This is my third immovable this year. The taste is so good that I buy it immediately when it arrives at the direct sales store. This time it is a Junmai Ginjo from Bizen Omachi. When you hear that it is fruity and full of flavor, there is no doubt about it. First sip after opening the bottle The sweetness spreads smoothly and without stimulation. The sweetness is really juicy, and the lingering aftertaste continues even after the sake has passed the end of the throat. I am sure that modern sake lovers, including myself, will be raving about this sake.

Long time no see, second one in the Wind Forest. This time, it's a dewy-leafed 807. The fruity taste and acidity spread first, followed by the umami of rice and bitterness, and a long aftertaste after passing the throat. The slight carbonation immediately after opening the bottle is also refreshing. It is a reasonably priced sake that I would like to drink every day. Kaze no Mori is a LEVEL sake!

The first opening of "Yamori" by Toshimaya Sake Brewery in Higashimurayama, next to the city where I live. As you might expect, I misidentified it as [Gecko], but it is Okunomi. Well, I can't read it. This time, I tried it in a four-pack bottle for ease of drinking. When poured into a glass, it has a gorgeous ginjo aroma. When you put it in your mouth, the condensed flavor spreads. After passing the throat, a slight spiciness lingers in the aftertaste. As a food sake, it goes well with rich dishes such as Chinese food.

I decided to choose a sake with acidity that would soothe the summer heat, and discovered a sake that I had been curious about in the reviews. The first impact was still the "white wine" that I had seen in the reviews. And the acidity is like yogurt. (Laughs) However, as you continue drinking, the rice flavor lingers in the aftertaste, and it is a devilishly delicious wine that will make you turn your glass away from the bottle with ease. I think this is perfect as an aperitif or a nightcap before going to bed.

Second bottle of this year's Fudo! The last bottle of Oragami was so delicious that I immediately bought it when I heard it was back in stock at the liquor store. The owner warned me to be careful when opening the bottle, but it still spilled...but the freshness of the bottle gave me high expectations! The lingering taste was also long. Some people compare it to pineapple or melon, but it is more rice. This straightforward assertion is brilliant. Personally, I would use it as a dessert sake before bedtime to accompany a tipsy sleep.

I was in a hurry to find something refreshing to go with lunch, so I brought home a bottle of Raifuku's Summer Sake, which I had read good reviews about. We chose tuna sushi as our entrée...and as expected, the sake passed down our throats refreshingly right from the start. As expected, the sake was refreshing from the start and passed down our throats. It showed its ability as a by-product to enhance the flavor of the sushi.

This is the first time to drink Kido. Kido has a wide selection, so it was hard to decide, but after discussing the price, I chose "Junmai Ginjo Haru no Kaorufu," a limited edition spring sake. Without any prior knowledge of Kido, the label suggests a fresh and fruity taste. The first impact is not so sweet. The first impact is not so sweet, but there is a slight gassy feeling on the tip of the tongue and a light, but not dry, taste that spreads smoothly on the palate. The umami of the rice also spreads in the mouth refreshingly and ends with a long aftertaste of bitterness. This is my first Houou Mita. This was another brand I wanted to try as soon as I got hooked on sake! Fortunately, a liquor store near my office was carrying it, so I made the long-awaited choice. When I opened the bottle and poured it into a glass, I could smell the ginjo aroma. The taste is clean and smooth, with a touch of sweetness on the tip of the tongue, followed by a soft acidity, and the umami of the rice. The refreshing feeling makes you drink too fast, and before you know it, you have consumed half of the bottle. Sushi and sashimi go perfectly with this wine.

After drinking Hanamaru Omachi and experiencing the wonderfulness of sake, I became a Hanamaru fan! When I heard that Dewa Sanzan was now in stock, I immediately bought it. The impression is that it is less mellow and sweet than Omachi. The umami of the rice spreads directly to the palate and stimulates the taste buds. The aftertaste is light and crisp. After all, it is different from Omachi. The total balance of the sip is excellent, and it is perfect as a mealtime sake. Hanayuup is really good!

The Machida Brewery was chosen again! When you put it in your mouth, the rich rice flavor spreads out as if it were familiar. The price is also great (1,540 yen for a 4-pack)!

