Last day of GW. A bottle of Honjozo Honjozo from my wife's relatives. It was a little sweeter and softer, I tried it cold, room temperature, lukewarm, and hot, and it was a good sake. I am grateful to be able to have such a local brand of regular or honjozo class sake. The first half of GW was a day trip to Mashiko, Tochigi Prefecture, and the spoils of my return trip to Niigata. The trophies of the first half of GW were mixed in. Fried egg with asparagus and bacon. Shiitake mushroom grilled with cheese. bamboo shoots with pickled bamboo shoots. Asparagus and bamboo shoots are from Niigata Prefecture. Eggs, shiitake mushrooms, and tomatoes are from Tochigi Prefecture.

The 300ml bottle is a 50% polished daiginjo that has a smooth, soft entry with a Fukuro Shibori taste and retains the old-fashioned, light and dry taste typical of Niigata Prefecture sake. Today is my first Saturday off in a while, so I went shopping with my family. I also visited Yamakoshi Honpo, which just opened yesterday at Cocoon 2 in Saitama Shin-Toshin. The store is an antenna for the Yamakoshi area of Nagaoka City, Niigata Prefecture, and Niigata Prefecture's foodstuffs, and is like a select store. The shop has a good selection of sake in one-cup and small bottles, which will come in handy. The brewery "Ofuku Masamune" is located near the former Yamakoshi Village in present-day Nagaoka City. The brewery also produces a brand called "Yamakoshi," which is brewed from rice grown in the terraced rice paddies of Yamakoshi. The sushi is made by Kadokami Gyozu. Headquartered in Teradomari, Niigata Prefecture, it specializes in fresh fish. This is also a place I sometimes like to go shopping.

[Fukui Spring New Sake Festival (6) Next, visitors can enjoy a glass of sake from their own local brewery. Hanashoku Junmai Daiginjo Betsuatsurae The aroma is like grapes with a hint of sourness, the mouthfeel is clean and sweet with a pleasant aftertaste, and there is a lingering bitterness in the back of the throat. I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. I think if I recommend [salted sea urchin] to people outside of the prefecture, they will be puzzled how to eat it 🤔.

It is recommended to be warmed up from room temperature, so I warmed it up a little and drank it. It was easy to drink, with a strong sense of umami and a quick kick. Overall, it has a soft flavor that goes well with cold winter meals.

I bought this on my way home from the Tenzan Sake Brewery opening, which I mentioned in a previous post. This is my first time drinking Matsuura Ichi, which I don't see very often. After 2 years in Fukuoka, I found myself drinking the most sake from Saga, overtaking the sake from Nara. Checking in over 30 in Fukuoka...sometimes I miss sake from Kansai lol! Cold sake. Gentle and mellow umami. Some acidity. The aftertaste is rather dry. Next, it was served hot. The umami flavor seems to have mellowed. Personally, I think it tastes better if you take it out of the refrigerator and let it sit for about 10 minutes before drinking. We had it with yakitori.

First Cowboy Yamahai An American-inspired sake that goes well with steak 🥩. It has a strong acidity. It became softly sweet when served hot. Today is animal day, it's cold, and it's in Nonbei Yokocho ❣️ Oh, there is no steak 🥩, so we had the standard Pork and Chinese cabbage nabe 🍲, Japanese people are all about nabe 😅. 593 drinking at home

It is a reasonably priced fine sake with a subtly fruity, clean and carefully crafted ginjo-shu feel in its own way. Lunch at Omiya (=lunchtime sake) I thought about going to Izumiya, a long-established restaurant with a Showa-era atmosphere, but I decided to try something new today. I thought about going to Izumiya, a long-established izumiya with a Showa-style atmosphere, but I decided to try something new today. First, a draft beer (Kirin Ichiban Shibori). We had chilled tofu and five omakase skewers to go with our snacks. There is no special sake on tap, but..., Sashi-Ogi Koyama Honke's Kinmon Sekai Taka Ginjo 50, which is widely distributed in supermarkets and convenience stores in Saitama City. It is also a limited edition sake for Saitama Prefecture, and I personally posted it for the upcoming Saitama Prefecture Sake 200 check-in.

Sake familiar to supermarkets and convenience stores in Saitama City. It has a slightly amber color and a slight sweetness. It is smooth, refreshing, and easy to drink. The price is reasonable for a junmai ginjo, so it is perfect for casual, everyday drinking.

Opened April 20, 2024 Purchased at the brewery. Quickly, it has the acidity and freshness of a raw sake ❗️ sweetness with the warmth of gentle grains... The second half has a fruity bitterness... lychee, hakusaku 🍊... It's not so thick, so you can drink it neatly, very well-balanced sake 🍶.

Gyve, here are the drinks you gave me 😆. Thank you so much 🙇. Cape Echizen and this one I had never seen at all, "Yukikirara" ‼️ I'm so happy to have such nice Fukui sake 😆. It's very strong and has a very high alcohol content 😆. It has the freshness of a fresh sake, it's a sake you want to take your time with ✨.

This junmai sake is made from 100% Yamadanishiki produced in Itoshima, Fukuoka Prefecture, with a rice polishing ratio of 60%. It is a delicious sake with a refreshing finish. It is a good sake for a meal that enhances the taste of food. It was served as an omiyage (gift).

#Nagasaki Goto Town# w river/o/pine/hori/fuku/yama I visited with a customer from Hokuriku. To compete with them with seafood, We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki. We consulted with them in advance and asked them to secure it for us at the market. We had them as sashimi. It was like a smaller horseshoe crab. They were very pleased 😁. Now for the 🍶... For a moment, I thought it would be dry. I thought it was dry, I felt sweetness. The freshness goes well with sashimi. The shrimp was served in miso soup later 🎉.

I received this from Hirupeko who ordered Shiratake from the brewery 🙏. Thank you very much, Hirupeko and Nemuchi-san who brought sake to our off-line meeting 🙇. Shiratake that Yoohee-san was going to buy for us when he came back to his hometown. I heard they are going to send it from Tsushima in a blink of an eye, so if you are interested, please do not hesitate! The name of the sake brewery is Kawachi Shuzo, but the company name seems to have been changed to Shiratake Shuzo! It says "active" on the bottle, but I wonder if it's a draft sake. It has a fizzy feeling, but it's not too fizzy. It is easy to drink with a gentle zingy sweetness. There is none of the alu feeling in the second half that is common in nigori with alu. It's like a rich sweetness that lasts until the end. With cheeses from a mysterious cheese shop and bonito crackers given by pyonpyon😋.

Junmai Ginjo. Lots of umami and mushroom on the nose. Soft texture, flavor of light melon, pear, and rather intense pepper on the finish. Alcohol and pepper carry on for a while.
