I have had Taitozan before, but I don't remember much about it, so I bought it for the first time in a while.
It has a slightly astringent white wine-like aftertaste with almost no sweetness.
I think it is best to drink it with fish dishes, which is a standard white wine.
Since it is winter from now on, yellowtail and radish would be delicious.
I, of course, drink it only with sake.
Subtle aroma of rice
The taste is honest, with an acidity and sharpness that spreads in a penetrating manner.
Not for those who like fruity types, but it seems to go well with all kinds of food!
Enjoy it slowly in the middle of a meal 🍶.
Certified by Toyama Sake Brewers Association
Limited hiyaoroshi for the autumn season of 2023
The first sip of the seventh saké gives you a sense of what it is all about.
The color is dark yellow with a distinctive aroma.
The aroma is distinctive, and you can sense its richness. When you take a sip, you can feel the sharp acidity,
The umami that comes afterwards, and the sharpness to the point of refreshing.
As you drink it, you will become addicted to it.
Junmai ⭐️⭐️⭐️⭐️
Polishing ratio 60%, ALC 15 degrees, extremely cold brewing
This sake was purchased at Iwasehama Area Sake Brewery Tajiri Honten during a trip to Toyama 🤗.
According to the store owner, there are many small breweries in Toyama, and Furue Shuzo is one of the smallest breweries in Toyama Prefecture, brewed by a small number of people... 😊.
We first enjoyed it cold (room temperature).
It is a crisp, dry sake with a slight amber color, acidity, and a slight bitterness 😋.
Warmed (top temperature 45℃ to 50℃)
The bitterness fades, the acidity is stronger, but the sake has mellowed 😘.
I think this sake is carefully made and delicious 🥰.

It has a slightly yellowish color and a strong acidity, but the aftertaste is dry and refreshing.
When I paired it with stewed pork, it went well together and was easy to drink.
4/10
Sake drinking comparison between Tonami and Nanto as well.
Yoshie Sake Brewery in Tonami is the smallest sake brewery in Toyama Prefecture.
Anyway, it is a highly acidic sake, and you feel a tingling sensation from the moment you drink it.
It was so stimulating that I wondered how spicy it was when it went down my throat.
I think it should be drunk cold.
I would like to try a different spec.
