Japanese Sake Fest @ Osaka Bay Tower (・ω・`) Very rich rice-derived sweet flavor. Freshness is moderate and dry. This is the royal road to deliciousness! I don't see many dry sake in Nagano Prefecture, but the occasional dry sake has a rich, mellow flavor.

I bought some fire-activated nigori at the co-op because it looked interesting... so much moromi... !!!!! I looked it up and found that there is also active nigoromi... Sorry I only have a picture of it after mixing! I know the nigori in Niidashizenshuu and the nigori in this season's Sasasamune have a lot of moromi, but this is probably even better than that! The impact is amazing! Isn't it about 70-80% of the bottle? What is this? When you drink it... it's thick! As you can see, the rice flavor is coming forward. There is a slight alcohol taste, but it also has a banana smoothie-like flavor that is not too classic, making it easy to drink. It is thick, but if you cool it down and drink it, it is surprisingly easy to drink. In any case, it is quite strong, so it would be good with Chinese dishes with strong flavors. It would be better with Chinese food that has a strong flavor, such as stewed eggplant, grilled fish, or simmered dishes, as the richness of the sake would drown it out. I think I'll try it with Bean-curd soup with Bean-curd soup with Bean-curd sauce. LOL! Thankfully, it is fire-roasted, so you can drink it slowly and leisurely over several days. It doesn't lose its flavor and is very useful when the food has a strong taste.

The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. It's relatively easy to drink because it's crisp and not overpowering, but it didn't seem to suit my partner who likes floral and sweet flavors. It didn't match well with the grilled chicken, but I think it will swell up with time, so I'll leave it for a while. It's quite a unique sake, and I don't dislike it!

We also had a chance to drink some more sake from Toyama Prefecture. Taitozan, the main brand of Tonami City's Yoshie Sake Brewery. The factory where it is bottled and processed caught fire this spring and was unable to ship, but with the cooperation of the Toyama Sake Brewers Association, it was bottled and shipped by Masuda Shuzo, the brewer of Manjusen. Purchased at an Aeon liquor store in Tonami City. The aroma has a strong alcohol-like scent. It tastes like aged sake with a strong sourness and bitterness. It is really like drinking aged old sake. Sake is a very deep drink.

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.

I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!

I've been wanting to try this one for a while...they use 1801 yeast. It's gorgeous and fruity. It's also quite sweet. I think it's the most gorgeous of all the Yukihiko Yama brands. This was over 2,000 yen at a certain izakaya in Osaka, but at a nearby liquor store it was 1,980 yen🙄. I wonder what it is? I heard some breweries and stores add shipping costs 🤔.

Sake opened at a remote off-line meeting (3) I was asked "What is the best sake you drank this year? I answered "Aozora", but later I remembered that it was the future of sake from Akabu newborn 🤣. Tonight, our first series of impactful jackets here 💁. It's Taxi Driver🚕🚕🚕🚕. It was shipped from the brewery in April this year, but what a H30BY (R0BY) and it's a 5 year aged sake 😆. The aroma of old sake, which also smells like Shaoxing wine, is in full swing from the moment the bottle is opened 🤣. It was served cold, but it is easy to drink because of its acidity. It would be good to drink it warmed up in the fall. ☺️ I wonder if it would go well with Chinese food since it has a Shaoxing sake-like flavor, and I'm going to research how to drink it based on other sakewa reviewers 💪. But it's a very intoxicating drink so I'll stop after one cup 😓.

First drink. Weak fruity feeling that I didn't imagine from the label that has impact. But it is also full. There is a miscellaneous taste (my personal feeling) like the Yamahai brewing style with low rice polishing, but it is a moderate level, so I feel it is unique. It has just the right amount of sweetness to satisfy my preference for sweetness. I enjoyed it with a plate of delicious sashimi (´ω).

Rabenten is not often seen at liquor stores, but since it was at a department store, I bought it. The Yamadanishiki sake was sold out, so I chose Dewa Sanzan. It is quite gorgeous and fruity. The second half is a little spicy, but it is easy to drink.

This Sake is fruity, crisp and has a long aftertaste. The flavor is like a young pear with a hint of licorice. The acidity gives this a bright and full mouth feel. I am surprised at how long the finish is for this Sake.
To close out the summer. Looking back on summer. Finding the Bentsen Natsu Ginjo After all, the Bentsen suits me. It is crisp and has an indescribable sweetness. I want to call it "Benten Umami", not "Japan Blue". Yamagata's local sake.
