I'm opening them all up because they are overstocked😅. I couldn't buy it last year and have been waiting for a year. The one I had at the Japanese sake festival was very subtle so I wanted to make sure 🤔. Fresh and fizzy. It has little sweetness, but the gasiness on top of the bitterness is very nice. I'd like to try the sake made with Kame-no-o that comes out around spring.

I bought this at Kumamoto station on a recent trip to Kyushu. I asked the shopkeeper for a recommendation and he recommended this one. 🍶. This is my first time to try Kumamoto sake 😊. It is light on the palate, well balanced and easy to drink 🍶😊. This sake is only sold in the prefecture, so I guess I was lucky to come across it? I only had a taste of it today, so next time I will enjoy it while savoring it 😅🍶.

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.

It is brewed with a harmonious flavor in mind. It is a sake that does not lie in the introduction on the label. I enjoyed it on an autumn evening, well chilled. It is refreshing on the palate, but as you sip and savor it, the flavors come out more and more. I enjoyed it with rice miso, tsukudani (food boiled in soy sauce with plum and laver), and spicy oysters. It is a delicious sake.

Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. Limited production local sake brewed with Teruhi rice harvested from reclaimed fallow rice fields damaged in the 2014 Hiroshima torrential rain disaster🍶. Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.
