This is Hakodate Sake Brewery's Eiun Tamashii Uzumiguchi Junmai Ginpu. Right after opening the bottle, it is a delicious sake with lots of umami and a delicious acidity to finish it off 😋 It is from the Goho brewery 🍶.

The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. It's relatively easy to drink because it's crisp and not overpowering, but it didn't seem to suit my partner who likes floral and sweet flavors. It didn't match well with the grilled chicken, but I think it will swell up with time, so I'll leave it for a while. It's quite a unique sake, and I don't dislike it!

We also had a chance to drink some more sake from Toyama Prefecture. Taitozan, the main brand of Tonami City's Yoshie Sake Brewery. The factory where it is bottled and processed caught fire this spring and was unable to ship, but with the cooperation of the Toyama Sake Brewers Association, it was bottled and shipped by Masuda Shuzo, the brewer of Manjusen. Purchased at an Aeon liquor store in Tonami City. The aroma has a strong alcohol-like scent. It tastes like aged sake with a strong sourness and bitterness. It is really like drinking aged old sake. Sake is a very deep drink.

It is like a local sake, and the bitterness in the aftertaste is a bit of a problem, but...it soaks into your guts...it goes well with strong flavored snacks...smoked hoya and stewed tuna...I enjoy it with a little bit of it....

This is also a gift from my youngest son... a local Chichibu sake from my hometown of Chichibu, Saitama. I know you may not like it, but...it goes well with Chichibu's hormone...and today's snack was...freshly kama-age shirasu (dried young sardines) from Miura, Kanagawa Prefecture.

At home. This is the first time I've had sake from Hokkaido. I thought that Hokkaido's sake was more alcoholic, but it was completely different. You can feel the sweetness of the rice, and there is a bitter taste at the end. It is a refreshing type and very easy to drink. We received a lot of sake from Hokkaido, so we will try to taste and upload it little by little.

A Drink to Remember Series (5) In the early summer of 2015, I planned to take my car on a ferry to Wakkanai, Hokkaido, and when I arrived safely in Wakkanai, I had a drink at a yakitori restaurant for the first time in my life 🍶. The memory reminds me of the faint muscat-like aroma and sharp sharp sharpness 😋. The beauty of the label with the brand name, the wish behind the name "Fuyu Hanabi", and the taste of the local sake when you drink it on a trip...it was one of the reasons I became a sake lover 🎵. My first time at Hanaizumi. And nigori sake! This season, there are a variety of nigori sake, which is very enjoyable. First, the top clear sake. It is moderately sour. After stirring it, it becomes more rounded. The texture is silky (is that the right word?). The glutinous rice is not perceived, though I like rice cakes. I like rice cakes, but I think it's dry. I want to eat Karami rice cake.

Hanaizumi Jungin Akkatsu Nigorizake 2023BY ✨✨✨✨ It was active, but since it had been absent for a while, it was easy to open the bottle. As usual, we will drink only the top clearings first. It works well. I should be able to get eggplant. It was such a good sake for the evening. Sasanishiki from Ichihasama. Suki. I prefer the green hode nasu in winter, though.

It is a local sake, but I first heard about it through "Sake-no-wa" and bought it at a sake store in the northern part of the prefecture. My daughter bought it at Fujiwaraya in Sendai Station a couple of times before she got married. Strangely enough, I could not remember any other person's sake. 　It has a fruity aroma and taste like peaches, with a nice sharp aftertaste. (Mrs. Fujinami's impression) 　It was too rich for me and I did not understand it well. It became easier to drink when I tried it on the rocks.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

At last! At last, Nara sake complete! The last one was 100㏄. It was a very impressive drink. However, one of the chopsticks is bent in a bow.... It has been bothering me for a while. Nakamoto Sake Brewery offers a sake brewery makamakai lunch by reservation only. I would like to visit there someday. This time, I had a chance to taste Nara sake from all 29 breweries! I love Nara sake! In a post a little while ago, I wrote that the water in Kaze no Mori was ultra-soft water. It's actually super-hard water. I am ashamed.... Here is the correction!

This is another souvenir from our trip to Tottori Shimane. It had a unique taste as well as an impactful name, and it was a hard-to-drink sake for professionals. It was amber in color like old sake, and the acidity and astringency came first. My partner said it tasted like Shaoxing wine. I have never had Shaoxing wine before.
