Tonight, it's Hochotsuuru from Yamaguchi Prefecture in the 8th installment of our first series & muddy pick ✨. 100% Yamadanishiki, 50% polished rice, 17% alcohol by volume 🍶 Almost no gas when the bottle is opened. The aroma has a gentle sugary sweetness, and the mouthfeel is characterized by a sweet flavor and a soft sake quality. When mixed with the lees, it is milky without lactic acidity🥛 and full-bodied with a spicy taste😋😋😋😋.

(It is very spicy and dry. It's very dry and spicy, but it's also very tasty when heated. Warmed to lukewarm, it's a little more mature. Each temperature range has its own effect. I'm buying some kind of Hochodzuru. Fresh and corked! It's a slightly dry, sharp junmai nama sake. Cheese goes well with it. It's sharp and can be warmed up. Mr. Ota's second bottle from Fukuejima! The craft gin looked good, but it was too expensive...

The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. It's relatively easy to drink because it's crisp and not overpowering, but it didn't seem to suit my partner who likes floral and sweet flavors. It didn't match well with the grilled chicken, but I think it will swell up with time, so I'll leave it for a while. It's quite a unique sake, and I don't dislike it!

I have had Taitozan before, but I don't remember much about it, so I bought it for the first time in a while. It has a slightly astringent white wine-like aftertaste with almost no sweetness. I think it is best to drink it with fish dishes, which is a standard white wine. Since it is winter from now on, yellowtail and radish would be delicious. I, of course, drink it only with sake.

It's been a while since I bought sake at the Aomori Iwate Antenna Shop. It says it's nigori sake, but it's not cloudy at all😅. It's very clear and quite crisp. I got the impression that it's a pretty dry sake, but there's also a little sweetness. I can see a little bit of off-flavor...

I've had the Ura-no-shinshin before, but it seems to be a medium-brew. I don't remember the difference (lol) I don't want to drink Omote anymore, but Ura-nama sake is good because it's easy to drink. It just makes you drunk... 🙄.
