100% Hitogochi rice produced in Iiyama. This is a special sake, sparkling pure sake, in which the natural carbon dioxide gas produced by the fermentation of yeast is locked in with the skill of a master brewer. It is light and crisp, with a gentle sweet taste at 12% alcohol by volume.

It's a gold carp from Seimasamune 🍶. I couldn't drink it in Nagano so I went to Shinbashi to drink it lol The aroma on the nose is slightly sweet like molasses. In the mouth, it has a sweetness reminiscent of refined Japanese sweets like Wasanbon and the clear and smooth flavor of Yamae Nishiki. It is very tasty and sweet because it is made from highly polished rice in a four-step process. This is a sweet 😊. The third one is the Seimasamune brewery, about a 10-minute walk from Shinshu Nakano Station on the Nagano Electric Railway Nagano Line. The president of the brewery was available to us and said that they currently produce about 100 koku of sake. I was surprised at the surprisingly small number.

The softness and mellow flavor of glutinous rice can only be obtained from "four-step glutinous rice brewing. Unlike the yellow and red varieties, it is mellow with a low acidity. It has a good balance of floral and umami flavors.

Carp series we encounter often these days. Today it's the light blue Summer Carp. It is a draft sake made by polishing Nagano rice to 59% and brewed with glutinous rice in a four-stage hot-kettle process. This year, white malted rice was used for some of the malted rice to bring out a more refreshing taste. It has a firm, elegant sweetness reminiscent of cotton candy, white bean jelly fruit punch, lychee, and wasanbon. It also has a mild acidity, and its refreshing taste is truly a carpe for summer!

We learned of the store's existence through an Internet search and made a detour to visit. Among the many sakes available, we chose this brand, which is not sold in the neighborhood. When the bottle was opened, it had a fruity aroma. In the mouth, it had a chili-like flavor, with a rich sweetness and a good acidity. It was gorgeous and delicious, and I would like to drink a different sake rice. We also had a comparison of the 16th generation Kuroemon sake. All were delicious, but the Omachi was my favorite of the three.

Another round of drinks at Shinshu Osakemura near Shimbashi Station. Shinanotsuru's Natazou Juicy and quite good quality in a stable if not so much that it sticks out. When it comes to Shinanotsuru, Takeshon-san I have a strong image of it because Mr. Takeshon repeatedly said that "Gantaku" is delicious. I'm looking forward to drinking Gantaku someday 😊.

☀️ Masamune hunters go today🍶. Lucky Masamune is a lucky Masamune ✌️ and my main goal was here. I looked up Masamune that had not been tasted in Nagano Prefecture and found that this store had it... so I came here to shoot for it 🎯. It was originally called Omi Neko Masamune, but Maihime Shuzo took over the brand name when the brewing business closed 😸. White cat 🐈. It has an amber hue 🟡. The sweetness is mainly sweet and sour, with a mild yogurt taste and a tangy sourness. There is a hackberry-like sensation that clears the throat, and despite the cat label, it seems to be closer to the classics 😺. Hachimare: 🐈‍⬛ This one is clear. It has a light sweetness with a slight astringency 😙. If you like a fresh, clean, clear throat, this one 💁 is for you 😸. Nice Masamune👍
