While sorting through my photo data, I found an unposted sake, so I posted it here.
It was served at "Norakura" Izakaya in Aomori Station.
A good sake that brings out the flavor of the food.

Fire-brewed sake using Fukuoka Prefecture's original yeast called F44.
Slightly sweet aroma of 🍍 on the nose.
The palate is slightly sweet with a hint of 🍍.
The aroma is as if it was made with hana-yosuyu in mind.
However, the aroma is weak because it is fire-aged.
The sweetness is also weak due to the weak aroma.
I am a little curious to see how it would be like if it were a fresh sake.

The bottle on the right was opened three days ago. The left is a new bottle.
When cold, it is a full-bodied sake with the umami of rice, as if the white rice is being smothered. When warmed up, it became sweeter and softer. It was a relaxing taste.
Like Kitanohomare, it was purchased at a liquor store where Nemuchi and I stopped by after the Ogimachi Park event.
I'm not sure what brands they carry, but I get the impression that they stock a lot of Yamamoto, Eiko-Fuji, Chuai, and Yonesuru. I also wonder if they have a better stock of sake bottles.
The first impression is light and refreshing, and the second half has a chemical-like umami and a strong alty taste.
It's not my favorite type of flavor...
I don't think you can tell it's a daiginjo if you drink it blind.
When I drink it again, I feel acidity and a hint of sweetness.
I think the sweetness has increased a little, so the nuance that I don't like has lessened.

The regular brand name of this brewery is Ando Suigun, but Ajigasawa seems to be a PB of a sake wholesaler in Shizuoka.
