Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑤. The booth of "Kaze no Sato" in Ehime. After suffering tremendous damage from the torrential rains in western Japan in 2018, the brewery decided to revive itself with the support of local people, fellow members of the sake brewers association, and volunteers. The brewery has recovered through crowdfunding and other means, and this one is also not to be found in the Kansai region. Junmai ◉ Junmai The aroma is a bit peculiar. It may be an off-flavor. The flavor is firm and a bit nutty. They say it is recommended to be heated. Junmai Ginjo Not too much sweetness and umami, but a mild acidity. Junmai Daiginjo Uzu The aroma is a little subdued, and the sweetness and umami are refreshing, the type of sake that goes well with river fish. Junmai Ginjo-shu Sakurahime A junmai ginjo-shu brewed with Sakurahime yeast. It has a clear, sweet and umami taste with a clean and refreshing aftertaste. All of the breweries here have high sake strength, but it didn't feel too spicy. My Best Sake 🍶 since I first drank it a few years ago. Muscat, green apple 🍏. Mellow and the acidity bounces off the tongue. It's smooth, sweet and umami, and doesn't need any side dishes or accompaniments. Refreshing and fresh. This one bottle is just the kind of flavor that makes one's heart dance. It is perfect to drink on a nice, sunny day. It goes well with a party with friends. I'm going with this one! This is the sake that will make you make such a decision. Hodenasu is a dialect word, It's not really suitable as a gift, It's not really suitable for a gift, but it's a recommended sake that tastes so good that it becomes a hodenasu. LOL! I hadn't had Tokushima sake yet, so I bought some at an antenna store in Yurakucho when I went to Ginza last week 😀. This time I found this one on sale at the drugstore! My favorite Shizenigo! I was intrigued by the word "dry" and bought it. The aroma is apple-like, which is typical of Shizenigo. It has a fruity aroma even though it is a honjozo. The sweetness is moderate, and the bitter sourness comes through with a nice crispness. It is perfect as a mid-meal sake. It is a sake that accompanies and does not interfere with meals. I was impressed that such a sake is sold at drugstores! I realized once again the high level of Fukushima sake.

This Sake has a full mouth feel and some sweetness at the beginning. The flavor of this Sake is bigger than other Seitoku Sake but it still has good balance. Very good with big flavor foods like mapo tofu.

This Sake has an initial sweetness and a full mouth feel. There is a hint of cedar as the alcohol clears my pallet. Very good with big flavor foods like yakiniku. Seitoku has many Sake that I enjoy.

This Sake is light, refreshing and easy to drink. I am revisiting this Sake because it has been a while since I last drank it. I enjoy the mild flavors of apple and melon with a clean, short aftertaste. This is a refreshing and well balanced Sake.
