Nagano Business Trip Part 2 Today we had another cup of Takaten sake recommended by a local senior 😋. It is a delicious sake with a gentle and delicious flavor that you will never get tired of drinking 😚👍. This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. The first impression you get when you drink it is a refreshing, fresh and gentle sweetness that only sake can provide. It's a sweetness like strawberries that I've never tasted before - I think this is a taste that only freshly pressed sake can give you. It's delicious!

It is a sake named after a place in Gosho City, Nara Prefecture, where Chiyo Sake Brewery is located. Like Kushira, Gosho is a town with many difficult-to-read place names. For example, Bunze, Iuka, and Saragi. Gosho is a nice and peaceful place nestled in the bosom of the Katsuragi and Kongo mountains. Aburanaga-san of Kaze no Mori is also a sake brewer in Gosho. I guess it's a good place for sake brewing😋. It's been a while since I've had a Kushira, but it's dry and full of rice flavor. It's delicious 😆. I would like everyone to try it along with Chiyo's other brand "Shinomine" 👍.

Shinomine's terroir brand Kushira✨. I bought two kinds of Shinomine's summer sake, so I have no choice but to give you a first look🤣. The aroma is slightly sweet. Corner shop at the mysterious cheese shop (2) Since the corner drinking at this restaurant is self-serve, we discovered an unopened bottle of Moridori when searching the refrigerator! I entrusted it to Mr. Nemuchi, a professional corker 😁. I drank a lot of dry sake at an off-line meeting the other day and I'm in the mode that I can drink some dry sake, right? I'm in a mode that some things are dry, so I drank it. It's definitely dry, but it's delicious with a nice sweetness and gasiness 😁.

Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. When I asked the store staff if it was an event, he told me that they were people who had come from Ozeki's brewery open at a nearby store. The smell of squid filled the air, and the waiter said he was sorry for the smell 🤣. This sake is brewed with salvia yeast collected by students at an agricultural high school. It is slightly effervescent and has a unique flavor. Sweet but cosmetic like no other aroma. A little nutty in the second half. I thought it was a little peculiar. After 3 days, a little bit of rum raisin taste. Definitely tastier than freshly opened 😋.

There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. Bouken-san told me about it before, and I've become a fan of Watashibune's new sake 😚. But it's made with 100% short-stemmed Watashibune. I think this brand is as good as my favorite Genmai which I opened just before. The aroma is like a grape🍇, and in the mouth you can feel a very thin gas and a gentle sweetness. The aroma and taste are well integrated, and the transparent flavor fades out with a slight bitterness, which is brilliant 😆. Today I paired it with a yose-nabe with agaric broth, and the complex broth of the seafood and the flavor of this sake matched so strangely that I could really linger and eat and drink forever... It's still Monday, so I had to call it quits 😅.
