I received this as a tax return gift from my hometown. It was dry and refreshing, but on the palate I felt a sense of maturity for a moment, maybe because it was bottled a year ago? After that, I felt a bit of a cloying taste. It is not too assertive, so it might be easy to match with food. I paired it with a bowl of rice topped with seafood. I felt the sake was too sweet with soy sauce. Well, I guess it goes well with it. I wrapped it with nori (seaweed) and it turned out good. Roasted ginkgo added later is neither acceptable nor unacceptable. Pickles (takuan (pickled radish) and ponzu pickled daikon (Japanese radish)) are also good.
