Hokkaido conquest!
As I thought, we chose Kamikawa Taisetsu Junmai for our first time in Hokkaido. I heard that it is sold at Seicomart in Hokkaido. I guess you could compare it to Sawanoi or Tamanboast in Tokyo.
Now, let's open the bottle and enjoy it with shishamo.

The end of the bottle is a clean cut, and it enhances the deliciousness of the meal.
When drunk on its own, it has a dry taste, so I think it is suitable as a food sake.
I have not tried it, but I think the flavor of the rice will be enhanced by heating it up to lukewarm or hot. I will try it at a different temperature next time.

I have had bitter experiences of not being able to go home or losing my memory when I start drinking nigori sake at a restaurant... but at home, I can drink it all at ease. And it's cheap!

I will start with the Ding series, which is the most reasonably priced.
It is said to be made with super soft water, and the soft rice flavor spreads across the entire palate.
As you drink it, you will get used to the alcohol taste that tingles on your tongue, and you will also feel the lingering sweetness. The body of the wine is firm, so it would go well with light dishes.
First time in Yamanashi
Spring limited sake, but reasonably priced.
From the aroma, you can taste the flavor of rice. It is described as dry. It has a fresh and fruity taste with a hint of orikake. It is easy to finish drinking. It is perfect for sashimi and sushi. I learned the high level of Shichiken.
First time in Aichi Prefecture & First time in Joshipin Kuheiji
We received a bottle of limited-edition sake, light nigori!
Immediately after opening the bottle
I expected the sweetness to come to the forefront due to the light nigori, but instead of sweetness, fresh and clean acidity and the umami of the rice spread. It finishes with a lingering bitterness. It is a masterpiece of perfection. Of course, it can be easily matched with any dishes, Japanese, Western, or Chinese. I will reserve a bottle for next year.

I want to keep a bottle of this sake on hand at all times.
First Yamagata & Eiko-Fuji
Immediately after opening the bottle, the crisp gaseous sensation and sweet and sour taste spread out! You can't help but exclaim, "Ohhhh, yum! It is also creamy and you can enjoy the rice flavor and lingering aftertaste. It is a fruity wine, but it goes well with any meal.
It made me want to win all of the Eiko-Fuji series (lol).
The first chrysanthemum
First, drink only the supernatant without any orikura.
You can feel the fizz immediately after opening the bottle and it is light to drink.
A lingering sweetness gradually spreads and passes down the throat... delicious... no wonder it is so popular!
Next, when you mix it with ori, the moist flavor of the rice increases and it becomes even easier to drink.
The sweetness is present, but it does not interfere with the meal, so it is perfect as a food sake.
From the bottle design to the taste, it seems that they are pursuing the current trend. We will continue to follow the trend of Kangiku!
Hatsu Morishima
In the mouth, there is a sense of gas and refreshing acidity right after opening the bottle. It is very smooth with no alcohol or bitterness catching in the mouth until it passes the throat. It is a very versatile sake that goes well with anything, even as a food sake.
It is also a good choice for beginners. Recommended for beginners.
This is the third bottle in the Kaze no Mori series!
This time it is Yamada-Nishiki 807 Junmai, unfiltered, unpasteurized and unpasteurized sake.

Kaze no Mori is known for its ultra-hard water. It has a crisp, bubbly taste, rice flavor and umami, and a mineral taste that can only be achieved with hard water. It is a stable high level of quality. Of course, it is great with fish, meat, and Chinese food.
The theme of this purchase was junmai sake, the best sake for food.
We chose Kaiun, which was recommended by the owner.
In the mouth, it has a refreshing acidity and a voluminous alcohol content of 17 degrees, and the full flavor of the rice spreads. After the second glass, the sake's umami was even more pronounced, and I was able to enjoy a pleasantly tipsy mood with the oden.
First sake from Saitama Prefecture
The moderate acidity and sweetness, like squeezed white peaches, fill the mouth, and the lingering aftertaste turns into the juicy deliciousness of rice and falls down the throat cleanly.
It is a perfect balance that is irresistible to lovers of modern sake and will keep you drinking as much as you want. This is recommended for beginners, but I wonder if this is also a type of sake that is not available. We are blessed with good restaurants. Thank you very much!

The first time I drank the wine, I was surprised at the taste of the rice. The wine is a very good one, and it is very good for a dinner. Junmai Ginjo is supposed to be a stand-alone drink, but it has a sharpness, so it could be a perfect match with a meal.
