Today we explored daily sake at Koyama Shoten, the Disneyland of local sake. I was in search of an inexpensive bottle of sake that would be good during dinner, and decided on Toyoka. And if it was a special order from Koyama Shoten, it was sure to be delicious! Well, open the bottle........it's a draft sake, so it has a fresh gasiness and a refreshing sweetness that spreads out. As a mealtime sake, the lingering alcohol taste also enhances the food. It goes well with fish, meat, and anything else. Recently, I have been unintentionally buying sake from breweries in Nagano Prefecture. That is why Nagano Prefecture produces such excellent sake.

Since it is summer sake month, fruity and refreshing sake choice Malic acid yeast. Simply by this phrase alone, my taste fantasies spread and I purchased it! After opening the bottle, the freshness of the acidity stimulated my mouth! The taste is also white wine-like. Some people may find the acidity too strong, but as the day goes by, the acidity with sweetness and umami is really pleasant. This is a summer sake that is recommended not only as a mealtime drink, but also as a nightcap before going to bed.

First time in Kyoto To be honest, I bought it by the packet. The content is 500ml and the price is easy to buy. The taste is rich. The umami of rice spread out, and I also felt the accent of bitterness. Unlike the fresh image on the package, this is a robust summer sake. After drinking it, I learned that it is recommended to drink it on the rocks. I will try it next time. Postscript When drunk on the rocks, the sweetness opens up even more and it is easy to drink and tastes great.

We opened a bottle of Ichigo🍓, a so-called "Strawberry" from Imi that we were able to get last month. When you pour it into a glass, it has a sweet aroma, and when you put it in your mouth, the moist and extremely sweet flavor spreads out, and the sweetness with a second sourness lingers after it passes the throat. The aftertaste is exactly 🍓. There is no alcohol stimulation at all, and the mouthfeel is smooth. This is irresistibly delicious 🍒 and recommended for sake beginners. Well, it is difficult to obtain, but I want to let many people know how delicious it is.

This is my 50th check-in! And it's my first time in Saga Prefecture, so naturally I chose Nabeshima! Slightly gassy, sweet, delicious, juicy, and well-balanced... this is Nabeshima! It is a perfect accompaniment to a meal, and it has a nice sharpness that enhances and resets the dish. The 50th bottle of Pon-Shu, and again, a Pon-Shu beginner was shocked!

My favorite Hanamup. This time it is Akita Sake Komachi with a divine orange label. When the bottle is opened and poured into a glass, it has a sweet aroma typical of Hanamup. In the mouth, it gives the impression of sweet and sour with less of the rich sweetness of Hanamup. At the end of drinking, there is a slight accent of bitterness and the umami of rice. It is naturally delicious as a stand-alone dessert sake, but we also recommend pairing it with sashimi and sushi as a mid-meal drink.

We opened a bottle of Imi BLACK, which we were able to purchase last month. It has a more robust and heavy bitterness than expected, a piquant spiciness that stimulates the tongue, and leaves a long aftertaste of bitterness again with the umami of the rice and a follow-up! It was a classic, mature sake that was the complete opposite of the modern taste of today's sake. This sake is more of a food sake than a stand-alone sake, and can be paired perfectly with fish and rich meat dishes.

First conquest of Kumamoto The first impression upon opening the bottle was of sour muscat juice, and if you weren't told it was sake, you might mistake it for sparkling white wine or cider. The third bottle of Kangiku Immediately after opening the bottle, there was a sense of gas and a juicy flavor of rice. The mouthfeel was clean and crisp, and a slight bitterness was also felt. After all, this refreshing feeling is a characteristic of Kukai! It went well with sashimi. I want to buy Kangiku's series when it is released!

The second bottle of Kangiku The label on the bottle confirms that it is delicious! The review says it has strong fizz, so I carefully open the cork... It is indeed strong, but I succeeded by opening it slowly... The first impression when you open the mouth is a fizzy sensation that stimulates the tongue, a yogurt-like sweet and sour acidity, and a juicy rice flavor that spreads out after intertwining with the orikiri. Ahhhh, so good! As the intoxication progresses, one forgets that it is sake... We enjoyed a blissful evening with firefly squid as a side dish.

The second dinghy This time it is a limited nigori sake. Since it is reasonably priced, we chose it for everyday drinking this month. It is a blend of nigori from daiginjo, kasenjo-shu, and other types of nigori. It has a refreshing taste with a low sweetness. It has a nice sharpness, so it can be used as a mid-meal drink.

A very dry beginner finally got his hands on it. a.k.a. Red Bakken We served it with fatty bonito. It has a clean ginjo aroma, and when you put it in your mouth, it goes right into your mouth, a fusion of subtle sweetness and spiciness. Indeed, there was a slight spiciness at the end of drinking. However, the stereotype of super-spicy sake has been overturned again with this bottle. I bought a bottle of this as an everyday sake, and I was right.

Hokkaido conquest! As I thought, we chose Kamikawa Taisetsu Junmai for our first time in Hokkaido. I heard that it is sold at Seicomart in Hokkaido. I guess you could compare it to Sawanoi or Tamanboast in Tokyo. Now, let's open the bottle and enjoy it with shishamo. A refreshing acidity spreads in the mouth! The end of the bottle is a clean cut, and it enhances the deliciousness of the meal. When drunk on its own, it has a dry taste, so I think it is suitable as a food sake. I have not tried it, but I think the flavor of the rice will be enhanced by heating it up to lukewarm or hot. I will try it at a different temperature next time.

My favorite Hanamup! And the first Sake Mirai Get! The sweet rice flavor characteristic of Hanamup on the palate. And yet, the sweetness cuts through cleanly and smoothly! Every time I drink it, I groan at how delicious it is! We paired this luxurious sake with Kadokami Gyorui's premium Tekkamaki (380 yen). It's the perfect evening drink!

First conquest of Ishikawa Prefecture! I received nigori sake from Kikuhime! Impression as a nigori sake lover This is the best nigori sake! Sweet and smooth! It has a nice sharpness after drinking, and it makes you drink more and more! Conclusion: If you drink nigori sake at home, I highly recommend it! I have had bitter experiences of not being able to go home or losing my memory when I start drinking nigori sake at a restaurant... but at home, I can drink it all at ease. And it's cheap!

First time in Kanagawa! The price is reasonable because it is a honjozo! Nigori-like sweet aroma after opening the bottle. The mouthfeel is refreshing, with just the right amount of sweetness and a crisp acidity that doesn't linger. I can't help but drink too much nigori sake, I'm halfway through...

First time in Nagano Prefecture I will start with the Ding series, which is the most reasonably priced. It is said to be made with super soft water, and the soft rice flavor spreads across the entire palate. As you drink it, you will get used to the alcohol taste that tingles on your tongue, and you will also feel the lingering sweetness. The body of the wine is firm, so it would go well with light dishes.
