Kinmyo Junmai Sake 60% 15-16% 720ml Kinmyo by Negami Shuzo is my new favorite sake. The acidity is up from last year. The characteristic custardiness is almost gone, and a green apple-like fruitiness has been added instead. It also has a spiciness to it. It is a different taste from last year. This is the last Maikaze series for this year. It's been quite a while, but we'll be having "Mt. Haruna" for the last time! When the bottle is opened and poured, it has a relaxing sweet aroma. It has a peachy aroma. It also has a slightly banana-like flavor. The palate is smooth, as is typical of Gunma sake, with a slight sweetness that is typical of "Maifu" and a nice astringent taste that plays an active role in the background! The astringency also gives it a mineral taste, which I personally feel is similar to the "Tenpyo Junmai" that I drank before👍. In the latter half, the astringency becomes the main taste, which reminds me of grapefruit. It melts away at the end, so it goes down smoothly! I've enjoyed many Maikaze series this year, including "Akagisan"✨I'm looking forward to next year!

Purchased at the Shinsaibashi Takashimaya Department Store on the recommendation of a store clerk. Rice used is unknown. The richness of the original sake can be felt. It does not have much of a nama-zake character, and is clear and clean through the throat, making it a sake that you will never get tired of drinking. Because of its name, I had always assumed it was a sake from Kyoto. I️ was surprised to learn that it was the first Japanese sake to win the Monde Selection gold medal, and that Wakayama is proud of this world-class sake. My sincere apologies 🙏.

Takatsugawa" Junmai-shu from Fusozuru's brewery We ordered this sake from Kotobukiya in Atsugi in January 2023, and it was commented on Kotobukiya's website as "a hidden gem for home drinking". It has been stored at room temperature for 2 years and 9 months since it came to our house, and it has further changed color and has some ooze. At room temperature, it has a matured, savory, and peculiar taste (this peculiarity is also its charm). It is still not hot enough at lukewarm temperature, but when the temperature is raised to 50℃ or higher, it is nice and full-bodied, The caramel-like sweetness spreads and attracts the taste buds. It is a great everyday evening sake, and can be kept at room temperature after opening, and is also suitable for aging.