This week's choice is "Saku Enochi" from Mie Prefecture. Of course, I knew Saku by name, but this was my first time to buy it. There are many varieties, but I chose Enochi without prior knowledge. The taste of the rice is very mildly sweet and the flavor of the rice spreads on the palate. This is a perfect match for sushi and sashimi. The refreshing sharpness that goes down the throat also showed the quality of the brewer. I guess you could say this is sake that is neither modern nor classic.

The liquor store warned me to be careful not to spill the bottle when I bought it, so I opened it slowly. As I expected, the moment I opened the bottle, bubbles started to appear. When I poured it into a glass, the glass was covered with bubbles as if it were a carbonated beverage and not sake anymore. The aroma was fresh. The only word that comes to mind is "delicious" because of the gaseous and silky sweetness in the mouth. The other day's Sentori Yukidaruma was impressive for its lingering sweetness, but this nigori has a wonderful freshness that cuts through the sweetness. It is so smooth and easy to drink that one forgets to drink a chaser between drinks to enjoy the taste. This is a complete sake beginner's killer. Again, a taste that overturns the concept of what is possible. How deep the sake swamp goes...

Thanks for your hard work this month. So today in the Sake Swamp Series, I brought home a bottle of Akita Prefecture's "Isshaku Suisei" special junmai sake Ryoshin. It is reasonably priced at 2,530 yen. The juicy and sweet taste first spreads on the palate, followed by a soft acidity and a lingering rice flavor. The balance of these parameters is excellent, making it perfect as a food sake. There is a Ichibakusuisei distributor near my office, so I intend to enjoy a variety of this series as well.

Hard-to-obtain sake? It is said to be a "hard-to-find" sake, but there are some places in the west of Tokyo where you can find it. I bought it immediately because there was a US version and a bottle of it on the shelf. Well, I opened the bottle and took my first sip! The sourness spreads in the mouth along with a slight sparkle. The sourness changes to the umami of the rice and the sweetness characteristic of nigorizake as it passes the throat, and disappears with a tangy aftertaste. I like Nigori-shu and have drunk many kinds of Nigori-shu, but I can see why it is so popular in terms of balance. Personally, I don't like lingering acidity, so the delicate flavor of Yukidaruma is truly delicious. I would like to make it a regular winter drink every year.

I got hooked on sake swamp and already bought a bottle of "Hanamamup" Junmai Ginjo Omachi, which I was already looking for! I was so hooked on the sake swamp that I bought the "Hanamup" Junmai Ginjo Omachi that I had been looking for. I couldn't help but drink it when I heard that it tasted like Jyushiyo, a sake I probably never had the chance to drink. I couldn't resist and opened a mouthful right away! What is this? Mellow sweetness spreading in the mouth... The delicious taste of rice seeping down the throat and ending with a crispness that cuts off any lingering aftertaste... This is the depth of sake... I would like to say thank you, rice! I would like to drink it by itself at a calm time rather than with a meal.

This time, too, I chose a brand that is a regular on the ranking list. Fortunately, there is a liquor store near where I live that specializes in Kaze no Mori, so I will continue to patronize them. The first bottle was a standard Akizuho 657, which had a lot of slight effervescence when poured into the glass, and a fruity aroma. When you put it in your mouth, you can feel the gas and the flavor of the rice spreads out. The coolness and fruitiness lingers in the aftertaste. The satisfaction of each sip is very high. It has a thick mouthfeel, so it would go well with meat dishes or yakitori (grilled chicken).

The first bottle of Sentori series was opened. Since I am a beginner, I decided to start with the popular ones. Sentori is recommended by YouTuber "SakeLabo," so I wanted to try it first. The Classic Omachi also has a soft acidity with a gaseous taste that spreads on the palate. If I were to use an analogy, it would be the sweet and sour taste of fresh strawberries in the mouth. I was surprised that it is not as sweet as I expected. So personally, I would say it is not a dessert sake, but more of a food sake that goes well with sashimi. I am looking forward to drinking the other sakes in the series!

I chose Otters as my first step into the sake swamp. This was my first time to buy a bottle of Otters. I used to buy sake only at supermarkets and chain stores, so I only just now realized that there are many liquor stores where I can buy sake at a fixed price. My tastes are fruity and umami, so I define Otters 45 as the royal road and the basic taste of Otters. The sweetness and umami of the rice spreads in the mouth, and the taste spreads down the throat without an alcoholic attack. It goes well with toro and fatty sashimi. I will continue to be addicted to sake that surpasses Ottersai. 4649!
