Nigori (nigori). It has a sweet sake-like aroma.
It is sweet to the taste.
The gaseous feeling is already gone.
The texture is more refreshing than expected.
It has a moderately fruity acidity and goes down smoothly.
It goes down the throat well. It is very drinkable.
Degree of liking ☆3.5/5
It is clear with yellowish tints, and has aromas of yogurt, pear, honeysuckle, topknot, and lime. The attack is rather strong, with pleasant acidity, a mild sweetness, and a rather long finish.
I have just tasted Tsushima sake.
My first impression was that it was "thick," but after opening the bottle, I felt that the flavor gradually mellowed.
It was a very tasty sake, rich and full of flavor, and very drinkable.
Event.
Sake Fair 2024.
I was pushed tremendously, "This is Tsushima's sake🍶‼️. I have to drink this. 🙂↕️
The color is slightly yellow.
The taste has a strong sweetness. It has an aged taste with a hint of hackberry.
Mouthfeel is mild & refreshing.
There is a delicious aftertaste.
The combination of sweetness and a sense of hackles gives the impression that it is a southern liquor 😊.
Good morning, Hiro 😃.
Congratulations on your 300 check-in ㊗️㊗️㊗️ with the Tsushima sake 🍶 from the raging Sake Fair review 🎉 Great that you can remember the background and flavors 👍.
Hiro, congratulations on your 300 check-ins ㊗️🎉🎊I'm reading with great interest all the sake you are drinking at the sake fair that I haven't 😊It's great that you remember each and every one 😆👍.
Good evening, Jay & Nobby 🌙.
Thank you 😊
I remember the conversations with the people at the brewery even when I'm drunk there, probably because I'm interested 🤗.
Before I forget, I'm posting it on sakéwani 😆.
Good evening, Tsubu 🌙.
Thank you very much😊
I'm glad this review is for you: ☺️
When I started sakéwa, I wanted to preserve the taste of each sake, so I will keep going until I fail 🤗.
Hi Masaaki Sapporo, ☀️
Thank you 🙏.
It was very satisfying to drink some rare sake 😊.
At the same time, I wanted to visit the brewery's hometown to enjoy some of the sakes that were not exhibited 🤗.
Cleaner than daiginjo tobin-harvesting.
It is richer than Tokusen and Junmai sake.
The tobin-hakari is also delicious, but I prefer this one for its cleanness.
This junmai sake is made from 100% Yamadanishiki produced in Itoshima, Fukuoka Prefecture, with a rice polishing ratio of 60%.
It is a delicious sake with a refreshing finish.
It is a good sake for a meal that enhances the taste of food.
It was served as an omiyage (gift).

I visited with a customer from Hokuriku.
To compete with them with seafood,
We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki.
We consulted with them in advance and asked them to secure it for us at the market.
We had them as sashimi.
It was like a smaller horseshoe crab.
They were very pleased 😁.
Now for the 🍶...
For a moment, I thought it would be dry. I thought it was dry,
I felt sweetness. The freshness goes well with sashimi.
The shrimp was served in miso soup later 🎉.
I received this from Hirupeko who ordered Shiratake from the brewery 🙏.
Thank you very much, Hirupeko and Nemuchi-san who brought sake to our off-line meeting 🙇.
Shiratake that Yoohee-san was going to buy for us when he came back to his hometown.
I heard they are going to send it from Tsushima in a blink of an eye, so if you are interested, please do not hesitate!
The name of the sake brewery is Kawachi Shuzo, but the company name seems to have been changed to Shiratake Shuzo!
It says "active" on the bottle, but I wonder if it's a draft sake.
It has a fizzy feeling, but it's not too fizzy. It is easy to drink with a gentle zingy sweetness.
There is none of the alu feeling in the second half that is common in nigori with alu.
It's like a rich sweetness that lasts until the end.
With cheeses from a mysterious cheese shop and bonito crackers given by pyonpyon😋.
Hello bouken 🐦.
I was surprised to know that sake is brewed in Tsushima 😳that alone makes me wonder what it tastes like😊The thickness of the rice cracker? The thickness of the rice cracker? It's exquisite, isn't it? The cheese looks delicious too 😻
Good evening, bouken. Thank you for your review of Shiratake nigori sake! I thought the gentle sweetness of the sake was the same as that of Kamisen. It's good that it doesn't have an alcoholic taste, which makes it easy to drink. Thank you Nemuchi 🚚.
Good evening, bouken🌑.
bouken's review reminded me of pyonpyon's rice crackers and I asked my wife about it and she told me that my son had them today 😭
He said it was delicious 😂.
