Second day of the New Year.
This is a 35% polished rice daiginjo. I purchased it at the Okuhida Shuzo brewery as a souvenir from my trip to Gero Onsen.
Aroma: Calm ginjo aroma. The sweetness of the sake has a strong impact on the mouthfeel and the aroma is calm. It tastes so good. After the sweetness is felt, the umami is felt. The sweetness remains for a long time and is very tasty. You can feel the alcohol taste as it goes down your throat, but it is coated with just the right amount of sweetness and umami, giving it a pleasant alcoholic feeling. After drinking, the taste is refreshing, but there is no unpleasant taste, and you can enjoy a subtle lingering aftertaste.

I made an expedition to Masuya Brewery in Inagi City to buy my first sake.
It seems to be melon-based from the pop and label.
No pressure is felt when the bottle is opened, and the aroma is mildly fruity.
On the palate, hmmm? Melon? Well, yes, it smells like ripe red melon.
The sweetness is very strong and hits the syrup level.
The mild acidity and bitterness are too sweet to be washed away by the bitter taste.
Those who like sweet drinks will love it.
It has no sawdust smell, is delicious, and can be used as a food sake.
I like sweet sake myself, but I think it is slightly too sweet.
They are very kind in recommending dishes that go well with it.
I drank it 3 days after opening the bottle, the aroma was more blue melon, the sweetness decreased, and the bitterness increased a little. 3 days later it was better, so I updated my satisfaction.

Slight pop when opened.
First day was melon, caramel and then acidity.
As normal, I tried it over 10 days, and the flavour improves, with no drop off.
From day 4, the fruity taste of melon, Fuji apple, hint of bitterness, caramel, with acidity to stop it tasting too sweet.
Surprisingly worked well with grilled steak.

I don't know the details, but the Okuhida Sake Brewery is a master. I don't know the details, but the Okuhida shuzo is amazing.

The first upload in a while is Hatsuroroku, which is my guess.
It is brewed with Yamadanishiki from Hida and a new yeast, Association Ka8 yeast.
It has a gentle sweetness and freshness. It is a reasonably priced daiginjo that can be drunk smoothly. 😋😋😋😋
