I bought this sake to enjoy at a ryokan during a trip to Nagano. It has a moderate aroma and taste, and is a bit lacking for a Junmai Daiginjo. Or maybe it is just that the level of other sakes in Nagano is too high.

My taste buds have become so discerning with the recent string of daiginjos that I wondered what would happen to me now.
I wondered what would happen to my taste buds in the future, and this was the next bottle.
But this one was so delicious that it knocked my shallow thinking out of the water.
I was reminded that the ratio of polished rice is not necessarily a dominant factor in the taste, but that it varies depending on the brewery and the brewing process.
Chikumonishiki Brewery is to be feared.
The taste is rich in rice flavor, sweet and strong, with an alcohol-free aftertaste and residual flavor. Just the way I like it.
I would definitely drink this one again.

But not too sweet and crisp.
Personally, I would like it if it were sweeter.
Cold. It is like a thick yogurt. It is tangy, alcoholic, dry, and doesn't linger. It is delicious without being sweet. I wonder what kind of food goes well with nigori?

We will enjoy a dry special junmai Chikuma-Nishiki from Chikuma-Nishiki Shuzo!
The aroma is mellow.
The taste is dry, rich and refreshing.
