[Fukui Spring New Sake Festival 10] I'm on my 10th cup of sake 😁. I was looking for my favorite "Hakugakusen" and found that it was only available on the first day of the event, so I went here instead 🍶. Unnoi Junmai Ginjo Nama Genjyo. Banana-like aroma, gentle sweetness on the palate, and a lingering mild umami aftertaste. I have a connection with "Kumonoi" since I brought it to the Kansai Sake-no-Iwa offline meeting I attended last summer, and it is still delicious when I drink it again.

This bottle was given to me as a birthday gift last year. I've been accumulating a stock of sake, so I decided to drink it slowly. It's a rare opportunity to see a bottle of sake in a tobin enclosure! It makes my heart dance ✨. When you open the bottle and pour it, you can smell a slight ginjo aroma. It is almost scentless. The mouthfeel is very clean, but the soft, milky sake quality and subtle sweetness of the rice gradually covers the tongue! The spiciness and the strength of 16% alcohol can be felt in the latter half of the bottle, but the overall flavor is moderate. I think I have not had such a clear sake since I drank the highest quality sake of "Akagisan" (12,000 yen for 720ml)! It is as pure as a gentle breeze. It quietly accompanies you from the beginning to the end. The taste is the very embodiment of "elegance. It is a good bottle to drink by itself or to enjoy as a food wine! Enjoy it carefully over the course of the day👍.

Rice used: Sasanishiki, Dewa Kirari, and Miyamanishiki grown in Yamagata Prefecture. I found this in a grab bag at a liquor store in my neighborhood, which has become a regular feature for me. It's not a great deal in terms of price, but I look forward to it because it contains brands that I don't usually buy. This one has the sourness that is typical of a traditional sake brewery, but when you drink it lightly, it is refreshing, and as you continue to drink it, the sweetness comes slowly. As the day goes by, the sweetness will increase even more. The sharpness is not that great, but it is not overpowering either, making it a good all-around sake. The price is less than 1,000 yen without tax, but I️ think it's quite competent.

#Drinking at home The spiciness, sweet umami, and moderate acidity come quickly, and while enjoying the aftertaste, the bitterness comes unexpectedly. It is similar to the first sake released from the brewery, but I think this one has a clearer outline. I think Doukan is stable in its line of slightly sweet umakuchi at first and finishes with bitterness. Like Okura and Tamagawa, if the direction of the flavor is consistent, we can drink it with peace of mind. Anyway, Shiga sake is generally very tasty.

The last of Hankyu Brewery Festival The first one: Fukuoka Wakatakeya Debut Sake like a dark white wine with the flavor of rice. But it is easy to drink! But be careful, it has 17 degrees of alcohol! This one was taught by Haruei Chichi and Gura. It's my first time in Fukuoka with this delicious drink! Thank you very much 🙏. The second one, Tottori Inada Honten IKU'S SHIRO Sweet and sour, tastes like juice. I tasted various kinds of sake while learning from many members. It was a lot of fun! I have had it, but this will be my first post on sakewa. I had an image of Kunika as light and dry, but it has a sweetness with a banana🍌 feel. It also has a melon-like melon sensation after a day. It has a very good balance and is good as a food sake or a light snack for dinner. A stable Shizuoka sake 🍶.

Purchased at Vinos Yamazaki in Kyoto after buying Daina at a liquor store in Saiin After this, I went back to the liquor store on the 2nd floor of the Yaichi main building and to Takimoto - Isetan 😊. I really wanted the Vinos limited edition Isoboast, but the date was a year ago, so I avoided it💦. It's also February 24 😅. I thought about how to read "kunika", "kokka", etc... but when I looked it up, it's "kokkou". Reminds me of Cocco for my generation 🤔. Drink at room temperature. It's lightly colored. It's been almost a year, but there's no sense of aging. It has a classical flavor and a little lactic acidity, but it's still light and refreshing. I'd like to try some of their raw sake, though I didn't have any this time. Like Isobojiman, I think Shizuoka sake is a good choice for me 🤔. I was saddened to hear that this brewery is already out of business 😿.

Here's the sake, a big issue 馽(hodashi). It has a cool and refreshing taste. I wondered if it would go well with gibier dishes, Ezo-shika deer has no smell at all and is tender and delicious🤣. The combination made us groan ✨.

The 5th Sagajo Shoten Presents at the 5th Bishushu Raku Kushan Shokai 😃. We were honored to have the opportunity to visit the Umaue Sake Brewery in Hiroshima ❗It's a rare sake to drink, and we had to have another one 😉. So this one is made with Ginpu! The other "Hodashi" is made with Kitashizuku and they are offering a sake that will make the people of Hokkaido happy 🎵Sounds great ✨. The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.

Return Series. With the concept of "to the world", alcohol 12℃. It's something I've been curious about because of my perception that it's an emerging force in Niigata. It's a white wine taste. Almost a white wine. The sourness of the wine was so strong that I gave up on it.

A 50% polished Junmai Daiginjo, Meguro Gorosuke, from Tama Flavor in Uonuma City (formerly Morimon Village), Niigata Prefecture. As is typical of Uonuma sake, it is a ginjo-shu that is not overly aromatic. I remember drinking it once at Tatsuya, a yakiton (grilled pork dumpling) restaurant in Numabukuro on the Seibu Shinjuku Line.

Lighter than expected, sour, sweet and ricey. I was worried before drinking it because it had quite a bit of color, but I was relieved to see the explanation on the back label. The Tama Flavor brewery is known for its regular brand, Tama Flavor, which is a light, dry sake that is the king of Uonuma, but they also brew Itkey and 46°C Echigo-Bushi (Samurai), which I recognized once again as a brewery with a very sharp personality.
