Small bottle from the supermarket. It is slightly sweet with a hint of rice flavor. I thought it would have a dry aftertaste. I paired it with prepared dishes from the supermarket and sushi. Well, it's not bad, but I can't say it goes well with it. The sushi was also not bad, but not too bad either.

It was sold at a local supermarket. Clear and dry. The label says it is fruity, but I don't feel that. Rather, it tastes strongly of alcohol like spirits. It seems to be a favorite of both people. Unfortunately, I don't like it. It goes well with sushi. Also, when I serve it with soy sauce, I can feel the sweetness of the soy sauce, but I think it is because it is a sushi soy sauce. Steamed red snow crab, which is not in the picture. This is a good combination. It might be better with lukewarm sake.

We went to Imanishi Seibei Shoten, which makes our favorite "Harushika". The limited first bottles were already sold out a few weeks ago. But they have new sake, so I bought this limited edition for sale at the brewery. It seems that there are only a few bottles left. I bought it without hesitation. It is tangy, dry, and rough on the palate, but rich and thick. It also has a nice aroma. This is delicious. The pairing was, of course, Kakinoha Sushi, also from Nara. It also went well with the sushi. It is delicious.

I bought it at the same time last year at a department store display and enjoyed it so much that I bought it again this year. I have already forgotten the impression I had last year, but it is still delicious and to my liking. However, I am not as impressed as I was last year. It has a sweetish mouthfeel and is rich but dry. A nice quality that can be enjoyed with just sake. As for pairing, it goes well with sashimi. I mean, it probably goes well with soy sauce. The grated horseradish was kept in the refrigerator for a long time, so there is almost no aroma when it is grated. It is just spicy. Nadaman's prepared dishes are neither good nor bad. I mean, the choice of paired dishes was Nadaman's side dish and sashimi. Exactly the same as last year.

I received this as a tax return gift from my hometown. It was dry and refreshing, but on the palate I felt a sense of maturity for a moment, maybe because it was bottled a year ago? After that, I felt a bit of a cloying taste. It is not too assertive, so it might be easy to match with food. I paired it with a bowl of rice topped with seafood. I felt the sake was too sweet with soy sauce. Well, I guess it goes well with it. I wrapped it with nori (seaweed) and it turned out good. Roasted ginkgo added later is neither acceptable nor unacceptable. Pickles (takuan (pickled radish) and ponzu pickled daikon (Japanese radish)) are also good.

The 6th cup at Yuzenjin Tahata-san I don't remember the taste anymore. I didn't even take notes. Here is an excerpt from the label on the back. The aroma is fresh and youthful, and the flavor is bursting on the palate. Soft, newborn mouthfeel." I don't even remember what I paired it with. I think it was burdock root wrapped in fish.

The fifth cup at Yuzenjin Tahata-san. Clear and dry. So refreshing that it could be mistaken for a citrusy white wine. Dry and light, but full-bodied. Is it contradictory? It's good. (I started to get drunk from this point, so this may not be very helpful.) The pairing was grilled yellowtail and konbu-maki herring. Not too bad, not too bad. I don't remember.

The fourth cup at Yuzenjin Tahata-san. An unfiltered, unpasteurized sake from Jyushiyo! According to the owner, they were able to stock it well. We were glad to have met him before he ran out of sake. Wow, it's really delicious! The flavor is strong and the aroma is amazing. Fruity, rich mango? It's not about pairing anymore, this sake is complete. This is no longer a sake, but a sake called "Jyushidai". The second dish I paired it with was the sashimi. Tuna and scallops with nori soy sauce. According to the owner, tuna and scallops go well together. Indeed, they do go well together! I said it was so good, so good, that the owner poured me another free glass!

The third cup at Yuzenjin Tahata-san. Polishing 80 is rare. The rice smell is strong. But I feel it is refined. It is dry and refreshing. It is not deep but has umami. It was bottled in October 2022, but it was made in 2018, so I guess that means it was made in 2018. I paired it with tessa. This is delicious. It goes really well with it. It's been a while since I've had such a great pairing!

