Ingredients: Kanamonishiki, Hitogochi, Polishing ratio 59%, Alcohol 16%.
This new sake is brewed with rice grown with reduced agricultural chemicals harvested in Asashina Gorobei Shinden. This is a winter-only version of unfiltered unpasteurized sake. The full flavor and muscat-like acidity are impressive and youthful.
Like Kame no Kai, it was bought in Saku. Akanesasu by the same Tsuchiya brewery. It is fruity and gorgeous. It has a completely different taste from Kame no Kai. Kami also enjoyed it very much. I didn't get to meet her this time, but she's a good person.
The first bite was quite sweet.
It also has a hint of sourness.
It is a very fragrant sake, but the aroma is not strong.
I think many people would probably like it!
I paired it with udon noodles with lots of ginger and other ingredients.

This is another one I bought at a brewery in Saku. Akanesasu was the first sake I bought from Tsuchiya Sake Brewery, and it made me groan. This one was made from local Gorobei rice, which made me want to drink it even more. When I sipped it, the elegant sweetness lingered on. Not too flashy, not too mellow, this gentle taste is the best. You can drink this for as long as you want. Dangerous. I really like this sake. By the way, it is a limited edition sake from the brewery.

It was a Junmai Daiginjo from Akanesasu, a hanpunshu from the Akanesasu Kai that had arrived in February and was stored properly in the fridge.

Akanesasu is a gorgeous nouveau, but the other hiya-ripened varieties are also good, with the subdued flavor and quality of rice 🌾.

Akanesasu is made with sake rice produced in Saku, and although it is not flashy in general, it has a tasty flavor and a very high quality rice flavor.
