Shiboritate! I had high expectations for Kinjaku Shiboritate, as I had enjoyed the Aki-agari and Densetsu Yamahai Zou last year, and it has a fresh pineapple taste with a nice sharpness that keeps the food flowing. It was a delicious sake that was hard to compare with Shinshu Kamerei, which we also drank together. It is hard to find in the Kanto area, but I will try to get a bottle of the hi-ire version as well.

The first sake in Nagasaki was the YOKOYAMA SAKE SILVER7 Nama-shu by Furusato tax payment. I was looking forward to drinking the Nama-shu because the Junmai Daiginjo GOLD that I met last year on the plane was very good. It is fruity and very easy to drink, and goes well with sweetness. The pairing with sponge cake from Nagasaki was sweet and perfect.

Tozawa Hitogokochi, which was sold only at the sake brewery and Miyajima, a local sake shop in Ueda City, is now available by mail order. It is a very tasty sake with a lighter, spring-like flavor than the Hitogokochi we drank in January. Shinshu Kamerei is by far the most delicious sake of this year. I think it will grow even more delicious when it is laid down to rest, so I will enjoy it slowly.

I bought Akabu's seasonal sake SAKURA for the first time, and since I missed out on buying SNOW and Nigorigo, it's been a while since I drank Akabu's MOUNTAIN last year. It is a 12% sake, so it is very soft to the taste and I drank it quickly.

I purchased Koei Kiku's Anastasia Green, which I had been looking forward to seeing on the market, and opened it immediately. It is a refreshing fruity sake with low acidity, which I consider to be an ironclad delicious sake. I bought too many sake to drink on draft this week, so I will open them as many as I can.

This weekend, we will open a mouthful from Ura-Nabeshima, a Nabeshima assemblage sake. I drank the hi-ire sake last year and enjoyed it so much that I really wanted to try the nama-shu this year. I am glad I was lucky enough to find it. The complex flavors of sweetness and bitterness give a different impression from the regular Nabeshima, but the freshness of the nama-shu makes it easy to drink. This is delicious.

My first Iwaki Kotobuki was served in the hanpukai. I think this is the first time for me to drink sake made from Koshihikari rice. It is a nigori sake with a fizzy, fruity, sweet, and tasty flavor, and I finished it in no time. It has no bitterness, which is often found in nigori sake, and is very tasty. It is perfect as an aperitif.

I was looking forward to the once-a-year Kuroryu's raw sake, Hiira Kotobuki, and this year I successfully secured it again. It is a pure Dai-spec sake with a very delicate and elegant sweetness made from Tojo-produced Yamada-Nishiki sake polished to 35%. The metal lid has been replaced by a glass cork lid, which may not be to everyone's liking, but it is a tasteful product with a luxurious feel. It is easy to drink, so it is easy to drink and enjoy.

February was a busy month and I didn't have much time to spare. After taking a break, I opened a bottle of "OFFdry", a noble sake from the distribution program of Gakki Masamune. I don't usually like to buy noble sake other than yonotori, but when I'm tired I like sweet sake, so I opened the bottle and found it to be a very clean and dry noble sake, a delicious sake that defied my expectations in a good way. I'm sure you can't go wrong with Gakki Masamune(๑˃˂˂)

The first Yui Yui was a limited edition sake from the hanpukai. I was told that the brewery is owned by a female toji, so I opened my mouth imagining a gentle sake like Amami or Genmai, but it was a very easy to drink, sweet and gentle sake. It was a very sweet and gentle sake that was easy to drink. I think I will be able to sleep well early on Sunday night.

This weekend, we'll start with Yamae Nishiki from Kameirei in Shinshu. Recently, it sells out on the same day it arrives, even on weekdays, so I managed to catch it while I was at work. I love Mikotsuru Yamaenishiki from Nagano, but the one from Kamearei is exceptional! It has a fruity flavor reminiscent of pineapple and apples that is sweeter than Hitogochiki, and the crispness and sharpness of the Shinshu Kamearei mark is pleasant. We are planning to use Yamadanishiki in March (๑˃̵ᴗ˂̵)

I'd love to go out for a drink, but it's that time of year again, so I'm going to start drinking at home! It's been a while since I've had a bottle of sake, and this one was lightly nigori. The balance between the bluish bottle and the label design is very beautiful as a product. The subtle melon aroma and the perfect balance of sweetness is not flashy, but it has a smoky silver quality that is typical of Tasake. I'm really looking forward to opening it, as I was recommended a variety of drinks at the liquor store that I've never had together.

Kamikawa Daisetsu's Tokachi Junmai Daiginjo, which was served in JAL's F class in December, was available at the sake brewery's online store, so I popped in. Kamikawa Daisetsu has a wide range of products, from Honjozo to Jundaiseki, and I've never been disappointed. It has an exquisite melon aroma and a gentle sweetness like wasanbon, and the acidity is also to my liking. I think I'm going to get the Ginpu Junmai Daiginjo as well (๑˃̵ᴗ˂̵)

When I was watching TV last night, I saw a special on the Shinsei Sake Brewery on E-television, so I pulled out the Shinsei from the refrigerator and compared them. I thought how hard it must be to brew sake rice without pesticides in a marginal village, but I was also fascinated by the beautiful scenery. I don't really follow Shinsei that much, but I love Yono-tori and capture it whenever I see it. I'd like to try a bottle of Yono-tori Spark once.

On the way home, I found some Nabeshima Yamadanishiki at a liquor store and secured it. Nabeshima's sake is very fresh even when it's not raw, but I'm looking forward to drinking it this time of year. It was a well-balanced sake, not too sweet like New Moon, but with a hint of bitterness. hp shows that there is an auberge at the brewery, I would like to stay there someday.

I had to reduce the amount of nigori sake in my refrigerator, so I opened a bottle of Futaragi, which I bought at the end of last year (I think). I was afraid to open it because the sparkling sake I drank in the summer was very healthy, but it was chilled in the refrigerator, so I opened it safely. The Futaragi is always nigori (muddled) and fresh, so we were not disappointed and it was really good! I wish I could have bought the Chinese zodiac label.

It's been a while since I had a bottle of Mimurosugi. I remembered that the flagship sake that was recommended to me at the liquor store before was very beautiful, but since it was a brand that I saw quite often, I kind of put off drinking the others. It's like Kaze no Mori from Nara Prefecture, and it's definitely good no matter which one you drink. It's not too sweet, but it has a beautiful oriental flavor that makes it really easy to drink.

The first Shinshu Kamearei of the year was a Hitogochi Junmai Ginjo. I managed to snag the last bottle at the store on my way home from work, and was glad to be offered a bottle. It has a minerally effervescence and a sweet melon ginjo aroma with a perfect balance of clean flavor and bitterness. Shinshu Kameari is good both as a fire-hardened and raw sake. Next month, they will be adding my favorite Shinshu Kamearei sake, Yamameganishiki, so I hope I can find it (๑˃̵ᴗ˂̵)

When I went to pay my first visit to Narita-san last week, I stopped by a liquor store called Aono Shoten and got my first bottle of Machida Shuzo sake. I've been wanting to try it for a while, but I haven't seen it around. I had a hard time deciding between the Nigori and the Nigori, but since I've been drinking a lot of Nigori at the end and beginning of the year, I decided to buy the Direct Pumping. I had a hard time deciding between the nigori and the nigori, but since I've been drinking a lot of sake over the New Year's holidays, I decided to buy the direct-pumped version. It's a modern sake, but I like the fact that it has quite a bit of sake in it.
