[Fukui Spring New Sake Festival (9) The event was coming to an end with a series of sake from Ishikawa. We decided to try something a little different and had a drink here 🍶. Hayaseura Special Junmai Sake "Umi-no-Otoko This is an old sake that has been stored in the brewery for 3 years and was served warmed 😁. The aroma of rice flavor, the gentle texture on the tongue, the impact of the flavor at the back of the throat, the warm aftertaste of heated sake, and the bitter taste at the back of the throat at the end........ It is a "man of the sea" respecting fishermen who work at sea, and I feel that it is strongly made to go well with local fatty seafood and salty preserved food 😋. The entrée sold out unexpectedly quickly, so I emptied it before I could check its true value💦.

I bought this one at Kimura Sake Brewery after hesitating between it and Daishinshu. I have had Toko before, but this was my first time to try Yong. The top aroma is mild but fruity. As the introduction of Shusen-do Horikazu says, it does have a hint of cherries, doesn't it? It is dry and fresh with a moderate sweetness. A little citrusy? Sharp dry sake. A little too light for me? A little too light for me. After a few days, the dryness settles down.

I went to Yonezawa City during Golden Week and purchased this sake at Toko's Sake Brewery. Nyu is a sake that is only available in Yamagata. With a coupon I got at a roadside station in Yonezawa, I got a sake bottle with Toko's name on it. It is a dry sake with a Sake meter rating of +6. It was easy to drink with a clean taste. 1760 yen.

🚢. The nice thing about tastings is that you can drink things that you might not think to buy in a four-pack. I don't often drink super dry, so I'll take this one since I'm in the mood for it. Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.
