A small bottle from the supermarket. It is quite dry and has a strong rice flavor or peculiarity. This may be a favorite of different tastes. It goes well with sushi and sashimi. It may be natural for it to be dry, but the vinegar, fishy smell, and peculiarity of the rice are nice. Kamaei's bread rolls and Hiraten, not so good, not so bad. Well, maybe it is not helpful because Kamaei is so good. The other dishes (shrimp and fried chicken) were also not so bad.

At "Bosei" in Nagahoribashi. The last 8 cups. I drank so much that I forgot what it tasted like. But it's delicious! But I had to have another glass (9th glass) to taste it properly. Not sweet, but not dry either. Mellow! I was too drunk to judge it properly. But I can say that it is delicious. I think it was something that matched the sweetness, but I've already forgotten.

At Nagahoribashi "Bosei". 7 cups. Dry and refreshing. Delicious, but! I can't handle the amount of information I've already received. At any rate, it was the first brewing. It is not the first pressing of the season, but the first pressing of the year. This time it was an autumn pressing. I think it tasted fresh, but I was too drunk to remember. However, there is one thing I can say. Even on my 7th glass, it tasted great! We had a rice dish, but since the course we ordered was a birthday plan (though it was not a birthday), we had tuna and squid in red and white. So we enjoyed them as sashimi, and of course they were delicious.

At "Bosei" in Nagahoribashi. 6 The 6th cup. Compared to the previous "Saku", it is dry and refreshing. It is not as mellow as the previous "Saku", but it is still not lacking. It was so good that the mellowness of the "Sakusaku" sake was not lost on me. I think it would probably taste even better if I drank it alone. I paired it with daikon radish steak. It goes well with it, but to be honest, I don't think about pairing it with anything else. I'm happy just to be served a good sake. No, the food is delicious, too.

At "Bosei" in Nagahoribashi. This was my fifth drink at the same restaurant that day. I drank "Saku" at this restaurant before, but this time it was different. This one is also delicious. It's dry, which I personally like, but mellow and easy to drink. I mean, don't serve me the next sake before I finish my food after I finish drinking it (laughs). In addition, I paired it with grilled saikyo yellowtail. I don't remember if it went well or not.

At Nagahoribashi "Bosei". According to the owner, the sake is made by the toji (master brewer) who made Jyushiyo and chose the rice to make it. Ah, it's delicious. Mellow and... However, I forgot to write down my impressions of the sake, as they kept serving me hidden sake one after another. But it was delicious, and although it wasn't sweet, I didn't think it was dry either, and it was very easy to drink, almost like a Jyushiyo (I vaguely remember). Rather than pairing it with something else, it just seemed to be the general's recommendation. I'm happy with that, though.

At "Bosei" in Nagahoribashi. I am glad that the owner stocks a variety of sake here. This is a sake that has recently started to appear on the market. The brewery asked us to stock it in the store, and when we did, it became so popular that it became difficult to stock. It became so popular that it has become difficult to stock. It is indeed delicious! It has the aroma of hinoki cypress? It has the aroma of Japanese cypress or oak barrels, and it is clean and dry, but also has a mellow flavor. The spikiness that sticks to the tongue is also good. Once again, it is delicious. I paired it with tempura, but before pairing, the sake is delicious. As to whether it goes well with tempura or not, "I don't know."

Purchased at Coop Sapporo in Noboribetsu, Hokkaido, on a business trip. This is good! Dry but mild. It is dry but mellow, with a hint of hinoki (Japanese cypress). It's so well balanced! It's a versatile sake! Of course, it has some travel spices. I paired it with kaiseki cuisine at a hot spring ryokan in Noboribetsu. It goes well with sashimi. I tried every other dish that came out, and nothing didn't go well with it. The "Kitayorigai mussels with green vegetables" was a nice dish. The taste of the sake did not fade away even though I was drinking it with various other dishes. This means that this is probably very tasty. It seems to be a Co-op Sapporo exclusive. Is it only available at Co-op Sapporo? It tastes good as a sake, and it has few peculiarities, so it can be easily matched with food. I am very happy when I find such an unexpected and wonderful sake. At any rate, what I can say is that it is not at the level sold in supermarkets. It was about 1,600 yen, but it was well worth the price. I had a saké from the collaborator, Sanzen Sakura Sake Brewery, in Otaru last year.

The one cup I got from Lawson's trial voucher. Dry. The aroma is certainly strong, and the roughness of the original sake is present. The alcohol content is high at 19 degrees. It is quite tasty for a one-cup sake. I prefer Kikusui. I paired it with homemade side dishes. Onsen egg, pork miso soup, miso cucumber, sea bream head stew, not too bad, not too bad. Sardine kabayaki (canned) goes well! Does it go well with strong flavors?

The sea bream boiled in soy sauce, the flavor of the burdock is not so bad, but the taste of the burdock is not good at all. It tastes like chlorine, as if you are drinking pool water.

It is not sake, but I dare to record it here. The classification is liqueur, but the raw material is sake. It is a ginjo-shu made from butterfly bees, a plant in the bean family, and has a beautiful blue color. The taste is clear and dry. Almost like sake. I drank it on the rocks, and it was not bad. It may be a sake to be enjoyed by looking at it rather than tasting it. I heard that adding citrus fruits such as lemon makes the color lighter, but there were no lemons. As for the pairing, I thought it was a sweet sake, so I had prepared some lawson sweets to drink as an after-dinner drink. However, I decided against it because I thought it would never go well with it.

This is another item I got directly from the brewery using a Shiga Prefecture travel discount coupon. Perhaps it is because it contains brewer's alcohol, but I have not had many daiginjos with such a clear, dry taste. The aroma of daiginjo is soft but not strong. It is so refreshing that you can easily enjoy it. Personally, however, I like the sense of maturity or the richness and thickness of hiyaoroshi, a sake made by the same brewery that I drank the day before yesterday. In terms of price, the Daiginjo is more than twice as expensive as the Hiyahoroshi, which reminds me once again that sake is not about price. It goes well with sashimi. It's quite good. It also goes well with Nadaman's Japanese side dishes, but it's dry, so I guess it's a safe bet. Not bad.

Local sake from Nagahama, bought directly from the brewery using a Shiga Prefecture National Travel Discount Coupon. It is solidly dry. It has a nice full-bodied flavor with a good sense of maturity, as it is only hiyaoroshi. It is also good warmed. I paired it with sushi, and naturally it went well with it. Delicious. I think it would go well with grilled tuna.

It's not enough by itself, but it might be easy to match with food because of its lack of characteristics. I paired it with sushi, but it was too much like soy sauce? Fish smell? I think you can understand the delicacy of this sake when you pair it with soy sauce or the smell of fish. In fact, it may be a very delicate sake. If I had to say whether it goes well with sushi or not, I would say it goes well with sushi. Next up was homemade chicken radish. The dish itself was a little too salty and spicy, but that worked out well (laugh), and the sake became more like a chaser, so it went well with the dish as a result.
