This is my second submission, delivered to my favorite restaurant.
It really tastes like no other, or is it strange? Sweet, and I'm sure the taste will change over time.
It is clear with yellowish tints, and has aromas of yogurt, pear, honeysuckle, topknot, and lime. The attack is rather strong, with pleasant acidity, a mild sweetness, and a rather long finish.
I have just tasted Tsushima sake.
My first impression was that it was "thick," but after opening the bottle, I felt that the flavor gradually mellowed.
It was a very tasty sake, rich and full of flavor, and very drinkable.

The color is slightly yellow.
The taste has a strong sweetness. It has an aged taste with a hint of hackberry.
Mouthfeel is mild & refreshing.
There is a delicious aftertaste.

Cleaner than daiginjo tobin-harvesting.
It is richer than Tokusen and Junmai sake.
The tobin-hakari is also delicious, but I prefer this one for its cleanness.
This junmai sake is made from 100% Yamadanishiki produced in Itoshima, Fukuoka Prefecture, with a rice polishing ratio of 60%.
It is a delicious sake with a refreshing finish.
It is a good sake for a meal that enhances the taste of food.
It was served as an omiyage (gift).

I visited with a customer from Hokuriku.
To compete with them with seafood,
We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki.
We consulted with them in advance and asked them to secure it for us at the market.
We had them as sashimi.
It was like a smaller horseshoe crab.
They were very pleased 😁.

For a moment, I thought it would be dry. I thought it was dry,

The name of the sake brewery is Kawachi Shuzo, but the company name seems to have been changed to Shiratake Shuzo!
It says "active" on the bottle, but I wonder if it's a draft sake.
It has a fizzy feeling, but it's not too fizzy. It is easy to drink with a gentle zingy sweetness.
There is none of the alu feeling in the second half that is common in nigori with alu.
It's like a rich sweetness that lasts until the end.
With cheeses from a mysterious cheese shop and bonito crackers given by pyonpyon😋.

This sake is from Tsushima City, Nagasaki Prefecture.
I got it at a previous event and enjoyed it so much that I popped it in.
They sent it to me in a blink of an eye 😆.
Crystal appearance.
The top aroma is sweet and brown sugar like.
Mild mouthfeel. The taste is impressive with soft brown sugar-like sweetness and caramelized acidity, with the umami of rice flowing behind it. The alcohol is strong, and the second half is tightened by a tangy, bitter taste.
When heated, the alcohol attack becomes milder and the umami flavor expands.
This time, I tried the fugu fin sake.
I want to make my own delicious fin sake! I looked it up on the Internet and put it into practice.
(1) Sear the fins well over low heat until a good aroma is released. Sear the fins well, especially at the base of the fin, so that there is no fishy smell.
2) Prepare hot sake.
Pour the warmed sake over the seared fins and finally light a fire to release the alcohol.

Souvenirs of Tsushima
The only small sake brewery on Tsushima, it is made in the traditional way and tastes just like old times.
It has a strong aroma, but the strong sweetness and umami flavor make it easy to drink.
I got it as a souvenir from Tsushima 🤗.
It felt more like a junmai sake than an old sake.
The hulled graininess, the straw, the overpowering brown sugar-like sweetness, the maturity reminiscent of tamari soy sauce or miso barrels, and the slightly tangy aroma and spreading umami that they all have in common... The richness of the original sake flavor makes me feel relaxed.
Although it is 17% alu, I looked forward to having a few cups in a boar's mouth as an after-dinner drink every day.
It seems that "Kawachi Shuzo Gomei Kaisha" has changed its company name to "Hakutake Shuzo Kaisha" as of October 1, 2023.
