This is the last of the sake purchased at the Nagoya liquor store. Rice used is Yumesansui Beautiful smooth sweetness and moderate bitterness and spiciness. It has a little heaviness, but it is a well-balanced sake ❗️. Not bad❣️

Aichi Prefecture. Handa City. Morita Kinshachi Sake Brewery Co. Kinshachi Kanazhachi-Kanzukuri Shiboritate Honjozo Nama-Shu. Purchased at my first old-fashioned small sake shop in the next city. They have a variety of sake from the Fushimi and Takatsuki area, and I was curious about this one. I asked the proprietress about it, and she told me it was from a brewery they do business with, but all of the sake was over a year old. I was hesitant to buy them because they looked a bit old, but I took the plunge and bought them. The label on the back of the bottle says that if the bottle is not opened, it will be good for about a year, but when I said that it was older than that, she checked the label on the back and gave me another bottle free of charge😅. First, the freshly squeezed one that's been a year and a half. I had it cold. The color is a light yellow with a hint of whiteness. The aroma is mild, with a hint of sourness and sweetness. The taste is sour and bitter, with a tangy aftertaste that is crisp, pungent, and sake-like. It is easier to drink at room temperature than right out of the fridge, as it is less bland. It does not have a good sense of maturity or umami, and is a bit twitchy. Ingredients: rice (domestic), rice malt (domestic), brewers' alcohol Ingredient Rice:100% Yumeginko Sake degree: +3 Rice polishing ratio: 65 Alcohol content: 15 to 16 degrees Celsius

This is also our first time to visit this brewery. I'm glad to see that they have a lot of unpasteurized sake. I completely forgot about the bad things at work and went into drinking mode. Just like the label on the back, this sake has a lot of flavor, but it's not heavy. Even though it was nigori, it didn't feel sloppy. It was an easy to drink sake.

Today is Valentine's Day!👩❤️👨 This Sake paired very well with the filet mignon I prepared for my wife. There is a full mouth feel with umami. There is a light smoke flavor and wood. The aftertaste is short.
Cowboy bought me this as a souvenir from Niigata! Yay! Yamahai is great! The design is cool too! It's crisp and mellow, and I drank a bottle so fast... I want to drink it again!

Second souvenir from KazKaz. It is a brand name planned and sold by 7 sake stores in Aomori. Rice used is 100% Hanasoui. The top-tasting aroma is a calm ginjo aroma. The mouthfeel is slightly sweet with a strong umami flavor. The aftertaste is reminiscent of classical sake, and is quickly cut by a refreshing acidity and bitterness. This sake was given to us by a visitor to Kobayashi Sake Brewery in Niigata, which is famous for its signature Akita dog. It is slightly sweet and has a subtle rice flavor, and although it was made in December 2010, it does not have an aged feel and is refreshing and easy to drink. It has a slight peach and lactic acid flavor. I think it is one of the most delicious alcoholic sake.

I was drinking it on 7/1. It is aromatic, fruity, sweet from the rice, and refreshingly delicious. Niigata is a great place after all! My daughter had it with her lunch of seared nodoguro (northern bluefin tuna) 😊My daughter had it with her lunch of hegisoba (buckwheat noodles) and tarekatsu (pork cutlet with sauce) and drank it with takachiyou. Yum! She mumbled like Mr. Purgatory and only gave me a small bite 🤣.

This is the first time I've bought bamboo island since the new system was put in place. According to the official website of the Japan Famous Sake Association, the rice is Nihonbare and Yamadanishiki. The lees are submerged and when mixed, it is slightly effervescent and petite. Slightly sweet and bitter. I wonder if it is better to drink it while it has gas? Once the gas is gone, the bitterness will make it hard to drink 🤔.
