This was also purchased at Oka Sake Shoten, the same place as Unjaku. The aroma is mild but unique. The rice used is Omachi from Okayama Prefecture. It has a dark mouthfeel and a bit of maturity, but as the days go by, it becomes more rounded and changes to a level where even those who are not good at it can go. However, even though it has become more rounded and easier to drink, the sweetness and strength of the Omachi can still be clearly seen, so there will be different tastes. For me, it's a very interesting sake! The first day I opened the bottle, I thought it might be too peculiar to pair with a meal. However, from the second day onwards, while maintaining its richness, it gradually becomes lighter and lighter, and is not bad as a food sake. If you roll it around in your mouth, it is a nicely aged sake, but if you drink it with gusto, you can drink it without worrying too much. Still, I want to enjoy the aged feeling of this kind of sake, so drinking it a little bit every day is good for me.

Today, following yesterday's Aizan drinking event, I went to the Osaka Bay Tower's Japanese sake festival event 😀. I was informed in advance by bouken-san that there was a sake that Saku-san usually does not have, so I made a toast with his wife with that sake 😇. The sake was even clearer and fruity than Saku's usual sake, and we were very satisfied from the start 😀. During the live taiko performance by three women, my wife and I, who are both learning taiko, were overwhelmed by their amazing performance 😇. We were able to compare over 130 different types of sake, but my favorite was from Yamazaru, a brewery located in Asa, Yamaguchi Prefecture 😇. From the aroma to the mouthfeel, it was right up my alley👍! I had a chance to talk to the brewer and asked him about the stores in the Kansai area that carry it.

It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅. The "Raku" on the label represents the over-filled rice, and the blue color represents the pale face of the toji-san. Gutsy, but quite sweet and sour. It is much sweeter than other Raku no sei I've had, but I also feel its character. The rice is from the terraced rice fields of Hida. I can't seem to name the rice, but I wonder if it is Hidahomare or some other rice that is only available in Gifu. The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.
