Naohiko Noguchi Institute I wanted to try. Smells like caramel and grain. It has a dry, drinkable, honey-like sweetness, a strong flavor, powerful acidity, and a clean aftertaste with enough stimulation to numb the tongue. Delicious. Impact like a whiskey. The official recommendation is to drink it lukewarm (around 40 degrees Celsius). The warmer it is, the less stimulating it is. Japanese Sake Fest @ Osaka Bay Tower (・ω・`) The effect of oak barrels, or something quite close to whiskey, but the mellowness and acidity of sake is also alive! I know it's just my imagination, but I feel it's similar to the whiskey akashi. Of course, if I didn't know any better, I wouldn't have thought so. I also had a bottle of Junmai Namae in the heated sake corner, but my memory is a little fuzzy on whether or not my brain was getting the alcohol when I got here! I do remember that it was meant to be heated, but that's about it.

The first bottle was given to me at a certain president's house, to whom I am indebted. The rice used was ㊗️. Celebration is Kyoto's original rice that was revived in the Heisei era and is suitable for ginjo-shu (ginjo sake). It has a very elegant sweetness and aroma and is a premium ️sake. It is smooth on the palate and goes down smoothly. It was gone in no time. It was a treat❣️.

100% Kyoto sake rice, celebratory rice Slightly sweet strawberry🍓 like aroma. The mouthfeel is mellow, but then you are surprised by the acidity and tanginess. The aftertaste is elegant, with a hint of strawberry flavor again. The second sip is easy to drink like water without the tanginess, as if you have gotten used to it. It reminds me of Kyoto's obanzai (traditional Japanese food), with a strong but not overpowering character. I was deeply impressed by the fact that this is Kyoto's sake.

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.

It is brewed with a harmonious flavor in mind. It is a sake that does not lie in the introduction on the label. I enjoyed it on an autumn evening, well chilled. It is refreshing on the palate, but as you sip and savor it, the flavors come out more and more. I enjoyed it with rice miso, tsukudani (food boiled in soy sauce with plum and laver), and spicy oysters. It is a delicious sake.

This was also purchased at Oka Sake Shoten, the same place as Unjaku. The aroma is mild but unique. The rice used is Omachi from Okayama Prefecture. It has a dark mouthfeel and a bit of maturity, but as the days go by, it becomes more rounded and changes to a level where even those who are not good at it can go. However, even though it has become more rounded and easier to drink, the sweetness and strength of the Omachi can still be clearly seen, so there will be different tastes. For me, it's a very interesting sake! The first day I opened the bottle, I thought it might be too peculiar to pair with a meal. However, from the second day onwards, while maintaining its richness, it gradually becomes lighter and lighter, and is not bad as a food sake. If you roll it around in your mouth, it is a nicely aged sake, but if you drink it with gusto, you can drink it without worrying too much. Still, I want to enjoy the aged feeling of this kind of sake, so drinking it a little bit every day is good for me.
