Sake received at the Sake World Summit. This sake is brewed with Ginbukiyo sake produced in Shiga Prefecture. The acidity and umami of the sake are well intertwined with each other. It was a delicious sake. It is perfect as an in-between-dinner drink. My wine-loving friend who accompanied me also accepted the taste of this sake made from the sake's "nama-hashiroshi" (sake brewed from the same yeast as the original yeast).

Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️ It is indeed a sake from Shiga, a rice-producing region 😇

The rice used is Yamadanishiki and Shunyo. This is Izumo no Kuni's newest brewery, created (reborn) last year. Naturally, it was the first time for us to visit. The image of sake in this area is that of powerful sake-like sake, all of which are unique. This sake is unique in the sense that it is, but the image has been overturned. It is very fruity and lightly sweet and sour, with a pleasant citrus bitterness spreading from the sweetness and acidity. The mouthfeel is clear and crisp. Overall 9 (out of 10) I had my first Shimane sake 🍶😃. I got it from Pekho-san. According to the description of the sake shop It's a "fruity and full of flavor" sake! Delicious 😋. I went to Tabe Takeshita Sake Brewery and Sake Brewery Museum 😆. But all the sake was sold out there 😭 So I went to a liquor store that sells this sake and bought Rihachi👍. I wanted to drink it and I couldn't bear to end up not being able to buy it 😣. But I'm glad I was able to buy it safely 😌. I've had this drink before and I know it's good, so I feel safe drinking it 😌. I wasn't sure whether to buy Rihachi's white label or black label, but this time I went with this one ✨. It's consistently delicious 😋.

Morinori's Nama Sake. I think the sake here tastes better on draft than on fire-roasted. It has a fairly vigorous effervescence and a strong cloudiness. The aroma is pineapple, sweet aroma of koji and lactic acidity. Refreshing. There is a slight shwash, mainly sweetness and acidity, but there is also a mineral-like backbone. There is a bitter aftertaste. The image is a little different. Minerality in the back end? The bitterness is not good. HYOGO SAKE EXPO 2024③. Rakuraku zuru? Tano-no-zuru? No, it's Sasazuru 😁. Izushi Sake Brewery's 200 year old red clay warehouse still exists. Even more acidic than Sennenichi. Overall, it is refreshing. I thought it would be extremely spicy, but it is quite easy to drink. Of the B set, Nada Ichi is my favorite. I heard later that this brewery doesn't make it anymore and that it might contain sake from a famous brewery in the Tajima area 🤔. 🤔. It's ok if it tastes good even if they don't brew it themselves 😋. I was also interested in the King Brewery Inami that koge2 and Wakata-san were drinking, but I decided to skip it this time because it's available at Yamaya and I don't need to drink it now!

This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.
