［Fukui Spring New Sake Festival 10] I'm on my 10th cup of sake 😁. I was looking for my favorite "Hakugakusen" and found that it was only available on the first day of the event, so I went here instead 🍶. Unnoi Junmai Ginjo Nama Genjyo. Banana-like aroma, gentle sweetness on the palate, and a lingering mild umami aftertaste. I have a connection with "Kumonoi" since I brought it to the Kansai Sake-no-Iwa offline meeting I attended last summer, and it is still delicious when I drink it again.

This bottle was given to me as a birthday gift last year. I've been accumulating a stock of sake, so I decided to drink it slowly. It's a rare opportunity to see a bottle of sake in a tobin enclosure! It makes my heart dance ✨. When you open the bottle and pour it, you can smell a slight ginjo aroma. It is almost scentless. The mouthfeel is very clean, but the soft, milky sake quality and subtle sweetness of the rice gradually covers the tongue! The spiciness and the strength of 16% alcohol can be felt in the latter half of the bottle, but the overall flavor is moderate. I think I have not had such a clear sake since I drank the highest quality sake of "Akagisan" (12,000 yen for 720ml)! It is as pure as a gentle breeze. It quietly accompanies you from the beginning to the end. The taste is the very embodiment of "elegance. It is a good bottle to drink by itself or to enjoy as a food wine! Enjoy it carefully over the course of the day👍.

Second souvenir from KazKaz. It is a brand name planned and sold by 7 sake stores in Aomori. Rice used is 100% Hanasoui. The top-tasting aroma is a calm ginjo aroma. The mouthfeel is slightly sweet with a strong umami flavor. The aftertaste is reminiscent of classical sake, and is quickly cut by a refreshing acidity and bitterness. This sake was given to us by a visitor to Kobayashi Sake Brewery in Niigata, which is famous for its signature Akita dog. It is slightly sweet and has a subtle rice flavor, and although it was made in December 2010, it does not have an aged feel and is refreshing and easy to drink. It has a slight peach and lactic acid flavor. I think it is one of the most delicious alcoholic sake.

This is a sake that the young brewer of Kanbokuto Shuzo challenged to make Junmai Ginjo sake with Gin no Sato and No.7 yeast. It is said to be a limited edition. GW in Kanazawa! At the Kanazawa Sake Brewery in Kanazawa Station, we came across a dream machine that allowed us to sample sake for 100 or 300 yen (P.S.) Naturally, we took the challenge. The description said it was dry, but I prefer raw sake, so I chose this one. I tasted it thinking it might be a fruity type, but it was a clear dry sake that would go well with sashimi and other dishes. I appreciate free tastings, but I feel somewhat guilty about it, so this kind of reasonably priced tasting is very helpful and encourages me to try different kinds. I tasted three other types of sake here, and all of them seemed dry to me. I have an image that Ishikawa's sake is basically dry.

I drank Choseomai at KITTE the other day, but this is my first time at Notoji. I didn't know there was a variety of rice called Chosei Mai😅 I thought it was a brand name like Niida rice. I heard that the rice grown in the Chousei area of Chiba is also called Chousei rice, which is a bit confusing 🙄. It has a golden color. Or maybe a little light brown😅. Smells like Shaoxing wine. It smells like aged sake, but it tastes beautiful and a little sweet. Better than the Chousei Mai I had the other day 😋. It's a bit of a mystery how it's aged so well even though it doesn't say it's an aged sake on the official website or on the liquor store's website 🤔.

At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

The rice used is Yamadanishiki and Shunyo. This is Izumo no Kuni's newest brewery, created (reborn) last year. Naturally, it was the first time for us to visit. The image of sake in this area is that of powerful sake-like sake, all of which are unique. This sake is unique in the sense that it is, but the image has been overturned. It is very fruity and lightly sweet and sour, with a pleasant citrus bitterness spreading from the sweetness and acidity. The mouthfeel is clear and crisp. Overall 9 (out of 10) I had my first Shimane sake 🍶😃. I got it from Pekho-san. According to the description of the sake shop It's a "fruity and full of flavor" sake! Delicious 😋. I went to Tabe Takeshita Sake Brewery and Sake Brewery Museum 😆. But all the sake was sold out there 😭 So I went to a liquor store that sells this sake and bought Rihachi👍. I wanted to drink it and I couldn't bear to end up not being able to buy it 😣. But I'm glad I was able to buy it safely 😌. I've had this drink before and I know it's good, so I feel safe drinking it 😌. I wasn't sure whether to buy Rihachi's white label or black label, but this time I went with this one ✨. It's consistently delicious 😋.
