I was curious about this one and received it for the first time. Clear crystal silver. Melon, pear, and banana predominate, and ethyl caproate is also present, but the main flavor is isoamyl acetate. The attack is strong, with a hint of sweetness, but the acidity spreads horizontally, and there is a bitter aftertaste. The flavors and tastes are multi-layered, perhaps due to the odd assemblage. Kenshin Special Honjozo 2021BY I'm going to have a glass of this sake, which has been in hibernation for more than 2 years, with a plum crystal I bought in the neighborhood as a side dish. The taste is dry and crisp when cold, but as it gets closer to room temperature, the sweetness and umami of the rice is concentrated in the attack, and it changes to a deliciously dry taste. Tonight, we have a first in the series, this one from the Higashitsuru Sake Brewery in Saga Prefecture. It seems to be a 🌸🍶 spring sake, but I'll have it in delay mode as usual😅. From the opening of the bottle, it has a gorgeous acidity and a nice greenish pineapple aroma 🍍☺️ The top clear layer is sweet and acidic and juicy, but the second half is characterized by bitterness, making it easy to drink 😋. The sake rice is different, but I think the quality is similar to that of Hana-yosuyu. Saga still has a lot of good sake 🥳.