I'm curious about the sake from Tsushima 🧐.
bouken Good morning ☀︎
I've never had Shirotake either, so I was curious about it 💡.
I like the fact that it's not alcoholic 👍I'll buy some next time I'm back home 💡.
The mango cheese was really sweet, wasn't it?
Hi Pon 😃
I've been curious about Shiratake for a while and thanks to Hirupeko I was able to drink it 🥺.
The rice crackers were exquisite and went well with sake, and the cheese 🧀 was a taste or two different from the ones you buy in the supermarket 😋.
Hi Hirupeko 😃
Thank you for the precious sake this time 🙇.
And Nemuchi for bringing it to us 🙇.
I was wondering if it was sweeter because it was sake from a place with a shochu culture? I was imagining a lot of things while drinking it 😋.
Hi Malu, Hello ☀... 😅I see it was your son's favorite flavor.
Oh my...😅I see that it was your son's favorite 😆 He's a connoisseur 😁I heard it arrives from Tsushima in a blink of an eye so please pop it in 😊.
Hi pyonpyon😃
As you said, the broth was perfect for the entrée👍.
Thanks for the delicious souvenir 🙇.
Shiratake, it's not a modern sake but it's sweet and delicious 😋.
Hi Yoohee!
If I hadn't seen the label I would have believed it was junmai 😁I thought the mango cheese would go well with the spicy sake as the sweet sake would take all the sweetness away 🤔All the cheeses are delicious 😋.
This time it is Houmon Hakutake Josen.
This sake is from Tsushima City, Nagasaki Prefecture.
I got it at a previous event and enjoyed it so much that I popped it in.
They sent it to me in a blink of an eye 😆.
Crystal appearance.
The top aroma is sweet and brown sugar like.
Mild mouthfeel. The taste is impressive with soft brown sugar-like sweetness and caramelized acidity, with the umami of rice flowing behind it. The alcohol is strong, and the second half is tightened by a tangy, bitter taste.
When heated, the alcohol attack becomes milder and the umami flavor expands.
This time, I tried the fugu fin sake.
I want to make my own delicious fin sake! I looked it up on the Internet and put it into practice.
(1) Sear the fins well over low heat until a good aroma is released. Sear the fins well, especially at the base of the fin, so that there is no fishy smell.
2) Prepare hot sake.
Pour the warmed sake over the seared fins and finally light a fire to release the alcohol.
I was afraid to light the fire at the end.
I was afraid to light the fire at the end, so I tried to do my best with a Chakkaman, but it didn't turn out well💦.
The result was a delicious aroma of fins from the moment I opened the lid. The sake was delicious as well, with the broth from the fins melting into the sweet sake flavor!
I was very satisfied with the delicious result 😊.
Good evening, Peco 🦉.
The fin wine looks delicious😍I didn't know you could make it yourself 😳I wonder if the fins are made from puffer fish? I wonder if you bought the puffer fish and just cut the fins off and roasted them? Wow, I can almost smell the aroma💕
Good evening, Pon-chan. Ah, it's fugu fin sake. I received a set of fugu nabe (fugu hot pot) from my hometown and was given a magnificent fin, so I tried it. I had never had fin sake before, so I learned a lot this time 😊.
Good morning, Hirupeko 😃
Fin wine is delicious 😋I see you can do it at home 😳I think you can flambé it better with a match than with a chuckerman... matches are not available nowadays 😁.
Hi Rafa. I was able to make fin wine at home 💡I looked all over the house for a match and couldn't find one, so I had to use a chuckerman, and I was afraid to light it, so it didn't turn out blue and beautifully flambéed at all. It's hard to make 🔥😅.
Hi Hirupeko 😃
Kamisen looks good too 😋 Is brown sugar somewhat like shochu 🤔I'm going to drink the nigori for example soon 😁I was given a match at a sushi restaurant but I couldn't get it right💦.
Good evening, bouken. Yes, it is! It has a sweetpotato shochu-like nuance due to the addition of alcohol. Please try the nigorigo! It's hard to light even with a match, isn't it? I wonder if you have to light the fin on fire 🤔.
Hello, Yoohee-san. It is rare to find sake from Tsushima, so I took the plunge and popped it in. I'm very happy with the fin sake as well 😆I'm also interested in bouken's nigorigo, so please try it, Yoohee 😊.
Souvenirs of Tsushima
The only small sake brewery on Tsushima, it is made in the traditional way and tastes just like old times.
It has a strong aroma, but the strong sweetness and umami flavor make it easy to drink.
