Gorgeous ginjo aroma. It has a clean, light and beautiful sweetness. Although it is jungin, the taste is so beautiful that you would think it is daiginjo. Is it because it is made by hanging it in a bag? It is delicious, but maybe too elegant. It would have been better if it had a little more umami.

It is brewed by a young brewer who used to work at Kuroryu. From this season, the responsible brewing will be separated from the regular products and will be available only to special distributors. It is a very drinkable type of wine.

This sake is limited to two liquor stores, one in Sakai and the other in Kishiwada. Only 12 bottles are in stock, so the next time I come back, there won't be any left, so I was allowed to try a special sample before purchasing. It has a rather gorgeous ginjo aroma. It has a low alcohol content and is sweet with a gentle taste. It is low in alcohol, but you can feel the fullness of the flavor. It has no gaseous feeling, but it is fresh. It can be used by itself or with food. Shimada Special is delicious no matter what you drink.

Osaka Prefecture Junmai Sake Polishing ratio 70%. Alcohol 15% or more but less than 16%. The aroma is sweet and creamy. On the palate, it is dry but has a strong umami flavor and is a gorgeous spring-like sake. It has a bitter aftertaste and goes well with sweet food. On the second day, I tried heating it up. The rich umami soaked down my throat powerfully. The aftertaste is like dashi (Japanese soup stock). I feel that this sake is better when heated.

Opened March 12, 2025 Seasonal, I slipped into the brewery just before business hours and bought it ^ ^. The regular one is good, but I knew it was a seasonal one ☃️ Kamisumi is more refreshing than I expected ✨. It's spicy, but has a gentle sake lees flavor and sweetness ^ ^. Nigori-nagashi doubles the tenderness of the sake lees! The finish is faint bitterness ^ ^. A great accent! Yum!
