The second sake is from Japan's northernmost sake brewery, Kunimei! It's sake from Hokkaido - how could it not go well with crab! I thought. We had it with grilled crab meat in the shell as a side dish. Without a doubt, it was the perfect sake for crabs and seafood.

The purpose of my visit to Kawanishi Sake Sales was this. Although it is not written on the label, the sake was labeled as unfiltered raw sake at the store. Unlike the label, it is fruity and modern. Since I was also visiting Kyoto, I had a second glass of "Ginshari", a Kyoto sake. The aroma is faintly muscat-like. The mouthfeel is refreshing...but then the mellow sweet, sour, and astringent taste like grapes spread out in a sizzle. The difference between the naming and the taste was a betrayal in a good sense! The slight chilliness of the gas also gives the wine a freshness👍.

The brewery is more impressive for its shochu Ginza no Suzume than for its sake. Tasted and purchased. It has a gorgeous aroma and is fruity even when drunk. 1801 yeast is used, making it a sweet and fruity sake that is easy to understand. I wish they would release a fresh sake of this one. I felt it was sweeter and fruity at room temperature than when it was chilled to the perfect temperature.

Corner shop at the mysterious cheese shop (2) Since the corner drinking at this restaurant is self-serve, we discovered an unopened bottle of Moridori when searching the refrigerator! I entrusted it to Mr. Nemuchi, a professional corker 😁. I drank a lot of dry sake at an off-line meeting the other day and I'm in the mode that I can drink some dry sake, right? Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. When I asked the store staff if it was an event, he told me that they were people who had come from Ozeki's brewery open at a nearby store. The smell of squid filled the air, and the waiter said he was sorry for the smell 🤣. This sake is brewed with salvia yeast collected by students at an agricultural high school. It is slightly effervescent and has a unique flavor. Sweet but cosmetic like no other aroma. A little nutty in the second half. I thought it was a little peculiar. After 3 days, a little bit of rum raisin taste. Definitely tastier than freshly opened 😋.

My favorite Chiba sake "Iwanoi" is brewed with ultra-hard water (hardness 240). It has the delicious flavor of Omachi and the moderate bitterness and sharpness of hard water!