It is a rich, not to mention somewhat elegant, raw sake. There was not much difference from the Yamashiroya I just drank, so it is a little difficult to give an opinion. But was it a desperate measure to serve this together with a bowl of soup that was hard to match? Or was it because they thought it would go well with miso-based ozoni? The bowl I matched it with was a fish paste fish cake bowl. Miso based. If you ask whether it goes well or not, it is neither. I know it is impossible to match it with a bowl. However, the yuzu flavor that was submerged in the bowl at the end went well with the sake.

At "Yuzen Hitohito Tahata" in Higobashi. The first glass was happily opened. It is a thick and rough unfiltered sake. And, as the description says, it is unfinished. My tongue is tingling. But it's still a dry sake that's refreshing and easy to drink. This is delicious. It is a good pairing. I paired it with three kinds of sake snacks (New Year's dishes). It is indeed a New Year's dish. The food is delicious.

It is clear and dry, with a touch of sweetness in the back. Also, the tongue feels a little numb at the beginning of drinking. It doesn't have a strong "nama-zake" feel to it. It seems to go well with most dishes. As for pairing. Naturally, it goes well with sashimi. It also goes well with freshly grated raw wasabi. The side dishes from the roadside station, with the exception of tempura, went well with most of the dishes. Roasted ginkgo nuts with Himalayan salt. This goes well with it, it's delicious.

One cup sold at a local supermarket. It is rather dry. But it is easy to drink, with a mellow, sweet-like mouthfeel. However, I don't like the peculiar taste it leaves in my mouth, perhaps due to the brewer's alcohol, or the fact that it is not a junmai sake. I guess everyone has their own taste. I paired it with a lunch box from the supermarket and a chicken dumpling hot pot. It was neither too much nor too little.

Dry. Tasty and clean after. Not distinctive, but I think it's well-balanced as a pairing. Tuna fillet, freshly grated wasabi. The soy sauce and umami are good. Wasabi is also good. Gingko nuts, leftover Osechi (New Year's dishes), Japanese side dishes from the supermarket. Boiled ankimo (liver) and abalone are all good.

The bottle was opened before the other sake was consumed to match the Osechi dish. It was dry. I strongly felt the umami or peculiarity of rice. After drinking an unfiltered nama sake and a junmai daiginjo, I felt it was not so good. Pairing: Hmmm... I opened the bottle in search of a dry sake to pair with Osechi cuisine, but after taking a sip, I was convinced that it was probably not the right choice. Ah, maybe it was a mistake.

Upon opening, a fruity aroma develops. It is sweet but also feels a little dry. I paired it with a Japanese traditional food dish ordered at a department store. It did not go well with all the oseki-ryori we ordered this time. It is a sweet wine, so it goes well with chestnut dumplings and other sweet dishes, but not with other dishes.

It is not as rough as one might expect from unfiltered sake. It is dry, but sweetness is also felt. The aroma is not so strong. It is not very distinctive. That's why it is a good all-around pairing. A prelude to Oseki-ryori. I paired it with some sashimi offcuts on special sale at the supermarket. Freshly grated wasabi was on sale (fragrant and sweet). Roasted ginkgo nuts with rock salt. Homemade boiled angler's liver. chilled tofu, egg and edamame. All of them are neither good nor bad. However, I think all of them are good to drink. After drinking it for a while, it became very tasty. This is it. The kind of ramen where the first bite is not so good and you can enjoy it until the end, and the kind of ramen where you think the first bite is good but later it becomes hard to eat.

It has a rough, rich and fragrant aroma due to the fact that it is an unfiltered, unpasteurized sake. The aftertaste is dry. Personally, I like this sake. It is a type of sake that can be enjoyed with sake. However, it is also dangerous. It's been a while since I drank my favorite type of sake, but it's still very tasty. It would be perfect if the aftertaste were a little more refreshing. I paired it with sushi and various other dishes. Basically anything goes. However, if I were to say something extravagant, I would say that the sake stands up too much, so I can't say anything about pairing it with food. However, I think it goes well with Japanese side dishes in general.

Is it rather dry? But it's so sweet that I think so even if it's called sweet. I thought it was, but when I was drinking it with food, it was still dry. There is not much aroma or richness. It might be easy to match with food. The dishes I paired it with are as shown in the photo. Sushi, side dishes, tempura, and other dishes are neither good nor bad.
