#Nagasaki Goto Town# w river/o/pine/hori/fuku/yama I visited with a customer from Hokuriku. To compete with them with seafood, We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki. We consulted with them in advance and asked them to secure it for us at the market. We had them as sashimi. It was like a smaller horseshoe crab. They were very pleased 😁. Now for the 🍶... For a moment, I thought it would be dry. I thought it was dry, I felt sweetness. The freshness goes well with sashimi. The shrimp was served in miso soup later 🎉.

I received this from Hirupeko who ordered Shiratake from the brewery 🙏. Thank you very much, Hirupeko and Nemuchi-san who brought sake to our off-line meeting 🙇. Shiratake that Yoohee-san was going to buy for us when he came back to his hometown. I heard they are going to send it from Tsushima in a blink of an eye, so if you are interested, please do not hesitate! The name of the sake brewery is Kawachi Shuzo, but the company name seems to have been changed to Shiratake Shuzo! It says "active" on the bottle, but I wonder if it's a draft sake. It has a fizzy feeling, but it's not too fizzy. It is easy to drink with a gentle zingy sweetness. There is none of the alu feeling in the second half that is common in nigori with alu. It's like a rich sweetness that lasts until the end. With cheeses from a mysterious cheese shop and bonito crackers given by pyonpyon😋.

This time it is Houmon Hakutake Josen. This sake is from Tsushima City, Nagasaki Prefecture. I got it at a previous event and enjoyed it so much that I popped it in. They sent it to me in a blink of an eye 😆. Crystal appearance. The top aroma is sweet and brown sugar like. Mild mouthfeel. The taste is impressive with soft brown sugar-like sweetness and caramelized acidity, with the umami of rice flowing behind it. The alcohol is strong, and the second half is tightened by a tangy, bitter taste. When heated, the alcohol attack becomes milder and the umami flavor expands. This time, I tried the fugu fin sake. I want to make my own delicious fin sake! I looked it up on the Internet and put it into practice. (1) Sear the fins well over low heat until a good aroma is released. Sear the fins well, especially at the base of the fin, so that there is no fishy smell. 2) Prepare hot sake. Pour the warmed sake over the seared fins and finally light a fire to release the alcohol. I was afraid to light the fire at the end. I was afraid to light the fire at the end, so I tried to do my best with a Chakkaman, but it didn't turn out well💦. The result was a delicious aroma of fins from the moment I opened the lid. The sake was delicious as well, with the broth from the fins melting into the sweet sake flavor! Souvenirs of Tsushima The only small sake brewery on Tsushima, it is made in the traditional way and tastes just like old times. It has a strong aroma, but the strong sweetness and umami flavor make it easy to drink.

I got it as a souvenir from Tsushima 🤗. It felt more like a junmai sake than an old sake. The hulled graininess, the straw, the overpowering brown sugar-like sweetness, the maturity reminiscent of tamari soy sauce or miso barrels, and the slightly tangy aroma and spreading umami that they all have in common... The richness of the original sake flavor makes me feel relaxed. Although it is 17% alu, I looked forward to having a few cups in a boar's mouth as an after-dinner drink every day. It seems that "Kawachi Shuzo Gomei Kaisha" has changed its company name to "Hakutake Shuzo Kaisha" as of October 1, 2023. Kelp water tsukemen (salt)

I am in Tsushima. It is said to be famous for conger eel, so I am planning to eat a variety of them. Even though it is on a remote island, the sake has a strong sweetness and a robust flavor, just like in Kyushu. I would like to try some ginjo-style sake before returning home.

One of my coworkers is from Tsushima, so I told him about Shiratake and he told me that nigori sake is delicious, so I bought some. (They send me a dozen every year from my parents' house... give me at least one bottle to try!) ) and it is actually quite tasty. I don't drink nigori sake very often, but this one is a bit addictive. It is slightly effervescent when opened, and has an easy-drinking sweetness that is typical of nigori sake. It also has a nice aftertaste, so you can drink it in large gulps!
