The first bottle was given to me at a certain president's house, to whom I am indebted. The rice used was ㊗️. Celebration is Kyoto's original rice that was revived in the Heisei era and is suitable for ginjo-shu (ginjo sake). It has a very elegant sweetness and aroma and is a premium ️sake. 100% Kyoto sake rice, celebratory rice Slightly sweet strawberry🍓 like aroma. The mouthfeel is mellow, but then you are surprised by the acidity and tanginess. The aftertaste is elegant, with a hint of strawberry flavor again. The second sip is easy to drink like water without the tanginess, as if you have gotten used to it. The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.

This Sake is very interesting. It has a citrus flavor like grapefruit. The flavor really cleanses the pallet.
Junmai nama-shu YAMADANISHIKI 90 Rice polishing ratio 90%❗️ This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing. The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in. This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing. It's amazing. Michiko Urasato, Toji 💡. I had it with ginger yaki, and it was delicious. The sake and side dishes go well together😆. I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today. I heard it's also good at different temperatures.

I've always been curious about it because I often see it at Takashimaya, but this is my first time to drink it. The rice is Asahi rice and Yamadanishiki. It is fresh and has a strong sweet flavor, but the aroma and taste are a bit unique. I also feel a bit of hardness. I'll give it some more time and see how it goes. I bought it last year as a souvenir from Utsunomiya. It's been a while since I've had "out of the gate", but my taste buds have changed since the last time I had it, so I'm looking forward to it! When you open the bottle and pour it, it smells like citrus fruits and lychee. It is tasteless on the palate, but gradually the richness and mellowness of the rice comes out. The sweetness, spiciness, and astringency of the flavor are all present as soon as the lid is opened! Although it is a junmai ginjo, it has such a robust flavor that it may be served warm. The overtone is similar to that of "Shinkame" and gives the impression of a matured sake. The lingering aftertaste is well rounded as it quickly fades away. Overall, the shades of gray are exquisite, and the taste is quite interesting! In fact, the first sake I ever drank in my life was "Monkai Fude. I was actually the first person in my life to drink sake, and that drink at Kinugawa Onsen has led me to the present day.

I bought some fire-activated nigori at the co-op because it looked interesting... so much moromi... !!!!! I looked it up and found that there is also active nigoromi... Sorry I only have a picture of it after mixing! I know the nigori in Niidashizenshuu and the nigori in this season's Sasasamune have a lot of moromi, but this is probably even better than that! The impact is amazing! Isn't it about 70-80% of the bottle? What is this? When you drink it... it's thick! As you can see, the rice flavor is coming forward. It is thick, but if you cool it down and drink it, it is surprisingly easy to drink. In any case, it is quite strong, so it would be good with Chinese dishes with strong flavors. I think I'll try it with Bean-curd soup with Bean-curd soup with Bean-curd sauce. LOL! Thankfully, it is fire-roasted, so you can drink it slowly and leisurely over several days. It doesn't lose its flavor and is very useful when the food has a strong taste.
