First time in Aichi Prefecture & First time in Joshipin Kuheiji We received a bottle of limited-edition sake, light nigori! Immediately after opening the bottle I expected the sweetness to come to the forefront due to the light nigori, but instead of sweetness, fresh and clean acidity and the umami of the rice spread. It finishes with a lingering bitterness. It is a masterpiece of perfection. Of course, it can be easily matched with any dishes, Japanese, Western, or Chinese. I will reserve a bottle for next year.

If it's your first time in Iwate, you must be an akatake! We started with a Junmai sake. When you put it in your mouth, you will feel the soft sweetness and the delicious taste of rice. First Yamagata & Eiko-Fuji Immediately after opening the bottle, the crisp gaseous sensation and sweet and sour taste spread out! You can't help but exclaim, "Ohhhh, yum! The first chrysanthemum First, drink only the supernatant without any orikura. You can feel the fizz immediately after opening the bottle and it is light to drink. A lingering sweetness gradually spreads and passes down the throat... delicious... no wonder it is so popular! Next, when you mix it with ori, the moist flavor of the rice increases and it becomes even easier to drink. The sweetness is present, but it does not interfere with the meal, so it is perfect as a food sake. From the bottle design to the taste, it seems that they are pursuing the current trend. This is the third bottle in the Kaze no Mori series! This time it is Yamada-Nishiki 807 Junmai, unfiltered, unpasteurized and unpasteurized sake. Polishing ratio 80 Alcohol 16%. Kaze no Mori is known for its ultra-hard water. It has a crisp, bubbly taste, rice flavor and umami, and a mineral taste that can only be achieved with hard water. 23rd sake purchase of the year! I chose my favorite sake, Misato Nishiki from Hanayu, for the end of the year! This is the third bottle this year after Omachi and Dewa Sanbai! When you put it in your mouth, you will feel the fresh sweetness and umami that is typical of Hanayu. The taste is stable and delicious........ It has been a long time since I bought a dry regular sake. Higashimurayama Dry Sake" by local brewer Toshimaya Shuzo. It was a refreshing sake, perfect for the bonito sashimi. This time we started it with nabe (hot pot) and sashimi as a mealtime sake, and its juicy sweetness conversely turned into a refreshing aftertaste by the time it passed down the throat. The juicy sweetness of the sake does not interfere with any of the ingredients, and on the contrary, it enhances them, making the sake easy to drink. This was my first Naraman, and I was very satisfied with it.

The first opening of "Yamori" by Toshimaya Sake Brewery in Higashimurayama, next to the city where I live. As you might expect, I misidentified it as [Gecko], but it is Okunomi. Well, I can't read it. This time, I tried it in a four-pack bottle for ease of drinking. When poured into a glass, it has a gorgeous ginjo aroma. When you put it in your mouth, the condensed flavor spreads. After passing the throat, a slight spiciness lingers in the aftertaste. As a food sake, it goes well with rich dishes such as Chinese food.

I decided to choose a sake with acidity that would soothe the summer heat, and discovered a sake that I had been curious about in the reviews. Second bottle of this year's Fudo! The last bottle of Oragami was so delicious that I immediately bought it when I heard it was back in stock at the liquor store. The owner warned me to be careful when opening the bottle, but it still spilled...but the freshness of the bottle gave me high expectations! The lingering taste was also long. Some people compare it to pineapple or melon, but it is more rice. This straightforward assertion is brilliant. Personally, I would use it as a dessert sake before bedtime to accompany a tipsy sleep.
