Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.

This is the first Gassen in a year. It has a fruity aroma with a hint of acidity. Let's try it. It is a little sweet, but the acidity makes it not at all bitter! It is different from Natsuzumi and Yukizumi from the same brewery in both mouthfeel and feel. A liquor store I am familiar with said confidently, "It's our hit product! Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

Type: junmai daiginjo, rice polishing rate: 50%, alc.: 16% Floral aroma, vanilla, marshmallow and a little bit of savoury aroma. Flavor feels dry with sharp acidity and bitterness of alcohol. Earthy flavor lingers for a while. Not too good not too bad. Decent price here in Europe.

The first ooki tree When I hear the word "Yamahai," I have an image of strong acidity. This one, as usual, was characterized by its sharp acidity. The top-tasting aroma has a sense of sake behind the acidity. The mouthfeel is rather light, probably due to the crisp acidity. The flavor is not as strong as it should be. The aftertaste is full of sake-like aftertaste, followed by sourness and a strong bitterness. A closer look reveals that it is 18 degrees Celsius. No wonder it hits the back of the throat so hard. I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!

I've been wanting to try this one for a while...they use 1801 yeast. It's gorgeous and fruity. It's also quite sweet. I think it's the most gorgeous of all the Yukihikosan brands. This was over 2,000 yen at Asano Sake Shop, but at a local liquor store it was 1,980 yen🙄. I wonder what it is? I heard some breweries and stores add on shipping costs 🤔.

Sake opened at a remote off-line meeting (3) I was asked "What is the best sake you drank this year? I answered "Aozora", but later I remembered that it was the future of sake from Akabu newborn 🤣. By this time I couldn't even remember what it tasted like, so I checked again the next day. The rice used is 100% Benkei. It is a kijoshu, although there is no description. As it says, it has a thick sweet taste. Sweet and sour. I can only drink a little at a time because kijo-zake is so thick. A neighborhood liquor store owner told me that they make sake in a 200-year-old building. He said that the equipment is also old.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

I bought this at the brewery's direct sales counter on my GW trip to Nagano! I had a great shopping experience with the courteous staff and went home feeling great! The aroma is what you would call "sake" with a hint of alcohol. It also has a grassy nuance. Immediately after taking a sip, there is a pleasant sourness that lasts until the end. Of course there is sweetness, but if anything, it is more umami. The bitterness is gentle at the end. It has a juicy atmosphere with acidity as if it is made from a sake yeast yeast. Kurosawa is a brewery that specializes in making sake from the "nama-hashiroshi," so I was convinced after drinking it that it was made from the "nama-hashiroshi. I was told at the brewery that the sake has an excellent balance of the four tastes of sweetness, flavor, acidity, and bitterness, and this is exactly what it tastes like. It has a good acidity, but it is not showy at all. It is a sake that goes well with any meal, and I am sure I will become a fan of Kurosawa Shuzo after drinking it. This is their regular product, so they are a brewery of extraordinary quality. It goes well with shime saba (mackerel), salty yakitori, grilled fresh onions, and omelettes! It goes with everything!

I love these classic and classy labels ♡. The taste is just like a classic sake 🍶. I didn't really feel the Nagano character, but it's an all-rounder that accepts a variety of snacks👍.

I was attracted by the phrase "sake made from jikasai rice," which is grown without any pesticides and with only minimal organic fertilizers, so I bought it. It is an unfiltered, unpasteurized sake, and I was surprised at how clear the aroma and mouthfeel were! But the aftertaste is delicious with a terrible aftertaste and some miscellaneous flavors.
