A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It is sweet to the level of the Hitakami, and the robust umami is also very tasty! It has a light acidity and bitterness, followed by a refreshing sharpness. It's good! This is good! The price is relatively cheap, about 1300 yen for a four-pack, but it is convincing enough! Ishikoshi Brewery. I underestimated you. Sorry about that. This is the first time I've seen this warehouse. The rice used is Maikaze. As the name suggests, everything, including the yeast, is from Gunma, and it seems to be an annual event. After a few drinks, it was quite late, so I headed home while eating a golden dharma bento commemorating the 140th anniversary of Takasaki Station. I will close my Gunma trip with "Akagisan" and "Funao Taki"! Sweet and sugary aroma like sugar. The taste is smooth and silky, and while it has a Gunma sake-like quality, it tastes more like a sweet sake derived from brewer's alcohol. There is nothing outstanding about it, but it is a perfect match for ekiben (boxed lunches), with its unobtrusiveness, slight sweetness, and crispness!

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

In the mouth, there was a delicate acidity from the sake yeast and a calm, gentle sweetness and richness. It was a crisp sake, typical of Sakuta's special pure sake. It was delicious, but it was not so good when it was warmed up 🤔.

This is my first time drinking this brand, but it is handled by a well-known sake store in Aomori, and I have hesitated to mail order it several times. So I was confident that I would not make a mistake. I was torn between this one and the Yukinaka Hakkoda from the same brewery, but I went with this one. At room temperature. The aroma is slightly banana-like. When you drink it, the umami of rice rises thinly, and if you drink it by itself, it will slowly and gently lift you up with its umami and spiciness. It becomes more crisp when paired with cheese. At 40℃, it has a little more rice flavor. The crisp and sharp taste is better than at room temperature. I personally prefer this brand to be served hotter, so I set the temperature at 50°C. The aroma is not too strong and the taste is mild. The aroma is not too strong and remains mild, but the umami comes out slowly, and the sharpness is enhanced by the slight alcohol taste. I personally prefer this temperature. Sake from the southern region is often sharp without being sweet, and I have the impression that this is also the case here. In addition to cheese, it goes well with kinpira, tsukudani (food boiled in soy sauce) of locusts, and ikamentsuchi, a specialty of Aomori. The sake has no cloying taste, and I can sense a high level of technical skill. Next time, I would like to buy some Umakuchi or Sakuta, which has a different character, but with the recent inflation and saturation of brands, I wonder if it will be a problem if they will be able to get them in stock.

Birthday gift sake No. 3 Speaking of comets, Ricaman is a liquor that I don't get a chance to drink very often because I don't go to Ricaman. It has a mild top-fragrance aroma. This is one of the bottles that was sold in a set with Tobiroki at Hasegawa sake shop, it was made in October 2020, so I guess they used Tobiroki to clear this stock 😅. I'm not a big fan of the Satsuma Masamune, but I'm not a big fan of the Tobiroki either. I was a bit worried because it's a raw stored sake, almost a year after production, but there were no quality issues 😄. Rather, I didn't feel the peculiarity that I felt when I drank Junmai Ginjo before, and it tastes better than that time 🌟. It has a slight sweetness, a strong alcohol feeling and a spiciness that comes down the throat, not very distinctive but enough for everyday drinking. Cold sake is the best 😚

A "sacred" store found near Nishiki Market in Kyoto. Great cold drink when you are finally able to sit down after a long day of walking 😀. It was slightly carbonated and went down my throat so well I didn't mind the 19% alcohol content 😅. You can't tell the alcohol content in modern sakes. Beautiful construction.
